The most useful first tool for home bread baking is a digital kitchen scale: weighing ingredients makes batches easier to repeat and can reduce cleanup. After that, choose equipment for the bread you plan to make. A Dutch oven or covered baker suits round hearth loaves; a stone or steel is a common choice for baguettes and other free-form breads. Most shaping and scoring tools are helpful upgrades, not prerequisites.
Which bread-making tools should you buy first?
Start with a digital kitchen scale
A scale is the strongest first purchase for a bread baker. King Arthur Baking calls one a sourdough must-have, and its bread-class checklist marks it required. Weighing ingredients helps make batches repeatable; it can also let you mix in one bowl instead of measuring several ingredients separately. In King Arthur Baking’s 2022 feature, Andy King, co-owner of A&J King Artisan Bakery, said: “Using a scale ensures that you will get the ingredient amounts correct day-to-day and allows you to use one bowl to mix everything. Use a scraper for dough and cleanup
A rigid bench knife—also called a bench scraper or dough scraper—cuts and divides dough, and scrapes flour or dried dough from a worktop. A flexible bowl scraper bends to a bowl’s curve, making it useful for gathering sticky dough and cleaning the bowl. Add basic kitchen equipment, not specialist gadgets
Mixing bowls can hold starter, mix dough, and support rising. Measuring spoons, a wooden spoon or dough whisk, bowl covers, and a timer are useful supporting items, but specialist versions are not necessary. A stand mixer with a dough hook can knead dough, yet hand mixing remains an option; the available guidance does not establish a mixer as essential. Take care with the steaming method
For the steaming method described in King Arthur Baking’s class material, adding water to a very hot cast-iron skillet or metal pan can warp or rust it. The material advises designating a skillet for steaming and avoiding glass, ceramic, or glazed Dutch ovens for that particular method. Which tools are optional upgrades?
Banneton or bowl for proofing
A banneton, also called a brotform, supports shaped dough as it proofs and can help wetter dough hold its form. You turn the dough out of the basket before baking. Choose a shape that suits the loaf and baking vessel—for example, a round basket for a round Dutch oven. A clean bowl can serve as an alternative, so a dedicated proofing basket is an upgrade rather than a requirement for every home baker. Lame or sharp knife for scoring
A baker’s lame holds a thin, extremely sharp blade for controlled cuts in proofed dough. Scoring gives expanding dough a planned place to open in the oven. A very sharp knife can make a cut too, while a lame is designed to offer more control. Choose the tool you can handle confidently, and take care with the blade. Thermometer for temperature checks
A digital probe thermometer can help monitor dough, starter, ingredients, or room temperature. Temperature affects fermentation, but the right target depends on the recipe and process; there is no single universal dough-temperature target. Use the recipe’s guidance rather than treating a thermometer reading as a stand-alone measure of readiness. Bread knife and practical accessories
A serrated bread knife helps slice a baked loaf without crushing or tearing it. Parchment, a peel or rimless sheet pan, oven mitts, and a cooling rack are practical supporting items in King Arthur Baking’s bread-class checklist. Use the accessories that fit your recipe and oven setup.
How to assemble a setup for your kind of bread
Pan loaves
- Begin with a scale, a mixing bowl, and a loaf pan sized for the recipe.
