Mint, basil, rosemary, and thyme all work in cold infused water. Start with a small amount, pair each herb with fruit, and refrigerate the pitcher while the flavor develops. These combinations are starting points, not a ranking of which herb tastes strongest.
What herbs can you put in infused water?
Try one of these four fresh culinary herbs. For a four-cup batch, Oregon State University Extension suggests 10 small mint leaves or a small sprig; its recipe also gives a small-sprig starting point for basil or rosemary. The fruit pairings below come from University of Michigan MHealthy recipes. Adjust the amounts to your taste.

The recipe sources offer examples rather than a controlled comparison, so steeping times and flavor intensity will vary with the amount of herb and your preference. Oregon State University Extension’s herb-water recipe offers a four-cup baseline, while University of Michigan MHealthy’s cool infused-water recipes provide the fruit combinations.
How to make a batch
- Prepare the herbs. Wash your hands and rinse the herbs under cool running water. Tear or gently crush leafy herbs such as mint and basil to help release their flavor.
- Add ingredients to water. For four cups of water, begin with 10 small mint leaves or a small sprig of mint, basil, or rosemary. Add your chosen fruit pairing and adjust the herb amount next time if you want a stronger or milder result.
- Cover and refrigerate. Let the water steep for several hours. Mint can flavor water quickly; firmer rosemary may benefit from an overnight refrigerator soak. There is no single steeping time established for every herb.
- Serve cold and store safely. Keep the infused water refrigerated, and use a clean pitcher and utensils.
Oregon State Extension’s group-water guidance says to drink infused water within two days for best quality. Clemson University Extension advises refrigerating it and discarding it after 24 hours. Since the recommendations differ, a conservative general approach is to make a small batch and discard leftovers after 24 hours.

How to choose and handle fresh herbs
Choose herbs with bright leaves and crisp stalks; avoid yellowing or spotted leaves. Rinse them under fresh, cool running water rather than soaking them in a sink full of water. Keep hands, counters, cutting boards, and utensils clean, and discard bruised or decaying ingredients.
Health Canada advises keeping most fresh herbs unwashed and refrigerated for up to five days. Basil is the exception: store it unwashed, uncovered, and unrefrigerated, because refrigeration can blacken its leaves. These are storage recommendations for fresh herbs; once they are added to water, refrigerate the drink.
