10 Vegetables to Plant in August for a Fall Harvest

August can still be planting time for a fall vegetable harvest. Compare regional windows for 10 crops and learn how frost dates, maturity, and planting method affect timing.

You can plant vegetables in August for a fall harvest, but the right choices depend on your location, first-frost date, variety, and whether you sow seeds or set out transplants. Leaf lettuce, spinach, radishes, turnips, kale, arugula, bok choy, Swiss chard, scallions, and snap beans are candidates—not a nationwide list of crops suited to every August week. Use local planting dates as your guide, especially for crops with short windows.

What vegetables can you plant in August for a fall harvest?

Cool-season crops are often the most practical August choices because several can mature in autumn’s cooler weather. The planting windows below come from regional extension calendars, so treat them as guides rather than universal dates. Iowa State University’s timings reflect Iowa growing conditions; the Maryland dates refer to central Maryland.

Leaf lettuce Iowa State gives an approximate fall planting period from early August to early September. It lists 45–60 days to maturity; publication date is not stated on the source page. Maryland Extension recommends repeated sowing of quick crops such as looseleaf lettuce from late August through late September. Suitable for successive sowing; allow for slower growth as days shorten.
Spinach Iowa State’s approximate window is mid-August to early September. Maryland lists spinach among hardy fall crops. Check the local calendar and leave enough time for establishment before cold weather.
Radishes Iowa State gives mid-August to mid-September for radishes and August for winter radishes. Its crop table lists 25–40 days to maturity; publication date is not stated on the source page. Maryland includes radishes among quick crops for successive sowing. A quick crop option; keep the seedbed evenly moist while seeds germinate.
Turnips Iowa State lists August as the approximate fall planting time. Maryland lists turnips among hardy fall crops. Use your local frost date and the variety’s maturity information to judge whether a sowing date is workable.
Kale Maryland lists kale among hardy fall crops. Iowa State’s approximate planting window is mid-July to early August. In cooler regions, August may mean early-month sowing or using transplants rather than starting late in the month.
Arugula Maryland recommends repeated sowings from late August through late September; its central Maryland calendar gives August through September for fall direct sowing. A candidate for successive sowing where local conditions allow.
Bok choy Maryland’s central calendar gives the second week of August through the first week of September for direct sowing. This is a defined regional window, not a general date for all locations.
Swiss chard Iowa State lists mid-July to early August as its approximate fall planting period. August is the early edge of this window; location and variety matter.
Scallions (green onions) Iowa State lists mid-August to mid-September, using plants or sets. Follow the regional calendar for the right timing and planting method.
Snap beans Maryland’s central calendar permits planting through the first week of August and harvest through mid-October. An early-August, regional option—not a dependable late-August recommendation everywhere.

Which crops are still practical later in August?

Timing within the month makes a difference. Leaf lettuce, spinach, radishes, arugula, and bok choy have regional guidance extending into later August or September, though the precise dates vary. Kale and Swiss chard have earlier August windows in Iowa State’s guidance. Snap beans are a Maryland central-calendar option only through the first week of August.

If you are asking, “Is it too late to plant vegetables in August?”, start with your local first-frost date and the crop’s days to maturity. A crop that fits an early-August calendar may not have enough time if planted near the end of the month. Transplants can also extend the practical window for some crops; slower vegetables may need an earlier indoor start.

How to estimate when to sow

Use the seed packet’s days-to-maturity figure as a starting point, not a guarantee. Autumn days grow shorter and crops may develop more slowly, so allow extra time before cold conditions arrive.

Maryland Extension illustrates the calculation with beets intended for harvest on October 15. For a variety listed at 55 days to maturity, subtract 55 days to get August 20, then subtract the extension’s 14-day safety factor to reach an August 7 sowing date. That 14-day allowance is part of this example, not a universal rule for every crop, variety, or climate.

How to sow seeds in hot, dry August soil

High soil temperatures can inhibit germination in some species. Iowa State recommends light mulch to cool the soil and help seeds germinate. Roughen the soil surface so young seedlings can push through, and keep the seedbed from drying out while seeds are sprouting.

Follow the crop’s recommended method as well as its date. Direct sowing works for crops such as radishes and the bok choy in Maryland’s calendar. Other crops may be started indoors and transplanted. Maryland’s fall broccoli guidance, for example, calls for indoor seed-starting in late June or early July and transplanting in late July or early August—an illustration of why a slow crop may need a head start rather than a late-August sowing.

Use succession sowing and row cover strategically

For quick crops, sowing small amounts more than once can spread the harvest instead of producing one flush. Maryland Extension recommends planting looseleaf lettuce, radish, arugula, mizuna, and tatsoi several times from late August through late September for a continuous harvest.

Row cover can shelter leafy greens from cold overnight temperatures in autumn. Rutgers notes that planting cutoffs depend partly on whether row covers or high tunnels are used. Cover can help protect a suitable planting, but it does not make every crop or late sowing viable. Check whether your local calendar’s dates assume protection, and use cover only where it suits the crop and conditions. Find dates that fit your garden

Before planting, check your state or county extension’s fall vegetable calendar. Compare its dates with your garden’s elevation and local first-frost date, then look at the variety’s maturity time and whether the recommendation assumes direct sowing or transplants. Regional guidance narrows the options; your local conditions determine which August window is realistic.
