For many temperate gardens, bush beans, tomatoes, peppers, cucumbers, and zucchini are practical summer choices. But there is no universal planting month or best crop: local frost dates, soil and nighttime temperatures, humidity, available space, and what you like to eat all matter.
Good summer vegetables to start with
For a first garden in a temperate climate, consider these approachable warm-season crops. Extension services emphasize that the best choices are vegetables you enjoy and will use; the list is a starting point, not a national ranking.
- Bush beans: A straightforward option that does not need a trellis. Pole beans take vertical support but can be easier to pick. Iowa State Extension and Texas A&M AgriLife discuss bean types and garden choices.
- Tomatoes: Versatile for fresh eating and preserving. Choose a variety suited to your conditions and plan for a stake or cage for plants that need support.
- Peppers: Bell, sweet, and hot varieties suit different meals. They are very tender crops, so wait for suitable warmth.
- Cucumbers: A warm-season vine crop; a trellis can keep growth off the ground and save garden-bed space.
- Zucchini and other summer squash: Often beginner-friendly, but sprawling plants can use considerable room. Bush varieties are more manageable in tight spaces.
Maryland Extension’s easy-vegetable list includes bush beans, tomatoes, cucumber, pepper, and summer squash; Iowa State also lists green beans, tomatoes, peppers, potatoes, and zucchini. Choose for your climate, not a national calendar
“Summer” arrives at different times and brings different growing conditions across the United States. Frost risk, soil warmth, daytime highs, and especially nighttime temperatures affect what can be planted and when. Use a local planting calendar and the seed packet or transplant guidance for your area rather than treating a month or date as universal.

Frost and warmth
Colorado State Extension classifies beans, cucumbers, and summer squash as tender warm-season crops, and tomatoes, peppers, and eggplant as very tender crops. Its guidance says very tender crops need daytime temperatures above 60°F, prefer 70°F–95°F, and are typically planted two or more weeks after the average last frost. Those are Colorado Extension guidelines, not a nationwide schedule. Colorado State Extension’s planting guide provides its regional recommendations.
Illinois Extension likewise cautions that very tender crops are frost-sensitive; its mid-May example applies to its regional conditions and should not be transferred automatically to another location. Illinois Extension.

Hot, humid summers are a different case
In Florida, typical temperate-climate advice can mislead. UF/IFAS says traditional summer squash does not thrive there during summer and traditional tomatoes struggle in steamy months. It recommends considering southern peas, winged or long beans, okra, and heat-tolerant peppers instead. For gardeners who want tomatoes, it suggests considering tomatillos, cherry tomatoes, or Everglades tomatoes. These are Florida-specific recommendations, not a guarantee for every hot region. UF/IFAS heat-tolerant vegetable guidance.
UF/IFAS also states that tomatoes will not set fruit in Florida when nighttime temperatures are above 70°F, though cherry tomatoes may sometimes continue producing in summer. That limitation is specifically about Florida conditions. UF/IFAS, “Summer Vegetables in Florida”.

Match the crop to your space and support
Before choosing a variety, consider how it grows as well as what it produces. Bush forms generally take less vertical planning; vines and indeterminate plants may need a trellis, stake, or cage. Support can save ground space, but it does not make every sprawling crop compact.
- Beans: Bush beans need no support; pole beans need a trellis or fence.
- Tomatoes: Iowa State recommends staking or caging. Illinois Extension distinguishes determinate varieties, which tend to be smaller and can suit pots or small gardens, from indeterminate varieties that continue growing and need support.
- Cucumbers: Vining types can be trellised; check the variety’s growth habit before planting.
- Squash: A bush type is usually a more practical choice where bed space is limited.

Growing summer vegetables in containers
Containers can make a small patio or balcony productive, but they need enough volume for the crop and a sunny location. Virginia Cooperative Extension’s container guide lists these minimum pot sizes; they are guide values, not a guarantee of yield.

When to sow and when to expect a harvest
Starting method and timing vary by crop and location. Colorado State Extension says vine crops such as cucumbers perform best when direct-seeded because their roots are intolerant of disturbance. For other crops, follow a local calendar and the seed or transplant instructions for the variety you choose.
Colorado State’s guide gives typical harvest estimates of 55 days for cucumbers, 60 days for snap beans, and 50 days for summer squash. These are estimates in that regional guide, not promised harvest dates; its table marks tomatoes and peppers as transplant-based days. Colorado State Extension.
Think about how you will use the harvest, too. A crop that suits fresh meals, repeated picking, or preserving is a better fit than one you do not enjoy eating. Maryland Extension advises starting small and expanding when ready. Maryland Extension.
What to plant in a hot-climate garden
For Florida summers, prioritize crops that UF/IFAS identifies as more suited to heat-season conditions rather than assuming tomatoes and squash will perform as they might in a temperate garden.
