5 Seeds That Often Need Cold Stratification to Germinate

Five familiar seeds are often started with cold stratification, but chilling is not an absolute requirement for every seed lot. Learn suitable timing and refrigerator or outdoor methods.

Dogwood, holly, magnolia, eastern purple coneflower and black-eyed Susan are commonly started with cold stratification—but “won’t germinate without it” is too absolute for all five. Requirements vary by species and seed lot, and some seeds germinate more reliably after chilling rather than being biologically unable to germinate without it. Follow the instructions for the particular seed you have.

What cold stratification does

Stratification is a temperature treatment used to help break seed dormancy. Cold-moist stratification mimics winter: seeds are kept both cold and moist, then moved into warmer conditions that can prompt germination. Some seeds need a different treatment, such as cold-dry storage, scarification (weakening the seed coat), or a warm period followed by cold. Light at germination can also matter. The correct treatment depends on the species and the seed packet directions. University of Maryland Extension, Illinois Extension, UF/IFAS and University of Wisconsin Extension describe these distinctions.

Five seeds commonly started with cold stratification

1. Dogwood

UF/IFAS includes dogwood among plants needing cold stratification. Its general guidance says refrigerator chilling commonly takes one to four months, but that is not a dogwood-specific prescription. Check the instructions for the dogwood species and seed lot before choosing a duration. UF/IFAS: Advanced Seed Starting

2. Holly

Hollies are also listed by UF/IFAS as cold-stratification examples. The broad one-to-four-month range in its refrigerator guidance should not be treated as a universal holly schedule; use species-specific directions.

3. Magnolia

UF/IFAS names magnolias among plants associated with cold stratification. Magnolia protocols can vary, so identify the species and follow its own treatment directions rather than applying a single chilling period to every magnolia seed.

4. Eastern purple coneflower (Echinacea purpurea)

Rutgers lists a protocol of 90 days of moist cold stratification at 40°F, followed by a shift to 70°F. Other sources describe stratification as beneficial for coneflower, so this is a documented propagation protocol—not proof that every seed will fail without chilling. 5. Black-eyed Susan (Rudbeckia hirta)

Rutgers gives the same protocol for black-eyed Susan: 90 days moist at 40°F, then 70°F. Maryland Extension includes the species among winter-sowing candidates, but also lists Rudbeckia among genera that may not need stratification. That difference is a reason to distinguish a useful or more predictable treatment from an absolute requirement; follow the guidance for your particular seed. How long should seeds be cold stratified?

Use the species-level instructions when available. The following figures come from extension guidance and describe different scopes; they are not interchangeable recommendations for every seed:

These are propagation durations, not guarantees of a particular germination rate. The cited guidance does not establish a universal percentage of seeds that fail without cold treatment.

Two ways to provide cold and moisture

Refrigerator stratification

  1. Find the seed’s specific instructions, including whether it needs moist cold, cold-dry treatment, scarification, a warm phase, or light to germinate.
  2. Mix the seeds with an appropriate moist medium, such as sand, vermiculite, peat or a moist paper product. Put the mixture in a labeled bag or container.
  3. Keep it in the refrigerator for the stated period. Check periodically so the medium does not dry out, and remove any seeds that begin germinating.
  4. When chilling is complete, move seeds to the next conditions specified for the species, such as a warmer temperature or sowing medium.

Outdoor winter sowing

Sow seeds in pots or containers in fall or winter and place them outdoors in a protected location where they can experience natural cold and moisture. Protect containers from birds, rodents and harsh conditions, then check moisture as spring approaches. This method can suit seeds with appropriate local winter conditions; Rutgers and Maryland Extension describe containers, while Arkansas Extension discusses cold-stratification seed sowing. Choose a method based on the seed, not a blanket rule

  • Start with the exact species and packet directions. A genus-level label or a general chilling range may not give the right schedule.
  • Match moisture and temperature to the treatment. Cold-moist stratification is not the same as cold-dry storage.
  • Check for additional requirements. Some seeds also need scarification, a warm-then-cold sequence, or light during germination.
  • Consider local conditions. Outdoor winter sowing relies on natural cold and moisture; refrigerator stratification gives you a more controlled place to manage them.
  • Monitor the seeds. In a refrigerator, check that the medium remains moist and remove seeds that sprout; outdoors, check containers as spring arrives.

Other seeds that extension sources describe as benefiting from or commonly receiving moist chilling include bleeding heart, columbine, globeflower, masterwort and garden phlox, as well as lilacs, species roses, barberries and viburnums. Treat these as examples for which chilling may be useful or recommended—not proof that every seed in those groups cannot germinate without it. Arkansas Division of Agriculture
