For stock, sauces, custards, and purées, a fine-mesh sieve or chinois is a practical starting point; add food-grade cheesecloth or muslin when you want another layer of filtration. No single strainer is established as a universal replacement for a cloth-lined sieve. Choose by the food you are straining, the mesh opening, batch size, support over your pot or bowl, and care instructions.
Which kind of strainer suits your recipe?
A colander, fine-mesh sieve, and chinois are not interchangeable. The right choice depends on how large the solids are and how fine a result you want.
- Colander: drains larger foods such as pasta and vegetables. Its openings are generally not meant to catch as many small particles as a fine strainer.
- Fine-mesh sieve: a versatile option for everyday sauce and gravy straining. You can line it with cloth for additional filtration, though a shallow design may hold less than a cone.
- Chinois: a conical strainer intended for finer liquids such as stock, soup, sauce, custard, fruit, and purée. Check its size, mesh, handle, and how it rests over your receiving vessel.
- Cheesecloth or muslin: use as a liner when a recipe calls for finer filtration than bare mesh provides. Cloth weave and number of layers affect the result, and the added layer means more setup and cleanup.
A broad label such as “fine mesh” does not tell you a tool’s exact opening size. For example, de Buyer specifies 0.4 mm holes for its cited stainless-steel muslin strainer; other listings may not publish an aperture measurement.
What to compare before choosing
- Mesh or opening size: look for a stated measurement if the listing provides one. Do not assume two products labeled fine mesh filter identically.
- Diameter and depth: these affect how much food the basket can hold and whether it fits your pot or bowl.
- Batch size: consider the quantity you typically strain; a small basket may require multiple pours.
- Support: check the handle, hooks, hanging lip, or stand, and confirm the tool sits securely over the receiving vessel before pouring.
- Material and care: follow the maker’s instructions. Care varies: one cited model is dishwasher safe, while others recommend or require hand washing.

How to set up a cloth-lined strainer
- Match the tool to the job. Use a colander for larger solids, a fine-mesh sieve for general straining, or a chinois when you want to filter finer liquids. Add a cloth liner if the recipe calls for more filtration.
- Position the receiving vessel. Set the pot or bowl directly under the strainer. Check that its rim suits the hooks, lip, or handle and that the strainer is secure before pouring.
- Fit the cloth. Line the sieve or chinois with food-grade cheesecloth or muslin, keeping it secure and leaving enough room for the food. Cloth adds another filtering layer, but do not assume it will drain at the same rate as bare mesh.
- Clean according to the product instructions. The cited de Buyer model is marked dishwasher safe; Avanti recommends hand washing; Sur La Table says hand wash only. For the Sur La Table listing, rinse promptly and flush mesh from both sides if needed.
Choosing without a universal “best”
The available product specifications do not establish a universal best performer or show that one model produces clearer stock or strains faster than another. If you want a single tool for varied tasks, compare the actual dimensions, stated aperture, support, and care instructions against your usual batch size. If your recipe calls for a particularly fine result, using cheesecloth or muslin as a liner remains a practical option rather than assuming bare mesh will always be enough.
