Good King Henry (Blitum bonus-henricus, also known as Chenopodium bonus-henricus) is a perennial leafy vegetable grown for leaves and young spring shoots. Give it fertile, well-drained soil in sun or partial shade, grow it from seed, and pick lightly in its first year. After it is established, regular leaf harvests can keep the plant compact and productive.
How to identify Good King Henry
Good King Henry is an herbaceous perennial with arrow-shaped leaves. Botanical and horticultural references use two names: the Royal Horticultural Society (RHS) lists Chenopodium bonus-henricus, while the Royal College of Physicians Garden of Medicinal Plants calls it Blitum bonus-henricus and records the former as a previous name. Where and how to grow it
Choose a suitable site
Plant Good King Henry in fertile, well-drained soil. It grows in sun or partial shade; a spot with some shade is a reasonable choice where you want to support good summer leaf quality. The RHS plant profile includes full shade as a position option, but its cultivation guidance recommends sun or semi-shade.
Start from seed and allow it to establish
The RHS recommends propagation by seed. Sow in spring and let the plant establish; the botanic garden account describes a traditional schedule in which plants grow for a year before their shoots are harvested the following spring. Pick lightly during the first year after planting, as the RHS advises, rather than treating a new plant as a full harvest crop. The cited growing guidance does not establish dependable sowing depth, spacing, germination time, or yield figures.

Keep growth manageable
Good King Henry can grow rapidly in suitable conditions and may need staking if it becomes tall. Harvesting leaves as required helps keep the plant compact and cropping well. When and how to harvest
Leaves: pick as needed
Once the plant is established, take leaves as needed rather than stripping it in one harvest. The RHS says the leaves can be eaten raw or cooked and have a taste similar to spinach. Regular picking supports continued cropping and helps maintain a compact plant.

Young shoots: try the traditional blanching method
Blanching is an optional traditional technique, not a requirement for growing or eating Good King Henry. After letting a spring-sown plant grow for a year, the following spring you can exclude light from young shoots by mounding soil around them or covering them with a clay dome. The botanic garden account says the resulting pale shoots can be steamed or used in salads. The documented edible parts include leaves, young flowering shoots, and young flower buds. The RHS describes the leaves as suitable for raw or cooked use, much like spinach. The botanic garden account cautions against eating too many uncooked leaves, so cooked leaves are a sensible default for serving suggestions. Harvest only plants you have correctly identified and grown for food.

A peer-reviewed paper examines oxalate content in Good King Henry and describes young leaves, young flowering shoots, and young flower buds as edible parts. Its study plots were established in Wakanui silt loam at Lincoln University’s Horticulture Research Area in Canterbury, New Zealand. Growing and harvest checklist
- Confirm the plant under either botanical name: Blitum bonus-henricus or Chenopodium bonus-henricus.
- Choose fertile, well-drained soil and a sunny or partly shaded position.
- Propagate from seed and harvest lightly in the first year.
- Pick established plants regularly for leaves; stake tall growth if needed.
- If you want pale spring shoots, try blanching young shoots after the plant has established.
- Use leaves like spinach, and avoid eating large quantities uncooked.
