Sassafras albidum is a deciduous tree native to eastern and central North America, notable for its aromatic foliage and three distinct leaf shapes: unlobed, mitten-shaped, and three-lobed. Its leaves have a long culinary history, including as filé in gumbo, but the U.S. rule for a safrole-free flavoring extract does not establish that raw bark, oil, or homemade preparations are safe to consume.

How to identify a sassafras tree
Look for three leaf shapes
A single sassafras tree may have leaves that are unlobed, mitten-shaped, or divided into three broad lobes. The leaves are simple and arranged alternately on the branch. This mix of leaf shapes on one tree is a useful identification clue. Oklahoma State University Extension
Consider the whole site
Sassafras occurs in woodland understories as well as openings, clearings, old fields, fence rows, dry ridges, and upper slopes. No single habitat description is enough to identify a tree, so compare its foliage and growth setting rather than relying on location alone. USDA Forest Service

Where does sassafras grow?
The USDA Forest Service reports a native range extending from southwestern Maine and southern Ontario west to central Michigan, then south through the Midwest and eastern states to eastern Texas and central Florida. The tree grows on many soil types; it develops best in open woods with moist, well-drained sandy loam. USDA Forest Service
Oklahoma State University Extension lists USDA hardiness zones 6–8 for its Oklahoma profile. Treat that as regional guidance, not a universal range for every site: local climate, soil, exposure, and available space also matter. Oklahoma State University Extension

What is sassafras used for?
Food and cultural uses
USDA sources record a range of traditional and cultural uses. Dried, pounded leaves have been used as a thickener and flavoring; filé, made from sassafras leaves, is associated with Cajun cooking, including gumbo. The USDA Forest Service also records the historical brewing of root bark as tea. Wood and landscape uses

Is sassafras safe to eat?
The key distinction is between a specifically processed food flavoring and unprocessed plant material. The FDA lists “SASSAFRAS BARK, EXTRACT (SAFROLE-FREE)” as a flavoring agent or adjuvant. The cited federal regulation, 21 CFR § 172.580, describes an aqueous root-bark extract made through a defined process: dilute alcohol extraction, concentration, dilution with water, and removal of the oily fraction. The resulting purified extract is safrole-free and used as a food flavoring. FDA, Substances Added to Food 21 CFR § 172.580
That narrow rule does not establish the composition or regulatory status of raw sassafras bark, essential oil, homemade tea, or every product labeled “sassafras.” Do not assume those materials are equivalent to the regulated safrole-free extract.

Can you grow sassafras?
Sassafras can be planted as a shade or ornamental tree, but its growth habit and roots affect where it fits. The species sprouts prolifically, and its roots are sparse and far-ranging, making transplanting difficult. Before buying or planting one, check that the site can accommodate the tree and its root sprouts, and confirm that the plant is suitable for your local conditions.
