Bodegas Dominio d’Echauz is a winery and grape-research project in Zayas de Báscones, Soria, designed to investigate and recover ancestral grape varieties. Hempcrete blocks form its curved walls; the architect says the building’s construction system is intended to provide thermal inertia that helps keep interior conditions stable for wine aging. That design claim has not been accompanied by measured performance results on the project page.
What is the Spanish hempcrete winery?
Bodegas Dominio d’Echauz is a project in Spain’s Castilian interior, in Zayas de Báscones, Soria. Its architect presents it as more than a production facility: a place for researching and recovering ancestral grape varieties. Small experimental batches, or micro-vinifications, are intended to help evaluate forgotten or unclassified vines. The project also hosts research efforts by Vitis Navarra, according to the architect’s project description.
The architect describes the winery’s production route as a sequence from grape reception and destemming to fermentation in stainless-steel tanks, aging in oak barrels, and bottling. The route expands to include tasting and social areas, research rooms, and storage.
How hempcrete fits the building design
Curved walls and hempcrete blocks
The building’s two curved walls take their form from the surrounding vineyards and terrain. They are made from hempcrete blocks, which the architect describes as a mixture of plant fibers, lime, and water. A light, single-pitch metal roof reinforces the walls.

Thermal inertia is a stated design aim, not a measured result
The architect says the curved geometry adds structural inertia and describes the building’s materials and construction system as providing high thermal inertia to help maintain stable interior conditions for wine aging. A continuous white Diathonite coating, described as a natural cork mortar, covers the walls, floors, and ceilings. The project page provides no measured energy use or interior-temperature data, so the claimed benefit should be understood as the architect’s design rationale rather than a verified operating result.
What grape varieties is the winery saving?
The architect’s project page does not name the cultivars in the d’Echauz collection. It refers to forgotten or unclassified vines and explains the role of micro-vinification, but it does not identify specific varieties. It would therefore be inaccurate to assign named grapes from other Spanish conservation research to this winery.

A 2024 study in Almería, southeastern Spain, illustrates why old vines can matter for conservation, but it is separate from the Soria project. The study authors examined 220 old vines and found 71 genetic profiles; 35 profiles could not be assigned to a known true-to-type variety. They note that old vines can preserve genetic diversity and that local knowledge can help researchers locate them. These are findings from Almería, not measurements of the winery’s collection. Project size and status
The architect lists a plot area of 243,000 m², a built area of 3,950 m², a usable area of 2,725 m², and two floors. The project page does not date these figures or state a completion status. New Atlas reported on May 16, 2025, that the project was under construction; its report does not establish that the winery has since been completed or opened to visitors. See the May 2025 report.

Why the project matters to construction
This project brings together a production layout, research and visitor spaces, and a hempcrete-based envelope. Its conservation purpose depends on work with living vines and experimental winemaking, while the building’s environmental role is presented as an intention rather than a quantified outcome. That distinction matters: a material choice and a design rationale can be documented without implying measured energy savings or proven temperature control.
