These six combinations use familiar seasonal ingredients, from orange and cranberry to cinnamon, rosemary, cloves, and cardamom.
Important: These are fragrance simmer pots, not beverages. Do not drink the mixture unless you deliberately prepare a separate, food-safe beverage recipe. Keep the pot on the stove only while you are home and able to monitor it.

Each recipe below makes one stovetop potpourri batch. Use a medium or large saucepan, Dutch oven, or other suitable stovetop pot. Add enough water to cover the ingredients—usually 6 to 8 cups, or roughly two-thirds to three-quarters full.

Easy substitutions
- Cranberries: Fresh or frozen cranberries work in the liquid recipes.
- Citrus: Substitute lemon, grapefruit, or extra orange for some of the citrus. Use peel only if you are making a dry blend.
- Rosemary: Dried rosemary can replace fresh, but use less because dried herbs are more concentrated.
- Whole spices: If you do not have individual spices, a chai tea bag can add a ready-made blend of warm spice. For the most frequently used ingredients, whole cinnamon sticks and whole cloves are useful to keep in the pantry.
- Fruit: Slightly soft apples or citrus are suitable for a fragrance pot as long as they show no mold or spoilage.
- Vanilla: Vanilla extract is optional. Leave it out if you prefer a sharper citrus-and-herb scent.
Do not casually substitute concentrated essential oils or fragrance oils. Poison Control warns that essential oils can cause serious poisoning when misused; keep them away from children and pets and do not add them to a pot that might later be consumed.
How long can a simmer pot simmer?
There is no universal safe “set it and forget it” duration. Simmer only while you are home and checking the pot. The aroma may remain pleasant for several hours if you keep adding water, but stop sooner if the mixture smells scorched, the water is evaporating quickly, or the ingredients begin sticking to the pot.
- Bring the mixture to a brief boil.
- Turn the burner to low immediately.
- Check the pot frequently, especially during the first 15 to 20 minutes.
- Add hot water when the ingredients are no longer covered.
- Turn off the burner whenever you leave the kitchen or cannot actively monitor the pot.
- Turn off the heat at the end and let the mixture cool before handling it.
Stovetop safety: never leave it unattended
A simmer pot is still a heated cooking vessel. The U.S. Fire Administration’s cooking-safety guidance recommends staying in the home while cooking, checking the pot regularly, using a timer, turning pot handles toward the back, and keeping anything combustible away from the stove.
- Keep water in the pot so the ingredients cannot scorch or burn.
- Use low heat rather than a rolling boil.
- Keep children and pets away from the burner, steam, hot pot, and ingredients.
- Never run a simmer pot overnight or while you are away from home.
- Turn off the burner if you leave the kitchen.
How to make a dry simmer-pot gift
A dry blend is easier to package than a fresh batch and makes a practical seasonal gift. Use dried orange slices, dried herbs, cinnamon sticks, star anise, cardamom pods, and whole cloves. Do not put fresh cranberries or other fresh produce into a stored bag or jar; they can spoil.
Simple gift blend
- 2 to 3 dried orange slices
- 1 cinnamon stick
- 1 or 2 star-anise pods
- 3 to 5 cardamom pods
- 1 teaspoon whole cloves
- A small amount of dried rosemary, optional
Place the dry ingredients in a labeled bag or jar. Include instructions such as: “Add contents to a saucepan with 6 to 8 cups of water. Bring to a brief boil, reduce to low, and simmer only while supervised. Add water as needed. Do not drink.” A holiday simmer pot spice kit can be a convenient alternative for readers who want a ready-made bundle, although the ingredients and quantities may vary by kit.
For easier cleanup, put the whole spices in a stainless-steel tea infuser before adding it to the pot. This is optional; the fruit and herbs can go directly into the water. Le Creuset’s printable simmer-pot gift formulation also suggests using a spice infuser for cleanup.
Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone.Reuse, storage, and disposal
For a same-day batch, you can top up the pot with water while the aroma remains pleasant and the ingredients look and smell fresh. Turn off the burner and let everything cool before disposing of it.
Do not keep reusing a batch indefinitely. Refrigerate it only if you plan to use it again promptly, and discard it if it develops an unpleasant odor, visible mold, or any other sign of spoilage. When in doubt, throw it out.
Children, pets, and the “not for drinking” rule
Label a fragrance simmer pot clearly if other people in the home might mistake it for cider or tea. Keep the pot, hot water, steam, fruit, and whole spices out of reach of children.

These recipes do not require essential oils, but pets should still be prevented from drinking the mixture or eating its ingredients.
A simmer pot adds seasonal fragrance; it should not be described as an air purifier, disinfectant, medical treatment, or proven aromatherapy remedy.
