Chris Young, a ChefSteps co-founder and former CEO, returned to kitchen hardware in 2021 with Combustion Inc. Its first product was not simply another wireless thermometer: it used eight temperature sensors and thermal modeling to estimate where food was heating most slowly, when it should come off the heat, and how carryover cooking would affect the final result.
By August 2026, that idea had grown into a broader ecosystem of thermometers, displays, Wi-Fi accessories, apps, and grilling tools. The central question remains practical: does predictive, multi-sensor temperature tracking solve a problem that a conventional thermometer does not?
Who is Chris Young?
Young is a chef, food technologist, cookbook author, and founding figure in modern food-science communication. He worked with Nathan Myhrvold on Modernist Cuisine and was connected with Heston Blumenthal’s Fat Duck Experimental Kitchen.
He later helped found ChefSteps alongside Grant Crilly and Ryan Matthew Smith. ChefSteps began in 2012 as more than a recipe website: it combined cooking education, video, food-science instruction, software, and hardware intended to make professional techniques more accessible at home. ChefSteps’ press materials identify all three as its founding team.

That distinction matters. Calling Young simply “the ChefSteps founder” obscures the company’s shared founding history. More precisely, he was a ChefSteps co-founder and former CEO.
What happened to ChefSteps and Joule?
ChefSteps developed Joule, a connected sous-vide immersion circulator. The device controlled a water bath while an app and instructional content guided users through cooking. Earlier ChefSteps product announcements emphasized app-guided cooking and visual doneness selection; they described Joule in highly promotional terms, so claims such as “smallest” or “most powerful” should be understood as historical marketing rather than independently established rankings.
Breville acquired ChefSteps in July 2019. The acquisition changed the company’s ownership and operations; it did not mean the ChefSteps brand simply disappeared. Breville continues to sell sous-vide equipment, including the HydroPro immersion circulator in the United States.
Joule and Combustion address related but different problems. A sous-vide circulator controls the cooking environment, while Combustion measures food as it cooks in an oven, pan, grill, or other conventional setting.
Why did Young launch Combustion?
After the ChefSteps acquisition, Young had planned to take time away from building kitchen products. The COVID-19 pandemic disrupted those plans, and he found that he still wanted to invent cooking tools.

The problem he chose was familiar: cooks can set a grill, pan, or oven, but determining when the food is actually done is harder. A roast may be hotter near the surface than at its center. A large cut may continue cooking after removal. A single probe can also be placed in the wrong location.
Young’s experience at ChefSteps also shaped Combustion’s design philosophy. Connected kitchen products can create friction through accounts, pairing, apps, updates, and internet dependence. The original Combustion concept was intended to provide useful information through dedicated hardware, without requiring a smartphone app or internet connection for basic operation.
How the original Combustion thermometer worked
The key distinction was not wireless connectivity alone. Many cooking thermometers can transmit readings wirelessly. Combustion’s proposed advantage was measuring the temperature gradient through the food.

- Eight sensors: The probe measured temperatures at multiple points along its length, from nearer the surface toward the center.
- Thermal-gradient analysis: The system compared those readings to understand how heat was moving through the food.
- Slowest-heating region: Combustion’s concept attempted to identify the area most likely to determine whether the food was truly done.
- Prediction: Instead of reporting only the current temperature, it estimated when the food would reach a target temperature.
- Carryover cooking: It also estimated how the food would continue heating during rest after removal from the grill or oven.
- Dedicated hardware: The original system used Bluetooth communication with a separate timer, allowing basic use without an account or internet connection.
A conventional probe answers, “What is the temperature at this point right now?” A wireless single-probe thermometer adds, “What is that point’s temperature while I am away from the cooker?” A predictive multi-sensor thermometer attempts to answer a more difficult set of questions: where is the coldest area, how quickly is it heating, and when should the food be removed to finish at the target?
What changed by 2026?
As of August 2026, Combustion’s official store presents the original concept as a wider product ecosystem. The second-generation Predictive Thermometer still uses eight sensors and is listed with a maximum temperature rating of 900°F.

Combustion says its TrueCore system identifies the slowest-heating area, while its Prediction Engine uses sensor data and heat-transfer modeling to estimate cooking progress. Those are the company’s stated functions; they should not be read as a guarantee of perfect results under every cooking condition.

This represents an evolution of the original anti-friction pitch rather than a complete reversal. A cook can use the core thermometer and dedicated hardware, while buyers who want longer-range monitoring can add Wi-Fi, displays, and apps.

Availability was not uniform. The store showed signals including “Ships August,” “Ships Summer 2026,” and “Multiple ship dates.” These prices and shipping estimates are time-sensitive and may change by region or product.
Who benefits most?
Combustion’s multi-sensor approach is most meaningful when food is thick, irregular, or expensive to get wrong. Good examples include:

- Whole chickens and turkeys
- Thick steaks and fish
- Beef roasts
- Barbecue and other long cooks
- Large cuts where carryover cooking is substantial
For these foods, the surface can heat much faster than the center, and the time between “remove from heat” and “serve” can materially affect the result. A finish-time estimate may also help when a meal must be coordinated around guests or other dishes.

Who should skip it?
The premium is harder to justify for cooks who mostly prepare thin foods, quick stovetop meals, or dishes judged primarily by texture, appearance, or volume. Someone who already owns a good instant-read thermometer may need only quick spot checks rather than continuous prediction.
The product is also a poor fit for someone seeking specifically a sous-vide device. For that job, a Joule-style circulator or Breville HydroPro controls the water bath; Combustion is primarily a monitoring instrument for conventional cooking.

Multiple sensors do not eliminate the need for sound cooking technique. Prediction depends on the probe’s placement, the shape of the food, the cooking environment, and assumptions about heat transfer.
- Shallow insertion: The probe may not reach the region that actually heats most slowly.
- Placement near bone or a cavity: The reading may not represent the edible muscle or true coldest region.
- Irregular food: Bone structure, stuffing, varying thickness, and unusual shapes can complicate modeling.
- Uneven heat: Hot spots or moving food during a cook can change the thermal pattern.
- Open lids and doors: Repeatedly opening a grill or oven changes the cooking environment and timing.
- Carryover uncertainty: Small foods may have little carryover, while large roasts may continue heating substantially.
- Connectivity problems: Metal cooker walls, Bluetooth range, Wi-Fi coverage, battery level, and display placement can interrupt monitoring.
A predicted finish time is an estimate, not a promise. The cook should still inspect the food, verify temperatures appropriately, and adjust for the actual conditions.

Food-safety claims need context
Combustion promotes a feature called SafeCook, which tracks time and temperature. The company says some foods can be safely cooked at a lower temperature when held there long enough, giving chicken at 150°F for approximately three minutes as an example. It also makes strong bacterial-reduction claims on its product site.
Those claims should be treated as company claims, not universal rules. Food safety depends on the food, thickness, starting conditions, handling, pathogen risk, time, temperature, and the applicable official guidance. A lower-temperature process designed for one food cannot automatically be generalized to every cut, recipe, or kitchen.
Time-temperature safety is also different from simply reaching a particular temperature briefly. Use the device as a monitoring aid, not as a replacement for official food-safety guidance or careful handling.
How Combustion compares with alternatives
Meater is a more direct option for buyers who primarily want app-based wireless monitoring and a simpler probe experience. ThermoWorks offers instant-read and multi-channel thermometer workflows that may better suit cooks focused on fast spot checks or barbecue pit monitoring. Exact current competitor prices and availability are not assessed here.
Yummly was a historically relevant smart-thermometer competitor mentioned in the 2021 coverage, but its current thermometer availability should be verified before treating it as an active alternative. A standard instant-read thermometer remains the most economical choice for cooks who do not need remote monitoring or predictive timing.
The verdict
Chris Young’s move from ChefSteps and Joule to Combustion is a shift from controlling a precise water bath to understanding what happens inside food during ordinary cooking. The important idea is the combination of multiple sensing points, thermal gradients, slowest-spot detection, predictive modeling, and carryover estimates.
At $149 for the thermometer observed in August 2026, Combustion is not competing only with other wireless probes; it is also competing with inexpensive thermometers that already answer the basic temperature question. Its value is clearest for serious grillers, roast cooks, and barbecue users who regularly need better timing for thick or irregular foods. For occasional cooks, a reliable instant-read thermometer may remain the more sensible purchase.
