What Is Epazote? Flavor, Uses, and Safety

Epazote is a strong-flavored herb used in Mexican cooking, especially in beans, tamales, salsa, and soups. Here’s what it tastes like and how to use it safely.

Epazote is an aromatic herb used in Mexican cooking. Its accepted botanical name is Dysphania ambrosioides; older references may call it Chenopodium ambrosioides. Cooks use its assertive, distinctive flavor in dishes such as beans, tamales, and salsa.

What plant is epazote?

Epazote is a loosely branched herb in the amaranth family, native to the Americas. It can grow to about four feet tall, with reddish stems, toothed green leaves, and small yellow-green flowers. Its strong aroma is a notable identifying feature.

Kew’s Plants of the World Online accepts Dysphania ambrosioides (L.) Mosyakin & Clemants and lists Chenopodium ambrosioides as a synonym. The latter name remains common in older references. North Carolina State Extension lists epazote and Mexican tea among the plant’s common names.

What does epazote taste like?

Epazote is powerful rather than mild or neutral. Illinois Extension compares its flavor with cilantro, anise, licorice, pine, camphor, and eucalyptus. These comparisons describe possible impressions, not a fixed flavor profile that every person will taste the same way.

Because its flavor is so assertive, use it as a distinctive seasoning rather than assuming it can stand in evenly for a familiar herb. Younger leaves tend to be milder; older leaves are stronger.

How is epazote used in cooking?

Epazote is a traditional Mexican culinary herb. It appears in beans, tamales, salsas, soups, mole, enchiladas, and other regional dishes. Mexico’s Secretariat of Agriculture and Rural Development also names chicken and tlalpeño broths, chilpachole, corn soup, papadzules, esquites, and chilaquiles among dishes made with epazote.

Fresh and dried leaves are both used. The sources establish these culinary uses, but not a single direct substitute: if a recipe calls for epazote and you do not have it, another herb may change the flavor rather than reproduce it.

Can you grow epazote?

Illinois Extension describes epazote as easy to grow from seed in full sun and moist, well-drained soil. It readily self-seeds, so a plant can spread beyond where it was first sown.

Is epazote safe to eat?

Keep ordinary culinary leaf use separate from eating seeds, ingesting concentrated oil, or taking epazote medicinally. Extension and Mexican agriculture sources warn that large quantities, seeds, or the plant’s ascaridole-containing oil can be toxic. North Carolina State Extension reports that large amounts of seeds may cause nausea, headache, hallucinations, vomiting, convulsions, or coma, and says the dose historically used to remove intestinal worms can be toxic.

Epazote has a history of medicinal use, but the cited sources do not establish that it treats parasites or other conditions. Do not use it as a remedy. The University of Texas at El Paso’s herbal safety resource advises consulting a health professional before taking a medicinal herb.
