6 Beautiful Plants That Look Amazing in Winter Snow

Berries, colorful stems, evergreen foliage, grass plumes, flowers, and peeling bark can all bring interest to a winter garden. Explore six plants and how to choose them for your site.

Plants can look beautiful in winter through bright berries, vivid stems, evergreen foliage, seedheads, cold-season flowers, or striking bark. These six choices offer different kinds of winter interest, though snow cover, bloom timing, and performance depend on your climate, cultivar, and planting site.

Which plants look beautiful in winter?

Winter beauty does not require a plant to flower or stay green. Some plants provide color and structure while dormant; others bloom during the colder months. This comparison shows what each of these six options contributes.

1. Winterberry holly for red berries

Winterberry holly is a deciduous holly, so its bright red fruit stands out against bare branches and a snowy landscape. University of Illinois Extension highlights its brilliant berries, and North Carolina Cooperative Extension describes the fruit as showy through winter. A nearby evergreen can provide a dark backdrop that makes the red easier to see. Birds may eat the berries, so they are not guaranteed to remain until spring.

2. Red twig dogwood for colorful bare stems

Red twig, or redosier, dogwood (Cornus sericea) brings vivid stems into view after its leaves drop. Against snow, those bare branches can become one of the garden’s strongest color accents. This recommendation is for the colorful-stem species, not a claim that every dogwood has equally red winter growth.

Renewal pruning encourages new colorful growth. Illinois Extension gives late winter—such as February or March—as regional guidance, while Chicago Botanic Garden advises removing about a third of the oldest dogwood stems in late winter. Timing varies by place, so use local horticultural guidance rather than treating those months as universal.

3. Evergreen conifers for year-round color and shape

Conifers retain foliage and structure while much of the garden is dormant. Snow resting on their branches can emphasize their form. University of Illinois Extension puts it this way: “An evergreen’s color is only improved by seasonal snow resting on the branches, creating a perfect shelf for settling snow.”

Choose a conifer to fit the space, not just the photo: many evergreens eventually outgrow a typical backyard. Dwarf forms may be a better fit for limited space, but check the mature size of the specific plant before choosing it. There is no single conifer or cultivar that suits every site.

4. Ornamental grass for winter plumes and movement

Switchgrass (Panicum virgatum) and other ornamental grasses can keep their height and plumes after going dormant. Iowa State University Extension notes that many ornamental grasses retain plumes through much of winter and that some stand tall through heavy snow. Chicago Botanic Garden also recommends grasses for winter texture and movement.

Leave selected stems standing during the cold season, then cut them back before new spring growth resumes. Dried stems and seedheads can also provide food or shelter for wildlife in some cases.

5. Hellebores for winter-to-early-spring flowers

Hellebores (Helleborus spp.), often called lenten roses, are among the options on this list for flowers rather than dormant-season structure. Treat that as a general seasonal window, not a fixed promise: local conditions affect when flowers appear.

6. Paperbark maple for peeling bark

Paperbark maple (Acer griseum) offers cinnamon-colored bark that flakes away in layers, bringing color and texture to a winter view. The University of Cambridge Botanic Garden describes its distinctive bark, and Chicago Botanic Garden includes it among trees with exfoliating bark that draws attention in winter. Because it is a tree, it is a longer-term choice that needs room to establish and grow—not a quick, small-scale seasonal accent.

How to choose plants for your winter garden

  • Start with the effect you want: berries and bare stems add color; conifers provide foliage and shape; grasses contribute height and seedheads; hellebores offer flowers; and paperbark maple supplies textured bark.
  • Match the plant to the space: consider mature size, especially for conifers and trees, as well as the room available for shrubs and perennial grasses.
  • Check local suitability: climate and site affect plant performance and flowering. Ask a local extension service for advice and check the plant label; the sources cited here do not establish one hardiness-zone range that fits all six selections.
  • Plan for seasonal care: leave chosen grasses standing through winter, and use local guidance to time pruning of colorful-stem dogwoods.
