You do not need a special dough blade: either a compatible dough blade or the multipurpose S-blade can make butter pie crust. Cold fat and short pulses matter more than buying a processor with the highest wattage.
What to look for in a food processor for pastry
Choose capacity for your recipe
Match the bowl to the batch you actually make. KitchenAid says a 7-cup-or-larger processor should have enough capacity for a standard 9-inch pie crust, and notes that extra capacity is helpful. That guidance covers a single standard pie; if you plan to make several crusts at once, check the appliance’s usable capacity and manual rather than multiplying the recommendation. KitchenAid’s pie-crust guidance is a useful starting point.
Blade: S-blade or dough blade
For butter pie crust, either the multipurpose S-blade or a compatible dough blade can work. KitchenAid describes a dough blade as an option on select processors, not a requirement. The S-blade is also the recommended choice for crumb crusts made from cookies or crackers. If considering a compatible food-processor dough blade, confirm that it fits your exact model; attachments are not universal.
Power is a clue, not a pastry score
Cuisinart recommends at least 550 watts for demanding tasks such as dense dough in its general buying guidance. Treat that as Cuisinart’s guideline, not a universal minimum or proof that a higher-wattage processor will make better pastry. How to make pie pastry without overworking it
- Start with very cold fat. Cold butter or other recipe-specified fat is important for flaky pastry. Follow the recipe for how it should be cut or added.
- Use short pulses. Pulse to combine and check the mixture between bursts rather than running the processor continuously. This gives you more control over how far the ingredients are processed.
- Stop when the recipe’s cues are met. Flour crust can become tough and dense if overworked; KitchenAid specifically warns that gluten in a flour crust can be overworked. Avoid processing longer in pursuit of a perfectly smooth ball unless your recipe calls for it.
- Respect the appliance instructions. Check your processor’s manual for flour and batch limits, suitable blade, operating mode, and duty cycle. These vary by model.
A processor can reduce hands-on mixing, but it does not guarantee a particular texture or result for every recipe. Ingredient temperature, proportions, and handling remain important.
Check the dough limit in your model’s manual
Do not assume that every food processor can knead every dough. KitchenAid’s product-help instructions for the dough blade covered on this product-help page say not to knead recipes containing more than 3 cups of flour. That is a limit for the instructions and blade addressed there, not a general limit for all processors or all attachments.

Pastry mixing is also not the same job as kneading yeast bread dough. KitchenAid’s separate bread-dough method gives a processing time of about 30 seconds to 1 minute followed by about 30 seconds of hand kneading; those times apply to that bread method, not pie pastry. KitchenAid’s bread-dough instructions should not be used as a pastry timing rule.

Either appliance can make pastry dough, according to KitchenAid. Choose based on batch size and the other work you expect the appliance to do. A food processor is a practical option for pie-crust batches when its bowl and manual suit the recipe; a stand mixer may make more sense if your regular workload includes larger jobs such as several loaves of bread. Neither appliance is inherently better for every pastry recipe. A pastry blender is another manual option if you prefer not to use an electric appliance. A quick buying checklist
- For one standard 9-inch crust, start with the manufacturer’s 7-cup-or-larger capacity recommendation; allow more room if your recipe or batch is larger.
- Confirm the processor includes an S-blade and pulse control; a dough blade is optional for butter pie crust.
- Read the exact model manual for flour quantity, batch size, blade compatibility, operating mode, and duty cycle.
- Consider the motor rating as one factor, not a stand-alone measure of pastry performance.
- Check current model specifications and availability before buying; no particular current model is established here as a tested winner.
