Salt may also help through its chloride ions. The effect depends on the sauce’s ingredients; capsaicin—the compound that makes peppers hot—has not been established as the cleaning agent.
What makes a penny look dull?
Copper on a penny’s surface reacts with oxygen and forms copper oxide, which can make the coin look dark or tarnished. An acid can dissolve that oxide layer. In its 2026 activity, Metal Makeover: A Patina Adventure, the American Chemical Society explains that vinegar dissolves copper oxide and forms copper acetate.
How hot sauce’s ingredients can help
Hot sauce is a mixture rather than a standardized cleaner. A sauce containing acid can act on copper oxide, while salt supplies chloride ions that may influence what happens to dissolved copper. Because brands vary in their acid and salt content, the result can vary too. Science Buddies lists hot sauce as an optional test substance and cautions that formulations differ; its activity does not establish a best-performing brand or show that every sauce will brighten a penny.
The salt’s role is more subtle than the familiar claim that salt and vinegar simply make hydrochloric acid. In a 2001 article in the Journal of Chemical Education, Laurence D. Rosenhein reports that chloride ions—not just any dissolved ionic compound—appear necessary for the familiar vinegar-and-salt effect. The article offers formation of the copper(I) complex CuCl2− as a possible explanation.

There is no established evidence here that capsaicin cleans the penny. The plausible explanation is the sauce’s acid and, where present, salt—not its heat.
Why rinsing changes the result
A briefly treated penny that is rinsed and dried can look shiny because rinsing removes copper-containing solution from its surface. If the solution is left to dry instead, dissolved copper compounds can leave a blue-green patina. The American Chemical Society’s activity uses these two outcomes to illustrate the difference.

The United States Mint cautions that vinegar and salt dissolve some copper from the penny itself as well as copper oxide. So this is a surface reaction, not a process that removes only ordinary dirt. The Mint notes that pennies made before 1982 have more copper, making the reaction more visible in its activity. Its Clean or Green Pennies activity uses vinegar and salt, followed by rinsing and drying.

Use hot sauce as an optional demonstration, not as a recommended treatment for valuable coins. For a fair comparison with vinegar or lemon juice, keep the penny type, amount of liquid, exposure time, rinse, and drying method the same. Note the sauce’s ingredients and compare brightness, color, and residue. Those controls help distinguish ingredient effects; they do not imply that one sauce has been proven superior.

The Mint’s child-oriented activity uses pennies, small non-metal bowls, vinegar, salt, and paper towels. Follow its instructions for the vinegar-and-salt demonstration, then rinse and dry the treated coins. Avoid interpreting a blue-green deposit as preservation or as a desirable finish on a collectible coin.
