Garden Herbs That Make Iced Tea Taste Incredible

Mint, lemon balm, lavender and other garden herbs can add fresh, citrusy, floral or savory notes to iced tea. Learn how to infuse them and grow them in a small tea garden.

Fresh mint, lemon balm, lemon verbena, basil, lavender, thyme and chamomile can all bring appealing flavor to homemade iced tea. For a reliably refreshing starting point, try mint or lemon balm; for floral or savory notes, experiment with lavender or thyme. There is no source-backed universal ranking or fixed recipe, so adjust the herbs and steeping time to suit your taste.

Which garden herbs work well in iced tea?

Choose herbs by the flavor you want, then begin with a modest amount and taste as you go. Extension services recommend these herbs for tea or drink infusions:

Herb Flavor direction Useful note
Mint Fresh and cooling A broadly recommended choice for tea and drinks. The sources do not establish that one mint variety is best.
Lemon balm Lemon-scented Recommended for tea, tisanes, iced tea and iced water. It can spread if left unmanaged.
Lemon verbena Citrus-like Listed by extension sources as an herb for tea or drink infusions.
Basil Herbal and aromatic Suggested for infusing tea and drinks. Try a little with fruit or citrus as an experiment, not a tested pairing.
Lavender Floral Listed as a tea herb; Clemson Extension also suggests it with lemon balm for iced tea. Start with a small amount and adjust to taste.
Thyme Savory and aromatic Listed as an option for tea infusion; use a light hand if you prefer a delicate drink.
Chamomile Floral and gentle Listed as an option for tea infusion.

Oregon State University Extension also lists bee balm, lemongrass, rosemary, sage and stevia, among other possibilities, for garden tea. Rosemary and sage have strong flavors that can dominate, so introduce them in small amounts. The sources do not validate exact flavor-pairing ratios.

How do you make iced tea with fresh herbs?

Fresh herbs are suitable for homemade infusions. Use clean, correctly identified culinary herbs, and taste the infusion before chilling so you can adjust its strength. A muddler is optional: Illinois Extension describes it as a tool for pressing herbs against a glass to release their oils, not a requirement for making tea.

  1. Choose your herbs. Use one herb or experiment with a combination. Start with less of strongly flavored herbs such as rosemary or sage.
  2. Make an infusion. Clemson Cooperative Extension recommends steeping herbal tea in boiling water for 5 to 10 minutes. Oregon State University Extension advises adjusting the ingredient amounts and steeping time for the strength you want.
  3. Account for ice. Ice dilutes the drink. University of Nevada, Reno Extension advises using about 50 percent more herbs per portion for iced tea than for a hot serving. This is a rule of thumb, not a fixed recipe; adjust to taste.
  4. Chill and serve. Let the infusion cool, then pour it over ice. If you want to use edible flowers in cold tea, Arizona Cooperative Extension advises that they be 100 percent pesticide-free.

Which herbs make practical tea-garden plants?

Most of the listed herbs can be grown for kitchen use, but fit the plant to your available space. Clemson Extension notes that herbs can grow in pots and raised beds, and that basil and lemon balm can be started from seed.

For a small patio or contained bed

Pots or raised beds let you grow herbs even without an in-ground garden. A container is especially useful for lemon balm: Penn State Extension says it propagates easily and spreads if unattended. Mint can also spread, so growing it in a container is one way to keep it contained.

For a tea-garden mix

Choose a few herbs with different flavor profiles rather than trying to plant every option at once: for example, a minty herb, a lemon-scented one and a floral or savory choice. How well any herb grows depends on the plant and its growing conditions; the extension guidance cited here does not establish a universal yield or hardiness promise.

What to keep in mind when choosing herbs

  • Use herbs you can identify correctly and that are intended for culinary use.
  • Do not assume an herb infusion has a particular health benefit; these flavor recommendations are not a medical guide.
  • For edible flowers in cold tea, follow Arizona Cooperative Extension’s advice to use flowers that are 100 percent pesticide-free.
