Choose the four-stage model if its angle slots match your blades
The HENCKELS four-stage pull-through sharpener, item 11299-440, is the most specifically described option for readers comparing Western-style and Asian-style knives: its Canadian product page identifies separate 15° and 10° slots, plus coarse and fine ceramic stages. Those are product-page specifications, not a guarantee that every knife in either broad style is compatible. Consult the knife’s care instructions and the sharpener’s instructions rather than choosing by style label alone.

Choose Edge Maintenance only for compatible smooth blades
The Edge Maintenance sharpener, item 11299-411, has coarse and fine slots and is explicitly marked as unsuitable for serrated knives. Follow its own instructions for the pull-through sequence and pressure.
Do not use Kitchen Elements on excluded blade types
The Kitchen Elements sharpener, item 11299-000, is described as having preset-angle stainless-steel and ceramic discs. HENCKELS says it is for standard smooth blades, not Asian blades or serrated bread or tomato knives.

Check compatibility before sharpening
ZWILLING’s sharpener instructions state that sharpeners are suitable only for “non-coated knives with a smooth cutting edge.” That general instruction does not override model-specific exclusions: the Kitchen Elements page, for example, separately rules out Asian blades as well as serrated bread and tomato knives. Check both the instructions for your knife and those for the exact sharpener. If the blade is coated, serrated, or otherwise not clearly covered, do not assume a pull-through sharpener is appropriate.
Read the official sharpener instructions alongside the individual product page. The cited product listings are Canadian pages; confirm the current model and instructions for your country.

Use the tool according to its instructions
Four-stage pull-through
For item 11299-440, the manufacturer directs users to draw the blade from heel to tip through the coarse slot with moderate pressure, then through the fine slot with light pressure. Use the slot specified for the knife and follow the product’s complete instructions. These directions are not independent evidence of a particular sharpening result.
Edge Maintenance
For item 11299-411, the instructions recommend moderate pressure in the coarse slot and light pressure in the fine slot. Its product page excludes serrated knives; do not use it on those blades.

Honing and sharpening are different jobs
ZWILLING describes honing as realigning the cutting edge and sharpening as regrounding the edge when honing can no longer renew it. Its care guide recommends honing regularly and sharpening occasionally. A sharpening steel is therefore not interchangeable with a coarse-and-fine pull-through sharpener: the methods serve different maintenance needs. A whetstone is another sharpening method and removes metal, but it requires controlled angle and motion.

How to make the choice
- Identify the blade. Check whether it is smooth or serrated, coated or uncoated, and what care guidance the knife manufacturer provides.
- Read the exact sharpener’s exclusions. Kitchen Elements rules out Asian blades and serrated bread or tomato knives; Edge Maintenance rules out serrated knives. The general instructions restrict sharpeners to non-coated knives with smooth edges.
- Match the method to your maintenance need. A steel is for honing; a pull-through or whetstone is a sharpening method. A whetstone calls for more technique than a preset-slot sharpener.
- Follow the model’s sequence and pressure guidance. Do not infer that more stages mean superior results or apply one model’s directions to another.
