Then check guarding, cleaning access, and service support. A slicer built for a high-volume deli counter is not automatically the right choice for occasional home use, and an industrial production machine belongs to a different category altogether.
Choose by workload before comparing features
Occasional home slicing, a foodservice counter, and industrial production impose different demands. The manufacturer examples below illustrate those distinct classes; they are not independently tested rankings or a comprehensive market survey.
- Occasional home use: The examples here do not establish a consumer-specific shortlist or verify that a commercial model is suitable for a home kitchen. Look for instructions and specifications that explicitly match your intended setting and use.
- Deli or foodservice counter: A commercial counter slicer may offer manual or automatic operation, food-specific blade options, and features intended for cleaning and maintenance. Check the exact model’s permitted foods, duty limits, cleaning procedure, certification, and service arrangements.
- Industrial production: Food-manufacturing systems are designed around production throughput and line requirements. They should not be compared as though they were ordinary counter slicers.
Compare the specifications that change daily use
Food compatibility, especially cheese
Do not assume every slicer handles cheese equally well. Univex lists a low-friction cheese blade as standard on its 8713M. Bizerba describes a channel blade option for soft, moist, or sticky foods such as cheese and deli meats. Confirm the allowed foods and blade configuration for the exact model and variant before buying.
Thickness adjustment
Compare the usable adjustment range with the slices you plan to make, rather than relying on a single maximum figure. The Electrolux Professional 603330 lists a 0–15 mm adjustment range; the Bizerba GSP HDi lists 0–0.9 inch. These are specifications for those particular models, not a guarantee that another variant has the same range.
Operation and production rate
A manual slicer and an automatic counter slicer serve different workflows. Bizerba lists the GSP HDi as an automatic commercial slicer with a rate of 30–75 slices per minute. For a separate industrial example, Grote lists its 613 Multi-Slicer at 90 strokes per minute per lane. These manufacturer figures describe different equipment classes and should not be treated as directly comparable measures of output.

Guards, cleaning access, and service
Look for documented guarding and maintenance features, but do not treat removable parts alone as proof that a slicer is easy to sanitize. Electrolux lists a plexiglass safety hand guard, a blade removal tool, and a top-mounted sharpener for the 603330. Univex lists removable carriage and feed grip on the 8713M. Bizerba lists product fixation options and cleaning tools for the GSP HDi.
For foodservice, also confirm current certification for the precise model and market, whether replacement parts are available, and who is authorized to repair the machine. Bizerba’s product page reports ETL certification to NSF/ANSI 8-2018 for the GSP HDi; verify the applicable certification and variant before purchase.

Use a practical buying checklist
- Define the setting and workload. Decide whether the machine is for occasional home use, a commercial counter, or an industrial line before comparing models.
- Confirm food compatibility. Read the exact model’s instructions and verify that it permits the meat and cheese you intend to slice, including any required blade configuration.
- Match the thickness range to your needs. Check the full adjustment range in the manufacturer’s specifications.
- Inspect safety features. Review the documented blade guard, hand guard, product holder, and other protections; do not infer safety from a product photo or a single feature.
- Review cleaning and maintenance instructions. Find out which parts must be removed, how they are cleaned and sanitized, how the blade is handled, and what maintenance the manufacturer requires.
- For foodservice, check operating support. Verify applicable certification, service access, replacement parts, and authorized repair options for the model and region.
- Obtain exact site requirements. Confirm footprint, power requirements, and product capacity from the manufacturer or authorized seller; those details are not established for a consumer shortlist here.
Cleaning and food safety for commercial slicers
The U.S. Food and Drug Administration recommends cleaning and sanitizing commercial slicers according to the manufacturer’s instructions at least once every four hours. This is a recommended minimum interval, not a substitute for the machine’s own instructions or applicable food-safety requirements. Wiping away visible debris alone is not enough: the FDA states, “Simply wiping down a slicer to remove visible debris is not a substitute for thoroughly cleaning and sanitizing the equipment.”

Food soil and microorganisms can collect in areas that are difficult to clean. The FDA specifically identifies the ring guard mount, the inside of the blade guard, and areas under the slicer handle as places to monitor. It also advises routinely examining seams, seals, and gaskets. If a seal or gasket is broken, missing, unattached, defective, or not performing its function, remove the slicer from service and contact the manufacturer about repair or replacement. Follow the manufacturer’s maintenance schedule and use manufacturer-authorized repair or manufacturer-provided repair kits.
FDA inspection guidance says damaged slicers should remain out of service until repaired or replaced and directs inspectors to check whether operators follow manufacturers’ cleaning and maintenance instructions. It also says most slicers used in food establishments are models certified to NSF/ANSI Standard 8 by an ANSI-accredited certification body; verify the actual model’s status rather than assuming certification.
