A food processor can make falafel mixture, but no model in the available evidence has been shown to make better falafel than the others. The key is a chopping blade and pulse control: falafel needs a coarse, evenly processed mixture, not a smooth purée. Here are five practical ways to choose a processor, with the Cuisinart Custom 14 Cup as a documented example rather than a tested overall winner.
What matters most for falafel
- Pulse control: Short bursts give you control over texture. Cuisinart’s falafel recipe directs cooks to pulse soaked chickpeas to a coarse grind and scrape the bowl before continuing.
- A chopping blade: A suitable blade processes chickpeas and aromatics together. Cuisinart’s smaller-batch recipe specifies a universal blade.
- Capacity matched to your batch: The cited Cuisinart recipes use different batch sizes in 7-cup and 14-cup processors. That is evidence that capacity should suit the recipe, not that everyone needs a large machine.
- Easy scraping and cleanup: You may need to stop and scrape the sides for even processing. A bowl and blade that are straightforward to handle and clean make this less of a chore.
Wattage alone is not a reliable way to predict falafel texture. Cuisinart lists 720 watts for its Custom 14, but that specification does not demonstrate better results than another processor.

Five processor choices and buying approaches
The sources establish a specific Cuisinart model and general food-processor evaluation criteria, but they do not establish five models tested head-to-head on falafel. These five options therefore describe useful buying approaches, not a ranked list of proven falafel performers.

| Choice | What the evidence supports | Best fit |
|---|---|---|
| 1. Cuisinart Custom 14 Cup DFP-14BCNY | Cuisinart lists a 14-cup bowl, a 720-watt motor and a three-year limited warranty. Its parts page lists model-specific parts, including a metal blade and work bowl. See the product page and parts and accessories page. | People who want a large-capacity processor for falafel batches as well as produce chopping, cheese shredding or dough kneading. |
| 2. A 7-cup processor with a chopping blade and pulse setting | Cuisinart publishes a falafel recipe using a 7-cup processor and universal blade. The recipe demonstrates a smaller machine used with a sized batch, not that all 7-cup models perform identically. | People making the batch size their chosen recipe calls for, or who have limited counter or storage space. |
| 3. A processor sized to your usual recipe | The cited recipes differ in both bowl reference and chickpea quantity. No source establishes a universal minimum capacity. | People who want to avoid crowding the bowl or buying more capacity than they need. Check the appliance instructions and recipe quantities before processing. |
| 4. A processor with intuitive pulse controls | Cuisinart’s recipes use repeated pulses to reach a coarse grind, followed by scraping and further processing as directed. No comparative control test is available. | People who prefer to check texture in short bursts rather than rely on continuous processing. |
| 5. A general-purpose processor with manageable cleanup | Tom’s Guide reports tests on general tasks such as hummus and sticky dough, as well as differences in capacity, output, noise and performance. Those are useful ownership considerations, not falafel-specific test results. See its food-processor roundup. | People who will use the machine for other kitchen jobs and want to weigh cleanup, storage and noise alongside falafel preparation. |
How to process falafel mixture without turning it smooth
For the method in Cuisinart’s official recipe, start with dried chickpeas soaked overnight, then rinsed and drained. The recipe makes 12 falafel from ½ cup of dried chickpeas. Its processing instructions are recipe-specific, not a guarantee for every formula or machine.
#1 Best Overall
- Built-in bowl scraper saves time. Quickly process ingredients without stopping to use a spatula. Simply move the scraper from side-to-side to scrape the bowl while the food processor is running or the power is off — no need to remove the lid.
- Slice, shred, chop, mix and puree with 2 versatile attachments. The Hamilton Beach food processor gives you 5 processing functions and includes a stainless steel slicing/shredding disc and chopping/pureeing blade so you can tackle every job with ease.
- Powerful 450 watt motor. Make healthy salads, homemade salsa, hearty acai bowls and more. The 450 watt motor easily powers through the toughest ingredients, so you can spend less time processing and more time enjoying.
- Precise control with 2 speeds plus pulse. The low and high speeds plus pulse give you the control you need for a variety of recipes. Use the high speed when you need more power and select the low speed for processing or mixing delicate foods.
- 10 cup bowl capacity. The generous 10 cup bowl fits large volumes of food all at once, and the large feed chute saves you time by reducing the need to pre-cut food before processing or using as a vegetable chopper.
- Load the ingredients called for by your recipe. Use the recipe’s stated quantities and do not assume the bowl can handle a larger batch.
- Pulse to a coarse grind. Cuisinart’s 14-cup recipe calls for about 10 long pulses on the chickpeas and aromatics. Its separate 7-cup recipe uses 1 cup of dried chickpeas and calls for 10–12 pulses. Pulse counts vary by recipe; use the texture as your guide.
- Stop and scrape. Scrape ingredients from the sides so they can be processed more evenly, then continue only as the recipe directs.
- Follow the recipe’s remaining steps. The 14-cup recipe reserves some mixture and incorporates dissolved baking soda before shaping. Do not transfer these details to a different recipe unless it calls for them.
- Shape and chill if your recipe directs it. Cuisinart’s cited recipe chills shaped falafel for 30 minutes before cooking. Its cooking instructions belong to that recipe, rather than serving as a universal rule.
How to decide which processor to buy
- Choose capacity by checking whether your usual recipe fits without crowding the bowl; the evidence does not support a universal minimum bowl size.
- Confirm that the machine includes a chopping blade and offers pulse operation.
- Consider whether the bowl is easy for you to stop, scrape and clean, and whether its storage needs suit your kitchen.
- If parts replacement matters, match accessories to the exact model number. Cuisinart’s parts page is specific to the DFP-14BCNY; do not assume a listed part fits other models.
- Use general processor roundups for broader ownership comparisons, but do not treat tests of hummus or dough as evidence of falafel performance.
The evidence here does not establish a falafel-specific winner, comparative durability on falafel batches or a wattage threshold for good results. Pick a processor that suits your batch size and gives you control over coarse processing.
