Cut lavender when the first buds begin to open, after morning dew has dried. Tie the stems into small, loose bunches and hang them upside down in a dry, shaded, well-ventilated place. Wait until the flowers and stems are completely dry before stripping the buds or sealing them in an airtight container.
When to cut lavender for drying
Harvest when the first buds are opening, before the flower spikes are fully open. Iowa State University Extension notes that timing and careful drying help preserve color and fragrance (Growing Lavender in Iowa); Maryland Extension likewise recommends harvesting lavender just as flowers begin to open (Lavender).
Choose a dry morning after the dew has evaporated. Moisture on freshly cut stems slows drying and increases the chance of mold. Use clean, sharp garden shears to cut the stems at a length that suits your intended use.
How to dry lavender by hanging it
- Gather small bunches. Tie the stem ends together with string or a reusable tie. Keep each bunch loose enough for air to move between stems and flowers. Iowa State’s general herb guidance suggests 5 to 8 stems per bundle, while UC Agriculture and Natural Resources gives 10 to 15 as a lavender example; these are practical examples, not fixed limits (Growing, Harvesting, and Drying Herbs; Lavender and Essential Oils).
- Hang the bunches upside down. Choose a dry, shaded or dark place with good ventilation, away from direct sunlight. A closet or well-ventilated indoor area can work if it is not damp or enclosed without airflow. Iowa State’s general herb guidance describes a warm drying location around 70–80°F, while Illinois Extension recommends a cool, dry, dark, ventilated place for herbs; focus on dryness and airflow rather than treating one temperature as essential for every home (Preserving Herbs).
- Check for complete dryness. General herb-drying guidance estimates 2 to 4 weeks depending on temperature and humidity; Illinois Extension says herbs can take up to a month. These are estimates for herbs generally, not a guaranteed lavender schedule. Do not package the flowers while stems or buds still feel damp or pliable.
- Strip and store, if desired. Once fully dry, slide the buds from the stems or keep whole stems for arrangements. Put dried lavender in an airtight container and store it in a cool, dry place away from light and heat.
Other ways to dry lavender
Hanging bunches is the simplest low-equipment method, especially if you want to keep long stems intact. If hanging space is limited, spread the lavender in a single layer on a screen or drying tray so air can reach the material. Do not crowd or pile the flowers. Iowa State recommends screens or drying trays for herbs, and UF/IFAS describes a window screen as a simple drying rack for plant material (Growing, Harvesting, and Drying Herbs; Harvesting and Preserving).

A low-temperature herb dehydrator is another option when you want controlled airflow and temperature. UC Agriculture and Natural Resources provides dehydrator guidance for herbs, but the cited guidance does not establish that a dehydrator is necessary or better for lavender specifically (Lavender and Essential Oils). Avoid trying to speed drying with direct sun or high heat; preserving airflow without excessive heat helps protect herb quality.
How to tell lavender is dry and prevent mold
Drying time varies with the room’s humidity, temperature, bundle size and airflow. Judge by the material rather than the calendar: flowers and stems should be dry all the way through, not cool, damp or flexible. If any part still feels moist, continue drying before putting the lavender in a sealed container. Sealing incompletely dried flowers can trap moisture and encourage mold.

Keep stored lavender away from heat, light and damp conditions. If you notice condensation, soft or damp material, or visible mold, do not keep it sealed for use.

Dried buds and stems are commonly used for sachets, potpourri and arrangements. Lavender is also used in some culinary preparations, but drying instructions alone do not establish food-safety guidance for a particular recipe or jurisdiction; follow appropriate food-preservation and recipe guidance before using it as food. Drying lavender at home preserves plant material; it does not produce essential oil, which requires a separate extraction process.
