It depends on which public-health guidance you follow. USDA FSIS says you can refrigerate uneaten food promptly after reheating and reheat it again; the UK Food Standards Agency (FSA) advises reheating leftovers only once. In either case, safe repeat reheating depends on prompt cooling, proper refrigeration and thorough heating—not on reheating food that was left out too long.
Can you reheat food more than once?
USDA FSIS says a portion of reheated leftovers that is not eaten can be refrigerated immediately and safely reheated again. The UK FSA takes a stricter consumer-guidance approach: “When reheating leftovers, you should only ever reheat once.” It says repeated temperature changes create more opportunities for bacteria to grow and cause food poisoning.
These are different recommendations from US and UK authorities, not a single universal rule. Follow the food-safety authority for where you live. Neither recommendation makes food safe if it was cooled, stored or handled improperly.

How to cool and store leftovers safely
In US guidance, refrigerate or freeze leftovers within 2 hours of cooking or serving—or within 1 hour if the surrounding temperature is above 90°F (32°C). Keep the refrigerator at or below 40°F (4°C). Divide food into shallow containers so it cools faster, and do not leave it out to cool for an extended period.
Use the storage window that matches your local guidance: FoodSafety.gov says refrigerated leftovers should be used within 3 to 4 days; the UK FSA says to eat them within 2 days or freeze them. Freeze portions you will not use in that time. These time limits presume the food was handled and chilled safely.

FoodSafety.gov describes 40°F–140°F (4°C–60°C) as the temperature danger zone. Leaving perishable food at room temperature beyond the recommended limit is not fixed by reheating: discard it rather than trying to make it safe by heating it again.
How to reheat leftovers thoroughly
For US readers following USDA guidance
Reheat leftovers to 165°F (73.8°C) throughout, using a food thermometer and checking several spots, including the center and thicker areas. A food thermometer helps verify the temperature rather than relying on how hot the surface feels.

Use a microwave, stovetop or oven. Bring soups, sauces and gravies to a boil. For takeout food reheated in an oven, USDA FSIS says to set the oven no lower than 325°F (162.7°C). Do not use a slow cooker, steam table or chafing dish to reheat cold leftovers; food can spend too long in the 40°F–140°F (4°C–60°C) danger zone.
For UK readers following FSA guidance
Heat leftovers until steaming hot throughout, and reheat them only once. If you expect to eat only part of a dish, take out that portion before reheating so the rest stays cold.

Microwave tips to avoid cold spots
- Cover food to help it heat evenly and retain moisture.
- Stir, turn or rotate the food partway through heating where practical.
- Allow standing time after heating so the temperature can even out.
- Check more than one spot; in US guidance, use a thermometer to confirm 165°F (73.8°C) throughout.
Can you reheat frozen leftovers without thawing?
USDA FSIS says frozen leftovers may be reheated without thawing, but they take longer. Reheat soup or stew in a saucepan or microwave; reheat casseroles and combination meals in an oven or microwave. Follow the relevant endpoint for your jurisdiction and check that the food is heated throughout.
How many times can you reheat leftovers?
There is no single number that captures both authorities’ advice: USDA FSIS permits another reheating when uneaten food is refrigerated promptly, while the UK FSA recommends one reheating only. Either way, reheat only the amount you plan to eat, chill any remaining portion promptly if following US FSIS guidance, and discard food that has been left out beyond safe limits.
