How to make smash burgers on an electric griddle
Keep the technique simple: portion the beef, place it on the preheated surface, and press it thin with a sturdy spatula or burger press. A Char-Griller manual recipe suggests medium-high preheating and says a rolling pin or wooden spoon can help with leverage; a dedicated press is not essential. Cuisinart’s recipe recommends keeping the beef cold, spacing portions, and pressing them thin. These are cooking suggestions, not food-safety tests.
- Read the griddle manual and preheat according to its instructions. Recipe-specific directions such as “medium-high” are not a universal temperature setting for every appliance.
- Keep ground beef cold and portion it before placing it on the griddle. Leave room between portions so you can press and handle them.
- Press each portion thin with a sturdy spatula or press. Follow the utensil and surface-care guidance for your griddle.
- Cook until the burger reaches the safe internal temperature below. A browned crust or a recipe’s timing is not proof that the center is safe.

How do you check smash burgers for food safety?
USDA Food Safety and Inspection Service recommends cooking ground beef to an internal temperature of 160°F, measured with a food thermometer. For a thin patty, insert the probe at an angle or from the side to check the center. Do not rely on color, juices, crust, or cooking time: ground beef at a safe temperature can still be pink, and color varies.
