There is no single best wood chip for every electric-smoker cook. Choose a wood to match the food and the smoke flavor you want, then follow your smoker’s manual for chip size, loading, quantity and whether to use chips dry or soaked. The pairings below are manufacturer guidance, not a controlled taste-test ranking.
Which wood chips pair with which foods?
Weber’s flavor guide describes these woods and food pairings. Flavor intensity is subjective, so treat the descriptions as a starting point and adjust to your preference.
| Wood | Flavor description | Weber’s suggested foods | When to choose it |
|---|---|---|---|
| Apple | Subtle and sweet | Fish, poultry, pork and vegetables | A mild fruitwood option when you want a gentle sweetness. |
| Cherry | Subtle and fruity | Fish, poultry, pork and vegetables | A mild choice for a fruit-forward note. |
| Hickory | Rich and subtly sweet | Poultry, pork and beef | Choose it for a richer smoke character. |
| Pecan | Rich and sweet | Fish, poultry, pork, lamb and beef | A broad-pairing option if you prefer a sweet, rich profile. |
| Mesquite | Big and bold | Pork, lamb and beef | Use it when you want a stronger smoke character. |
Descriptions can vary between guides: Weber’s beginner guide characterizes mesquite as sweeter and more delicate than hickory and notes that it tends to burn hot. Use flavor labels as guidance rather than a universal scale. Weber’s wood-pairing guide and beginner’s guide to smoking provide the cited descriptions.
How to choose chips for an electric smoker
- Match the food: Use the table as a starting point, then select the flavor you enjoy.
- Check the chip format: Follow the smoker manual’s requirements for chip size and whether the unit uses a dedicated tray or loader. Chips and chunks are not interchangeable in every smoker.
- Buy for smoking: Choose wood chips sold for food smoking, with the species clearly identified, and confirm that the chip size suits your manual.
- Try a clearly labeled variety pack: It can help you compare species, but no brand or variety pack is established as superior by the cited guidance.
Weber’s US wood-chip catalog lists product options, but product availability and listing details can change; a listing does not establish flavor quality.

Should you use dry or soaked wood chips?
There is no universal soaking rule. The cited Masterbuilt Analog Electric Smoker page says, “You may use dry or pre-soaked wood chips in your smoker.” For that model, it says dry chips burn faster and produce more intense smoke, while chips soaked for approximately 30 minutes burn slower and produce less intense smoke. Treat this as guidance for that smoker, not a rule for all electric smokers.
Weber discusses soaking in other smoker and grill contexts, but that does not override the instructions for a particular electric smoker. Use the method your own manual permits.

How much to load, and when to add more
Start with a small amount. Weber warns that too much smoke over a long period can make food taste bitter. Add chips only as your model’s instructions allow rather than aiming for constant heavy smoke.
For the Masterbuilt Analog Electric Smoker, model MB20077618, the product page says not to add more than ½ cup at a time and to wait until the previous chips stop generating smoke before adding more. That amount and timing are model-specific; do not apply them to a different smoker unless its manual says to.

What makes a good purchase?
For most buyers, the useful comparison is species, intended food pairing, flavor strength and compatibility with the smoker—not a claimed brand ranking. The cited manufacturer guidance offers flavor descriptions and model-specific handling instructions, but it does not establish a best chip brand, a universally best species or a universal quantity and smoke-time recipe.
