Murphy/Ramelson New Haven is a strong candidate: both HowToEatOyster and a Serious Eats excerpt republished by Dexter 1818 identify it as a top choice. For beginners, HowToEatOyster favors OXO’s Good Grips model; for smaller oysters, it recommends the narrower R. Murphy Wellfleet. For smaller oysters: R. Murphy Wellfleet

What blade shape and handle grip change

Oyster knives are not interchangeable simply because they are all short, sturdy tools. Dexter 1818 republishes a Serious Eats excerpt credited to Grace Kelly that describes testing and names a New Haven knife as best overall; the original Serious Eats page was not directly reviewed for this comparison. None of those sources establishes that six knives were tested side by side for this article, so the recommendations above remain attributed to their publishers.

Shuck with control and protect your hand

HowToEatOyster recommends a cut-resistant glove as an added precaution. A glove does not guarantee safety: keep the oyster stable, direct pressure away from the hand holding the shell, and work deliberately rather than forcing a blade that is not entering cleanly. Choose a handle that feels secure when wet and use a knife designed for shucking rather than treating a kitchen knife as an equivalent tool.
