Yes—some vegetable scraps can regrow at home, but the result depends on the plant part. Scallion roots can produce more shoots, leafy bases can produce leaves, and carrot tops produce greens rather than another carrot. Ginger, pineapple crowns, avocado seeds, and herb cuttings can also be started, though they have different timelines and rewards.
For a beginner, the simplest projects are scallions and leafy vegetable bases: use a jar, bowl, or shallow dish, provide warmth and bright light, and keep the water clean. Treat scrap regrowing as a small reuse project and a source of extra growth, not as a replacement for growing or buying vegetables normally.
Which kitchen scraps are worth trying?
Choose according to what you want to harvest. A scrap may yield edible shoots or greens, a decorative plant, or a plant that takes a long time to mature. The methods and expected results below are based on guidance from Iowa State University Extension and Outreach, the University of Florida IFAS Extension, and the University of Nevada, Reno Extension.

How to regrow scallions or green onions
- Save the white root ends after using the green tops.
- Stand the roots in a jar or other household container with enough water to submerge them.
- Place the container in a warm, sunny spot and change the water weekly. New shoots may appear in one or two weeks.
- Clip shoots as needed. For longer-term growth, plant the bulb in a container or garden once shoots are roughly four to five inches tall, taking local frost timing into account.
A bulb’s reserves are finite: Iowa State University Extension and Outreach says green onion bulbs produce shoots for only a few months before those reserves are exhausted.

How to regrow leafy vegetable bases
Romaine lettuce, celery, bok choy, and Chinese cabbage can be started from their basal ends. Save roughly two inches of the base, set it in a shallow dish with about an inch of water, and keep it somewhere warm and sunny. Replace the water every two or three days. New leaves may appear after several days to a few weeks.
Once roots form, you can keep the base in clean, shallow water for a limited leaf harvest or move it into potting mix. The University of Nevada, Reno Extension notes that lettuce bases yield smaller leaves rather than a whole new head; Iowa State Extension says rooted scraps will be more productive in soil.

What to expect from root vegetable tops
Beet, turnip, and carrot tops can grow leaves when placed in shallow water in a warm, sunny location. Refresh the water every two or three days. This method grows greens; it does not produce another beet, turnip, or carrot root. In particular, do not mistake carrot greens for a new carrot crop.
How to start ginger, pineapple, avocado, and herbs
Ginger
Choose a healthy rhizome that has not been treated to prevent sprouting, if possible. Divide it into sections with two or three buds, let the cut ends dry for several days, then plant each section about two inches deep. Water sparingly until shoots appear. Sprouting can take one to two months.

Pineapple
Cut off the leafy crown with about an inch of fruit attached. Trim away excess fruit and some lower leaves, then leave the cut surface to dry for several days. Set the crown in perlite, vermiculite, or coarse sand; keep the medium moist but not wet, and provide bright indirect light. Iowa State Extension estimates about six to eight weeks for rooting. A pineapple plant may take two to three years to mature, and fruit is not assured.
Avocado
Wash the seed and identify its broad end as the bottom. Suspend it over water with the bottom quarter submerged, replenishing the water as needed. If it has not sprouted within two months, try another seed. Once roots are well developed and at least two to three inches long, pot it in commercial potting mix. Iowa State Extension advises treating this as a houseplant project rather than expecting an avocado harvest.

Herbs
Take a two- to three-inch cutting and place it in one to two inches of water in a sunny location. Replace the water regularly. Roots may begin to form in about a week; once they do, transfer the cutting to soilless potting mix.

You do not need a special propagation kit, pot, rooting hormone, or grow light for these methods. Reuse a jar, bowl, or shallow dish for water starts. Keep water fresh at the intervals given for each scrap, and move rooted plants into suitable potting mix when the method calls for it. For outdoor planting, consider local frost timing rather than relying on a calendar date that may not fit your area.

Why some scraps may not sprout
Grocery-store produce is not always an ideal planting start. Iowa State University Extension and Outreach cautions that potatoes, sweet potatoes, and garlic may be treated with sprout inhibitors. That does not mean every garlic clove will fail: the University of Florida IFAS Extension also describes planting garlic cloves. The practical point is that treatment and storage can affect whether a particular item grows, so success is not guaranteed.
More generally, each scrap has a different payoff. Leafy bases and scallion roots are useful for small amounts of fresh growth; carrot tops are for greens; avocado seeds are mainly decorative; and pineapple requires years of patience without a promise of fruit. Iowa State University Extension characterizes scrap growing as a fun home project, not a substitute for regular grocery shopping or normal vegetable production. The extension guidance does not quantify household savings or waste reduction, so treat sustainability benefits as a modest reuse opportunity rather than a measured impact.
