What you need to know before cooking cod
Cod is lean and delicate, so it can cook quickly and tear if handled roughly. Pat the fillets dry before they go on the griddle, use a little oil or a coating, and turn them carefully with a spatula. A wide griddle spatula can make the turn easier, but no specialty tool is required.
Heat and cook time vary by preparation and thickness. Blackstone’s published recipes give different timings, so use the clock to guide you—not to decide whether the fish is done.
Choose a cod preparation

These are timings from Blackstone’s own recipes, not a head-to-head test or a guarantee for every fillet. The crispy recipe also uses about one tablespoon each of oil and butter. For simpler seasoning, Blackstone’s seafood guide suggests olive oil for flavor or canola oil for a more neutral taste.

How to cook cod on the griddle
- Dry the fish. Pat the cod fillets dry with paper towels. This helps prepare the surface for a coating and griddle cooking.
- Season or coat. For crispy cod, mix mayonnaise with lemon juice, garlic, parsley and Old Bay, brush it onto the fillets, then press on panko. For the Mediterranean approach, season lightly and dredge the fish in flour.
- Preheat the griddle. Set it to medium or medium-low for the crispy preparation, or medium for the Mediterranean recipe. Add oil; the crispy recipe also calls for butter.
- Lay down the fillets gently. Place them on the cooking surface without dropping or dragging them. Let the first side brown before attempting to turn it.
- Turn once, carefully. Slide a spatula fully under each fillet and flip gently. For the crispy recipe, Blackstone describes using a basting dome for about three minutes after the flip, then finishing uncovered. The dome is optional.
- Check the thickest part. Use a food thermometer and cook fish to 145°F (63°C), the temperature FoodSafety.gov lists for fish including cod. The agency also describes doneness as flesh that is no longer translucent and separates easily with a fork; a thermometer gives you a direct temperature check.
How to keep cod from sticking or breaking
- Pat the fillets dry before cooking.
- Use oil on the cooking surface and avoid rough handling; cod is delicate and can tear.
- Let the first side brown before turning rather than trying to move the fish repeatedly.
- Use a spatula that supports the fillet as you flip it. Turn once, gently.
How long does cod take on a Blackstone?
Blackstone’s crispy cod recipe gives about 4–5 minutes per side depending on thickness; its Mediterranean cod recipe gives 3–4 minutes per side. Those are recipe-specific estimates, not universal cook times. Fillet thickness and preparation differ, so confirm doneness in the thickest part instead of relying on elapsed time alone.
Serving ideas
Serve crispy cod on its own, over salad, or in tacos or a sandwich. For the Mediterranean preparation, serve the fish with the tomato-and-olive mixture cooked alongside and bread.

Food safety: use the government temperature guidance
FoodSafety.gov’s safe minimum cooking temperature chart, last reviewed November 21, 2024, lists 145°F (63°C) for fish, including cod. Its guidance recommends checking food with a thermometer. Blackstone’s seafood guide gives a lower thermometer range of 125°F–140°F; because that conflicts with the government chart, use FoodSafety.gov’s 145°F recommendation for safe doneness.
