Like other high-temperature cooking, it can form acrylamide in some foods—especially starchy plant foods such as potatoes—and it carries ordinary food-safety risks if food is undercooked, cross-contaminated, or left out too long. You can reduce some risks with careful preparation, but no single cooking method or appliance guarantees acrylamide-free food.
What health risks are associated with air frying?
There are two distinct concerns: acrylamide, a process contaminant that can form in certain foods during high-temperature cooking, and familiar food-safety hazards such as undercooking and cross-contamination. Acrylamide is not unique to air fryers; it can form when susceptible foods are fried, roasted, or baked. Air-fryer food safety depends on handling and reaching a safe internal temperature.
Acrylamide forms in some high-temperature cooking
The U.S. Food and Drug Administration (FDA) explains that acrylamide can form when sugars and the amino acid asparagine naturally present in plant foods react during high-temperature cooking. Potatoes and cereal grains are examples. Formation is more likely with longer cooking or higher temperatures; boiling and steaming do not typically form acrylamide. The FDA’s overview is available at Acrylamide.
The health significance of dietary exposure is not expressed identically by regulators. The FDA says it is unclear what risk acrylamide in food poses to people and continues to evaluate the evidence. It notes that cancer effects were seen in high-dose animal studies, but those doses were much greater than typical food exposure. The FDA also reports that CDC scientists found blood markers of acrylamide exposure in 99.9% of the U.S. population; detecting those markers does not mean they will cause adverse health effects. The FDA page does not state a study year for that statistic, so it should not be read as a disease rate or a current individual-risk estimate.

EFSA’s 2015 scientific opinion concluded that acrylamide in food could increase cancer risk for consumers across age groups. EFSA’s topic page says it forms above 120°C in low-moisture conditions. These are agency assessments of a potential concern, not a claim that a particular serving or appliance will cause harm. See EFSA’s acrylamide overview and its 2015 scientific opinion.
Air fryers do not guarantee less acrylamide
EFSA reports that tests by industry and consumer organizations found hot-air fryers generally produced 30–40% more acrylamide than conventional deep-oil fryers. That reported test result is not a universal comparison across appliances, foods, recipes, or cooking conditions, and the cited summary does not establish matched conditions. It does not support a blanket claim that air frying produces either more or less acrylamide than deep frying in every case.

Food, temperature, cooking time, moisture, degree of browning, and preparation all matter. For potatoes, FDA says frying generally produces more acrylamide than roasting potato pieces, which produces more than baking whole potatoes. That comparison concerns the cooking methods and foods described—not an appliance label alone.
Ordinary food-safety risks still apply
An air fryer’s rapid hot-air circulation does not ensure that every piece cooks evenly, particularly if the basket is crowded. Raw meat, poultry, or seafood can also contaminate ready-to-eat food through hands, utensils, or surfaces. USDA’s Food Safety and Inspection Service (FSIS) recommends using package directions and checking internal temperatures with a food thermometer. Its guidance is at Air Fryers and Food Safety.

Should you stop eating foods that are fried, roasted, or baked?
No. FDA’s Acrylamide Questions and Answers says its best advice is to follow a healthy eating plan consistent with the Dietary Guidelines for Americans, emphasizing fruits, vegetables, and whole grains, while limiting saturated and trans fats, cholesterol, sodium, and added sugars. The FDA does not recommend that people stop eating fried, roasted, or baked foods.
The practical aim is to make sensible choices rather than treat a cooking method as a guarantee. When cooking potatoes or bread, avoid dark browning; for food safety, prevent contamination and verify doneness with a thermometer.

How can home cooks reduce acrylamide when preparing potatoes and bread?
FDA’s advice can reduce acrylamide formation in potato products, but it does not promise to eliminate it. See Acrylamide and Diet, Food Storage, and Food Preparation for its consumer recommendations.
- Cook potato products to golden yellow, not brown. Brown areas tend to contain more acrylamide. Toast bread light brown rather than dark brown.
- Soak cut raw potatoes before frying or roasting. Soak slices in water for 15–30 minutes, then drain and blot them dry. FDA notes that dry preparation also helps prevent splattering or fires.
- Store potatoes outside the refrigerator. Keep them in a cool, dark place. Refrigeration can increase acrylamide formation during later cooking.
- Consider the preparation method. FDA reports that frying potatoes generally produces more acrylamide than roasting pieces or baking whole potatoes. Boiling potatoes and microwaving whole potatoes with the skin do not produce acrylamide in the studies FDA cites.
How can you make air-fried food safer to eat?
USDA FSIS recommends the same safe internal temperatures for air-fried food as for other cooking methods. Cook times vary with appliance size and power, so use package directions and measure the thickest part of the food with a food thermometer. A thermometer verifies doneness; it does not measure acrylamide.

FSIS advises against cooking raw stuffed breaded chicken breast products in an air fryer; follow the product’s package instructions. Apply these handling practices as well:
- Do not overcrowd the basket; allow hot air to circulate.
- Wash hands and clean and sanitize surfaces. Keep raw meat, poultry, and seafood separate from ready-to-eat foods.
- Refrigerate leftovers within two hours. USDA defines the danger zone for food as 40°F to 140°F.
What can food companies do to reduce acrylamide?
FDA’s final guidance for industry, issued in March 2016, covers growers, manufacturers, and food-service operators working with certain foods, including potato-based products such as fries and chips, cereal-based foods such as cookies, crackers, breakfast cereals, and toasted bread, and coffee. The guidance is non-binding: it sets no maximum recommended level or action level. FDA advises businesses to understand acrylamide levels in their products and consider feasible ways to reduce them. For potato-based foods, FDA describes acrylamide formation as a reaction between asparagine and reducing sugars such as glucose and fructose under high-temperature, low-moisture conditions. Its Reducing Acrylamide in Potato-based Foods fact sheet advises manufacturers to weigh any reduction approach against other product requirements, including chemical and microbiological safety, nutritional quality, and sensory qualities such as taste and mouthfeel. An approach that changes acrylamide levels may also affect those outcomes; suitability depends on the product and process.
