If you want to avoid intentionally added PTFE/PFAS in a pan’s coating, ceramic-coated nonstick may fit your priorities. If lasting food release matters more, PTFE nonstick is a reasonable choice—provided you follow the model’s care directions and avoid strongly heating an empty pan. Neither coating is an unqualified safety winner. Here, “ceramic vs. nonstick” means ceramic-coated nonstick versus PTFE-coated nonstick; both are sold as nonstick cookware.
What “ceramic” and “nonstick” mean on a cookware label
In this comparison, ceramic nonstick usually means a ceramic-like coating applied to a metal pan, not a solid ceramic cooking vessel. Tramontina describes its ceramic cookware as a ceramic-based coating over aluminum or stainless steel. PTFE nonstick uses a fluoropolymer coating. These are different coating chemistries, not a simple choice between “chemical” and “natural.” Product formulations and claims can vary, so check the exact pan rather than assuming every ceramic coating is identical.
The U.S. Food and Drug Administration says some PFAS are authorized for food-contact uses, including nonstick cookware coatings. It describes the coatings as polymerized and tightly bound to cookware, and says studies show negligible migration of PFAS capable of moving into food. What the temperature figures do—and don’t—tell you
The Cookware & Bakeware Alliance’s 2020 guide gives coating-level figures: ceramic sol-gel coatings can withstand 450 °C/840 °F, but their release properties begin diminishing above 315.6 °C/600 °F with extended exposure; PTFE coatings begin to deteriorate at 260 °C/500 °F. These are not universal safe cooking temperatures or oven ratings for complete pans. Handles, lids, pan bodies, and manufacturer instructions can impose lower limits, so check the rating for the exact model.
The BfR’s 360 °C warning concerns a different situation: strongly heating PTFE cookware while it is empty. The institute says adverse health effects are not expected from cookware with PTFE nonstick coating when used normally, but warns that hazardous gases can form if an empty pan is strongly heated to that temperature. Do not use the coating-level figures as a reason to test a pan’s limits.

Choose based on your cooking habits
Consider ceramic-coated nonstick if avoiding intentionally added PTFE/PFAS is a priority
Look for a specific manufacturer statement about the coating, then decide whether you are comfortable with the possibility that food release may diminish over time. Follow that pan’s heat, utensil, and cleaning instructions; the Tramontina guidance is an example for its own ceramic line, not a rule for all brands.
Consider PTFE nonstick if longer-lasting release is your priority
The 2020 industry guide describes PTFE as maintaining very good release longer than sol-gel ceramic alternatives. That relative comparison does not establish how many years any pan will last. Use the pan according to its own care directions, and do not leave it heating strongly while empty.

Check the exact pan before buying
- Coating claim: If the coating chemistry matters to you, verify the manufacturer’s wording for the specific model.
- Heat and cooking style: Match the pan to your usual burner settings and foods; do not assume a coating’s heat figure is a suitable operating target.
- Cooktop compatibility: Confirm that the pan works with your cooktop, especially if you use induction.
- Oven limit: Check the complete pan’s stated oven rating, including any lid or handle limitations.
- Utensils and cleaning: Follow the product’s instructions for utensils, washing, and preheating. Care guidance can differ by model.
- Expected performance: Choose with the tradeoff in mind: ceramic sol-gel coatings may lose release over time, while the cited industry guide describes PTFE release as lasting longer. No universal replacement interval is established by that comparison.
