How to Start a Vegetable Garden for Fresh Produce All Season Long

A practical, climate-aware guide to choosing a site, preparing soil, timing crops, staggering plantings and maintaining reliable harvests through the season.

To keep harvesting vegetables for months, build your plan around five decisions: a sunny, well-drained site near water; soil tested before you amend it; planting dates matched to your local frost and soil conditions; staggered sowings or follow-on crops; and watering that changes with weather and plant growth. The exact calendar is local—dates recommended for Central Oregon or elsewhere should not be transferred to your garden without checking regional guidance.

1. Choose a site you can reach easily

Place the garden on level or gently sloping ground that drains well and receives at least six hours of direct sun. That six-hour recommendation comes from Oregon State University Extension’s general Oregon guidance; your climate and crop choices may require a different target. A nearby water source makes regular care practical, especially during establishment and hot weather.

  • Check drainage: avoid areas where water stands after rain.
  • Check competition: keep beds away from large trees and shrubs whose roots and shade can interfere with vegetables.
  • Check convenience: choose a route you will pass often, with room to move, weed, harvest and carry water or tools.
  • Check access: leave enough clearance for hoses, paths and any bed edging or support you plan to install.

If your only sunny area is paved or has poor native soil, containers or raised beds may make the site usable, but they still need dependable water and a safe, uncontaminated growing medium.

2. Test the soil before adding anything

Send a soil sample to a reputable testing service before applying lime, fertilizer or other amendments. The result can identify pH and nutrient needs so you can amend for the actual soil rather than follow a one-size-fits-all recipe.

Good soil tilth is soil that is easy to work, accepts and stores water, drains adequately and forms a useful seedbed. Organic matter can help maintain or improve that tilth. Use the test report and local recommendations to decide what type and amount to add; the available guidance does not support prescribing one universal fertilizer or amendment rate.

A simple soil-preparation sequence

  1. Remove weeds and clear debris without working soil that is saturated.
  2. Take a representative sample at the depth recommended by your testing service.
  3. Record the test’s pH and nutrient recommendations.
  4. Incorporate only the recommended amendments, following the product and local directions.
  5. Prepare a fine, firm seedbed for direct sowing, while avoiding unnecessary digging that leaves soil cloddy or compacted.

3. Build a local planting calendar

There is no reliable national date for planting every vegetable. Timing depends on your region, crop, frost exposure, seasonal weather and soil temperature. Oregon State University Extension’s Central Oregon calendar applies specifically to Central Oregon, not to every Oregon garden and not to other states or countries.

Use your local cooperative extension, horticultural service or equivalent regional authority for crop-by-crop dates. Then check conditions at planting time. The OSU educator guidance recommends checking soil temperature at about 3–4 inches deep and following each crop’s temperature recommendation. A soil thermometer can make that check practical.

  • Planting too early: frost or cold soil can injure plants or delay emergence.
  • Planting too late: the crop may not have enough suitable weather to mature.
  • Transplants: harden and place them out according to the crop’s local temperature and frost guidance.
  • Direct-sown crops: wait for the soil condition and temperature specified for that crop, not merely a calendar date.

4. Schedule succession plantings for continuous harvests

A single sowing often produces one concentrated harvest. Succession planting spreads that harvest by using one or more of these methods:

Method How it works Best use What to adjust locally
Repeat sowings Sow the same crop in batches rather than all at once. Fast or moderate-maturity crops that you want repeatedly. Interval, crop maturity and remaining planting window.
Different maturity dates Choose early-, mid- and late-season varieties. One crop type with useful varietal choices. Days to maturity, heat or frost tolerance and local season length.
Follow-on crops Plant a warm-season crop after a harvested cool-season crop, or otherwise reuse the space. Gardens with enough remaining season for a second crop. Frost dates, soil temperature and the time needed for the second crop to mature.

Oregon State University Extension gives carrots as an example: sow another batch two weeks after the first and repeat to spread the harvest. Two weeks is an example, not a universal rule. Shorten or lengthen the interval according to the crop, your climate and the local planting window. Keep a simple record of sowing dates, variety and harvest so next year’s schedule is based on what actually matured.

A practical bed-by-bed plan

  1. List the vegetables your household will use most.
  2. For each crop, note the local first and last suitable planting windows and days to maturity.
  3. Reserve space for the first sowing, then mark one or more later sowings on the calendar.
  4. Choose an early, mid-season or late variety where that spreads harvest better than repeating one variety.
  5. Mark the date when each bed is likely to be free, and assign a follow-on crop only if it can mature before local conditions turn unsuitable.

5. Plan watering around the crop and weather

Install or arrange reliable access to water before planting. Water needs change with soil, weather, crop, plant size and growth stage, so inspect the soil and plants rather than applying a fixed amount automatically.

An Oregon State University educator guide uses about one inch of water per week from April through September as a general reference, not a universal prescription. Rainfall, soil type and temperature can make your garden need more or less. Pay particular attention during early growth, just after transplanting, and during flowering and fruiting.

Delivery approach Strengths Limitations and decisions
Ground-level trickle irrigation Delivers water near the root zone and is described by OSU as more efficient than overhead watering. Requires suitable layout, connections and monitoring for blocked or misplaced emitters.
Soaker hose An inexpensive, easy form of trickle irrigation for many beds. Coverage depends on hose placement, bed shape, pressure and soil; check that the full root zone is being moistened.
Overhead watering Can be useful where other equipment is unavailable or for some establishment tasks. More water may land away from roots or foliage; effectiveness changes with wind, heat, soil and crop stage.

Water slowly enough for the soil to absorb it, then check below the surface rather than judging only by a damp crust. Adjust after rain and as plants grow. A soaker hose for a vegetable garden is an optional implementation, not a guarantee of the correct schedule.

6. Monitor pests before choosing a response

Inspect plants regularly, including leaf undersides, stems and the soil surface. Look for the pest itself, characteristic feeding damage, disease symptoms or environmental stress. Similar symptoms can have different causes, so do not apply a treatment until the problem is identified with reasonable confidence.

  1. Record which plants are affected, where the damage appears and how quickly it is spreading.
  2. Check for insects, eggs, webbing, chewing, discoloration, wilting or physical injury.
  3. Confirm the diagnosis with your local extension service or another authoritative regional source.
  4. Choose the least-toxic approach that controls the identified target.
  5. Protect beneficial organisms and avoid broad action that treats unaffected plants or helpful insects.
  6. Recheck the plants after the response and change course if the diagnosis was wrong or the problem persists.

7. Keep the season productive with a weekly routine

  • Walk every bed and harvest produce at the stage you prefer.
  • Check soil moisture and adjust irrigation for rainfall and temperature.
  • Look for weeds while they are small and remove them before they compete with crops.
  • Inspect for pests or disease and note new symptoms before treating anything.
  • Review the succession calendar: sow the next batch while the current crop is still producing.
  • Replant cleared space only when the next crop still fits the local temperature and frost window.
  • Record what was planted, when it matured and which intervals produced the most even supply.

What to buy first

Keep purchases tied to a specific plan rather than buying every garden product at once. Useful optional tools include vegetable seeds selected for different maturity dates, a soil thermometer for checking planting-depth temperatures, and a soaker hose for ground-level irrigation. None replaces local planting guidance, a soil test or observation of actual moisture conditions.
