KitchenAid describes NITRO as a nitro heat technology that hardens and seals the pan surface against moisture. The intended benefit is better resistance to rust, corrosion and wear than untreated carbon steel, according to the company.
KitchenAid also says the nitrogen-infused surface is 22 percent harder than traditional carbon steel. That is the manufacturer’s stated comparison; the launch announcement does not give a testing method, and the figure is about hardness—not a general finding that the skillet is 22 percent more durable or will last a particular length of time.
Does a NITRO carbon-steel pan still need seasoning?
Yes, if you want the food-release performance KitchenAid describes. The company says seasoning and frequent use can build nonstick-like performance over time. That is separate from the NITRO treatment’s stated purpose of improving resistance to moisture-related rust and corrosion. The skillet should not be treated as factory-nonstick, and NITRO does not eliminate the seasoning step.

What the launch specifications say
KitchenAid’s 2023 launch announcement describes the NITRO cookware line as compatible with all ranges, including induction. It also lists oven and broiler use up to 750°F, grill use, stainless-steel handles, metal-utensil safety and a limited lifetime warranty.
These are specifications in the launch announcement, not a substitute for the instructions supplied with a particular skillet. Check the care and use information for your model before using it on a grill, under a broiler or at high oven temperatures, and review the warranty terms for coverage details.
