Savory Herb Blends for Thanksgiving Turkey: 3 Easy Options

Build a savory Thanksgiving turkey rub with fresh sage, rosemary, and thyme, or choose a dried poultry seasoning or garlic-and-lemon variation.

For savory herb blends for the ultimate Thanksgiving turkey, start with sage, rosemary, and thyme. Mix minced fresh herbs with oil or softened butter, salt, and pepper, then rub the mixture over and under the skin. Prefer a pantry shortcut? Use poultry seasoning or a warm-spiced dried rub. These are recipe-based options, not a tested ranking, so choose by the flavor and preparation that suit your meal.

Choose a blend by flavor and convenience

Option Flavor What to know
Fresh classic Sage, rosemary, and thyme; oregano or marjoram can extend the herb profile. Chop fresh herbs and mix with oil or softened butter, salt, and pepper. A Food Network whole-bird recipe uses ¼ cup minced fresh herbs for a 10–12-pound turkey, plus separate whole sprigs. See the Food Network recipe.
Garlic and lemon Herbs with garlic, dry mustard, and citrus. Ina Garten’s turkey-breast recipe combines rosemary, sage, thyme, kosher salt, black pepper, olive oil, garlic, dry mustard, and lemon juice. See the turkey-breast recipe.
Dried savory rub Herbal and warm-spiced, with paprika, garlic, pepper, nutmeg, and bay. A Food Network rub uses rubbed sage or poultry seasoning, seasoned salt, garlic powder, black pepper, nutmeg, and bay leaves. Check the seasoning label before adding salt. See the savory rub recipe.

Fresh and dried herbs are not interchangeable by volume based on these recipes; they do not establish a universal conversion. If substituting, follow a recipe written for the form you have rather than assuming equal amounts.

Make a fresh sage, rosemary, and thyme rub

  1. Chop the herbs. Mince fresh sage, rosemary, and thyme. Add oregano or marjoram if you want a broader herb profile.
  2. Make a paste. Stir the herbs into oil or softened butter with salt and pepper. A Food Network whole-bird recipe calls for ¼ cup minced fresh herbs for a 10–12-pound turkey; it also uses whole sprigs separately.
  3. Season the bird. Rub the minced-herb mixture over the turkey and under the skin. Whole sprigs in the cavity add aroma, but they do not replace seasoning the surface and under the skin.

Use a ready-made dried seasoning

For less chopping, poultry seasoning offers a quick route to a savory dried-herb profile. Another recipe-based option pairs rubbed sage or poultry seasoning with paprika, seasoned salt, garlic powder, black pepper, nutmeg, and bay leaves. Because seasoning blends and their salt content vary, read the label and adjust added salt to taste.

Try a brighter garlic-and-lemon direction

For a turkey breast, Ina Garten’s recipe takes the herb base in a more assertive direction with garlic, dry mustard, olive oil, lemon juice, kosher salt, and black pepper alongside rosemary, sage, and thyme. It is a distinct flavor choice rather than a universal upgrade to the classic blend.

Seasoning does not tell you when turkey is done

Use a food thermometer regardless of which blend you choose. The CDC’s 2024 guidance says, “Use a food thermometer to make sure your turkey has reached a safe internal temperature of 165°F.” Check the thickest part of the breast and the areas where the body joins the thigh and wing. CDC turkey safety guidance.

Keep raw-turkey equipment separate from ready-to-eat food, and refrigerate leftovers within two hours, as the CDC advises. If serving stuffing, USDA Food Safety and Inspection Service guidance says its center should also reach 165°F; use a thermometer to check it. USDA turkey guidance and USDA stuffing guidance.
