Start with herbs suited to indoor conditions, give them the brightest available spot, and grow each kind in its own draining pot so you can water it appropriately.
1. Choose herbs that suit indoor growing
Begin with herbs Iowa State University Extension and Outreach identifies as good indoor choices: parsley, mint, chives, basil, oregano, cilantro, and thyme. They are practical options for a kitchen windowsill or shelf, though each still needs enough light and suitable care.

Rosemary, sage, lemon balm, marjoram, chervil, and bay laurel are other possibilities. Iowa State notes that these may need more light and/or face more pest pressure indoors, so they can be less forgiving in a dim home.

Consider both light and moisture needs before choosing. Most indoor herbs need bright conditions, but their watering preferences differ; separate pots make those differences easier to manage.

2. Make light your first setup decision
“Light is typically the most limiting factor to successfully growing herbs indoors,” Iowa State Extension and Outreach explains. Its guidance is that most herbs need about eight hours of direct light a day. A sunny south-facing window is a good starting point; a bright east- or west-facing window may also work.
Watch how much direct sun the spot actually receives, especially during winter, when daylight is shorter and weaker. If a window cannot provide enough light, a full-spectrum grow light can supplement it rather than relying on a dim location.

Supplement light when the window falls short
Recommendations vary by source and context, so use them as practical ranges rather than one universal setting. Iowa State recommends placing supplemental lights 6 to 12 inches from the foliage and running them on a timer for 12 to 16 hours per day. The University of Maryland Extension says winter supplementation with grow lights or fluorescent lights may require 14 to 16 hours daily. Keep the lamp at the recommended distance for its design and adjust it as plants grow, so foliage is illuminated without touching the fixture.

Choose a pot with drainage holes and a size suited to the plant. A pot that is much larger than the root system can hold excess wet mix for too long. Porous clay or terracotta is one option noted by Iowa State; whatever material you choose, make sure extra water can escape.

Use well-drained potting mix rather than garden soil. Maryland Extension describes a lightweight soilless medium and gives a mix of two parts soilless potting mix to one part perlite. The added perlite helps create a looser, faster-draining medium.
Keep each herb species in its own container. Iowa State advises this because it is difficult to provide the best growing conditions for several species in one pot. Separate containers let you respond to different growth rates and watering needs without compromising the whole planting.

4. Water according to the herb and the mix
Do not water by a fixed calendar. Check the potting mix and the plant, then water when the herb’s needs indicate it is time. Iowa State’s general advice is to let soil dry between waterings because most herbs do not tolerate wet soil. When you do water, Maryland Extension recommends watering thoroughly rather than applying just a small splash.
Preferences are not identical across herbs. Maryland Extension specifically notes that bay, marjoram, oregano, sage, and thyme need to dry between waterings. For other herbs, learn the preference of the species you chose and use the moisture of its mix as a guide. A pot that stays wet for a long time may be oversized, poorly drained, or receiving too much water.

5. Keep feeding modest
Indoor herbs do not need heavy feeding. Iowa State recommends applying an all-purpose fertilizer at half or quarter strength during spring and summer, and not fertilizing in winter. Follow the product label for dilution and application, using the lower concentration rather than treating stronger feeding as a shortcut to faster growth.
6. Harvest in a way that encourages regrowth
Cut herbs selectively instead of stripping a plant bare. For leafy annuals such as basil, chervil, and parsley, Iowa State recommends cutting just above a leaf or pair of leaves and leaving about 4 to 6 inches of stem. That leaves growth on the plant to support regrowth.
For perennial chives, mint, oregano, and thyme, remove the top third of the growth when harvesting. After several harvests, replace old annual herbs with new plants started from seed. Perennial herbs can be cut back less heavily and may benefit from seasonal outdoor growth where the climate allows.
