Shallots usually grow as clusters of small sections and taste more delicate and sweet; common onions form a single layered bulb and bring more volume and a stronger onion flavor. They can substitute for each other in some recipes, but the swap changes the result and there is no universal conversion ratio.
How to tell onions and shallots apart
Purdue Extension classifies shallot as Allium cepa, Aggregatum Group, and describes its bulb as dividing into sections. Shallot bulbs commonly form clusters, while common onions develop one bulb with concentric layers. Shallots are generally smaller, so a recipe calling for one may mean a different amount of allium than a recipe calling for one onion.
There is a naming wrinkle: in some areas, “shallot” can refer to a green bunching onion. If a recipe’s ingredient is unclear, check whether it describes a small, dry bulb with papery skin or a green onion-like bunch.
How their flavors differ
Purdue Extension says, “Shallot bulbs are more delicate in flavor than most onions.” Precision Nutrition describes shallots as milder and sweeter, though raw shallots can still be pungent; that sharpness mellows as they cook. These are typical tendencies, not guarantees for every variety or preparation.

Onion flavor also varies by variety and cooking method. The National Onion Association distinguishes mild or sweet onions, which suit fresh or lightly cooked dishes, from full-flavored onions, which work well in savory dishes that need longer cooking or a more pronounced taste.
Which one should you use?
Choose an onion for a substantial base
Use an onion when you want more volume or a familiar, pronounced onion flavor in a cooked dish. Yellow onions are commonly used for cooking; red onions are often served raw; white onions can suit crisp preparations such as salsa and guacamole.

Choose a shallot for a subtler allium note
Shallots work well when you want a smaller, more delicate contribution. They are often used in dressings, marinades, sauces, vinaigrettes and garnishes, and can be used raw or cooked.
Can you substitute one for the other?
Sometimes. Healthline says cooked onions can replace cooked shallots in some recipes, and shallots can replace onions, but the quantities may need adjustment because the bulbs differ in size. The flavor will also change. No single conversion ratio is established by these sources, so match the amount to the recipe’s purpose rather than relying on a fixed one-to-one rule.

A swap is less disruptive when the allium is one aromatic among several. It matters more when onion or shallot is the dish’s main flavor. Taste as you go and adjust the amount to the balance you want.

The table compares 100 g of raw shallots with 100 g of raw onions. These figures were published by Healthline on April 7, 2021, based on USDA FoodData Central entries; they are not a health recommendation.

That equal-weight comparison reports more of several listed micronutrients in shallots as well. Serving sizes matter: the FDA lists one medium onion as 148 g, providing 45 calories, 11 g carbohydrate, 3 g fiber and 9 g sugars. That is a different basis from the 100 g comparison above.

Dry onions
For whole dry onions, USDA guidance says not to refrigerate them and lists dry storage at 60–70 °F. Purdue Extension recommends a dry, ventilated place; its estimate that home gardeners can often keep onions for two to four months depends on storage conditions.

Shallots
Precision Nutrition recommends choosing firm, evenly colored shallots with dry, papery skin and avoiding bulbs that are soft, moldy or damp. It advises cool, dry storage with air circulation; any shelf-life estimate is general guidance, not a guarantee.
