There is no independent head-to-head test establishing a single “best” ceramic knife. These seven Kyocera models, listed in its 2026 Europe/UK catalog, are better treated as a shortlist by task: from an 18 cm chef’s knife for larger ingredients to a 7.5 cm paring knife for detail work. Ceramic blades suit smooth, low-pressure slicing; they are not substitutes for steel knives when a task calls for force.
How to choose among these ceramic knives
Start with the work you do most often, then match the blade shape and length to it. A santoku is a versatile starting shape; Kyocera’s Japan guide recommends one for a first knife, though that is manufacturer guidance rather than an independent ranking. A chef’s knife offers more blade length, while a nakiri is shaped for vegetable preparation and serrated bread knives address a narrower task.
Before buying, check the model’s availability and SKU in your market: the models below are named in Kyocera’s 2026 Europe/UK catalog and may not be sold everywhere. Compare handle comfort and balance in person if possible, and confirm care, warranty, and sharpening arrangements for the specific regional product. The reviewed sources do not establish comparable street prices or independent comfort testing.

For a longer all-purpose blade: Shin Black Chef’s Knife
The 18 cm ZK-180 is the longest general-purpose option in this selection. Consider it for longer slicing strokes and larger ingredients, provided the task does not require hard chopping, levering, or impact.
For a versatile mid-length knife: choose a santoku
The 16 cm Shin Black ZK-160 and Chowa TK-160 share a santoku shape and blade length but belong to different Kyocera series. The sources do not establish a tested performance difference between them. If you are buying one ceramic knife, the shape aligns with Kyocera Japan’s first-knife recommendation.

For vegetables: Chowa Nakiri
The catalog lists the TK-150N with a 16 cm blade. Its nakiri form is intended for vegetable prep, but the shape does not make it suitable for hard produce or forceful chopping. Use a steel knife for those jobs.
For bread: Chowa Bread Knife
The 18 cm TK-181 is the serrated option here. Keep it for bread rather than treating it as a general-purpose knife. Kyocera does not recommend its diamond-wheel sharpening method for serrated ceramic knives.

For compact prep and detail work: utility or paring
The 11 cm Chowa Utility Knife (TK-110) is a compact choice for smaller prep. The 7.5 cm Chowa Paring Knife (TK-075) is better suited to small fruit and detailed work. Neither length changes the basic handling limits of ceramic blades.
What ceramic knives do well—and where to use steel
Kyocera recommends ceramic knives for smooth, low-pressure slicing of fruits, vegetables, leafy herbs, boneless meat, and fresh fish. The company describes them as a complement to, not a replacement for, other cutlery. Their hardness does not mean they can take impact: Kyocera says ceramic does not flex and can chip under force.

Use a steel knife for bones, frozen food, hard-rind squash and similar hard items, or any job involving prying, twisting, smashing with the blade side, or forceful chopping. Keep the ceramic blade to a controlled slicing motion; Kyocera’s care guidance describes its knives as designed for “an effortless, smooth slicing motion.”

Use a forgiving cutting board
Kyocera recommends wood, bamboo, or plastic boards. It warns that glass, marble, tile, stone, and plates can damage the edge. Avoid using the knife in ways that put sideways stress on the blade.

Plan for ceramic-specific sharpening
Kyocera recommends sharpening through a certified service using a diamond wheel, or with its home sharpener that uses a diamond wheel. Ordinary sharpening stones are not the method specified in its guidance. For the serrated Chowa Bread Knife, Kyocera says its diamond-wheel method is not recommended; check with the manufacturer or a qualified service about an appropriate option.
Wash and store to protect the edge
Hand washing is the conservative approach. Dishwasher guidance varies by product, handle, and region, so follow the instructions for the exact model rather than assuming all ceramic knives are dishwasher-safe. Store the knife in a block or tray, or use a correctly sized guard or sheath to prevent the blade from striking hard objects.
Check warranty terms where you buy
Kyocera’s US FAQ states that its knives have a one-year limited product warranty when purchased from an authorized reseller or distributor, and that purchases from unauthorized dealers are not covered by the manufacturer warranty. These are US terms; verify the current warranty and seller eligibility in your region before purchase.
What the manufacturer’s claims do—and do not—show
Kyocera says it introduced its first ceramic knife in 1984. Its US product page also reports more than 20 million blades sold worldwide; that is a manufacturer-reported cumulative figure, not an independently audited market statistic. The FAQ gives hardness values of 8.2 Mohs for zirconium oxide, 5–6 Mohs for steel, and 10 Mohs for diamond; these are Kyocera’s stated values, not a controlled comparison of knife performance.
Kyocera describes a laboratory comparison using a Honda sharpness tester over 1,000 abrasive slicing cycles, but the reviewed product page does not provide the underlying report, full protocol, or a named laboratory. The 2026 catalog’s “twice as long” edge-retention statement for Shin Black is based on Kyocera’s internal testing. Neither claim establishes that every ceramic model outperforms every steel knife in ordinary use.
