You can make wine from more than grapes: fruit, vegetables, flowers, and herbs are all possible bases. The right choice depends on what grows well in your garden and the flavor you want—but each ingredient needs a suitable recipe, because preparation and extraction methods vary.
What can you make wine from besides grapes?
Virginia Cooperative Extension’s guide to home winemaking lists a wide range of possibilities. Fruit and berries are familiar starting points; vegetables and flowers offer less conventional alternatives.
Fruit and berries
- Orchard fruit: apples, peaches, pears, plums, persimmons, and pomegranates.
- Berries: blackberries, strawberries, and blueberries.
- Other fruit: melons and prickly pears.
Vegetables
The guide also names carrots, parsnips, peas, beets, potatoes, rhubarb, cucumber, pumpkin, turnip, corn, and onion.
Flowers and aromatic plants
Examples include elderflower, rose hip, bee balm, jasmine, hyssop, hibiscus, lavender, and dandelion. Use only correctly identified ingredients that are appropriate for consumption; a plant appearing in a list of possibilities does not establish that every part or preparation is safe.

How to choose a base for your garden wine
Start with what you can harvest ripe and in usable quantity, then consider the aroma and flavor you want. A fruit that is abundant in your garden may be a more practical choice than an unusual ingredient you can gather only in small amounts.

Next, check a recipe written for that specific base. Ingredients differ in acidity, sugar, water content, and pectin, so grape-wine proportions cannot simply be applied to every fruit, vegetable, or flower. Apples and some berries contain pectin; the extension guide notes that pectic enzyme may help with these ingredients. Whether to use it—and how much—depends on the recipe and product directions.
Why the ingredient changes the process
Winemaking starts by preparing the liquid and solids that will form the must, but the way flavor and aroma are extracted depends on the base. The extension guide describes fermentation extraction for most fruit. Some vegetables, including beets, may be heated in water to help release color and flavor. Herbs, flowers, leaves, and bark may be steeped in cold water to help preserve color and aroma.

Fruit, vegetable, and berry wines often need water because their flavor intensity, water content, or acidity differs from grapes. A low-acid fruit may benefit from acid blend, while added sugar depends on how much sugar the fruit already contains. These are recipe decisions, not universal adjustments; follow a suitable recipe rather than guessing at quantities.
Prepare the produce and equipment carefully
- Choose ripe produce. Rinse it as you would before eating, and remove insects, sticks, mold, and bruised portions. Do not use moldy or spoiled produce.
- Sanitize equipment. The guide emphasizes sanitation to reduce bacteria and fungi that can spoil wine. Use a sanitizer intended for winemaking and follow its directions.
- Use wine yeast. Virginia Cooperative Extension says wine yeast is developed for winemaking and bread yeast is unsuitable for this purpose.
- Use recipe-specific additions. Depending on the ingredient and process, a recipe may call for yeast nutrient, acid blend, pectic enzyme, sulfite products, tannin, or potassium sorbate. Follow both the recipe and product instructions; the guide does not provide a single formula or dosage that applies to every base.
Keep track of fermentation
The extension guide describes a process that includes preparing the must, fermenting it, monitoring specific gravity, transferring the wine (racking), clarifying, and bottling. Keep a written record of the fruit and other ingredients, amounts, fermentation and racking dates, specific-gravity readings, and observations about the finished wine. Those notes help you understand how a particular base and recipe behaved.

Oxygen management matters as fermentation progresses. The guide quotes Louis Pasteur: “Oxygen (after active fermentation stage) is ‘an enemy of wine.’” Keep that qualification in mind and follow the handling instructions in the recipe you use.
