A food processor can mix some cake batters, especially quick-mix and melt-and-mix recipes, but it is not the best tool for every cake. Choose by the batch size you make, the processor’s controls and attachments, and the mixing method your recipe needs. For recipes built around creaming butter and sugar or aerating eggs, a stand mixer is generally a better fit.
When a food processor works for cake batter
A processor’s blade can combine ingredients quickly, making it useful for some recipes that do not depend on prolonged creaming or substantial aeration. Breville’s BFP660 instruction manual includes methods for quick-mix cakes, melt-and-mix cakes, packet cake mixes and crêpe batter. Its guidance applies to that model and method; it is not a promise that every processor will handle every cake recipe equally well.
For the BFP660 method, Breville says to add liquids first, keep the mixture below the bowl’s MAX LIQUID line, and use the PULSE button until the batter is evenly folded. The manual’s instruction is: “Process using the PULSE button until folded evenly. Scrape down sides of bowl as needed. When a stand mixer is the better choice
Some cakes depend on incorporating air or creaming butter and sugar. KitchenAid describes stand mixers as well suited to foaming egg whites and sugar, as in chiffon cakes, and to creaming butter and sugars. Their capacity can also help with larger batches. How to choose a processor for your baking
- Match capacity to your recipe. KitchenAid’s 2025 size guide groups common home processors into small (6–9 cups), medium (10–13 cups) and large (14–16 cups or more). These are category ranges, not guaranteed cake-batter limits; check the manual and usable bowl capacity of the specific model. KitchenAid food processor size guide
- Consider controls. Pulse control is useful when you need to stop as soon as ingredients are combined. Check which speeds or other controls the model offers.
- Check included attachments. Processors vary in their blades and discs. A dough blade is included only with some models in KitchenAid’s small-capacity category; confirm what comes with the exact model you are considering.
- Account for cleanup and storage. Look at whether the bowl, lid and attachments are practical to wash and store, especially if you will use the machine mainly for occasional baking.
- Use capacity guidance cautiously. TechRadar recommends at least 8 cups (1.9 liters) for a combined-use scenario involving whisking or kneading as well as chopping and slicing, and says that size can accommodate batter for an 8-inch cake. Using a processor without overmixing
- Check the recipe and your manual. Use a processor only if the recipe’s mixing method suits blade mixing, and confirm the correct bowl limit and operating instructions for your model.
- Follow the model’s ingredient order. For the BFP660 quick-mix method, Breville directs users to add liquids first. Other processors or recipes may specify a different order.
- Pulse and inspect. On the BFP660 method, pulse until ingredients are folded evenly, stopping to scrape the bowl as needed. Avoid running the blade longer than necessary.
- Respect the fill line. Breville says not to exceed the BFP660’s MAX LIQUID line for this method. Check your own machine’s manual for its limits.
