Raised beds can drain and warm earlier than in-ground soil, but spinach still struggles when days get hot and long. Use local frost dates and the seed packet—not a generic calendar date—to plan sowing.
1. Prepare a deep, fertile, well-drained bed
Raised beds are useful for spinach because they drain well and can be worked early in spring. Before sowing, loosen the soil 12 to 18 inches deep; mature spinach can develop a long taproot. Work in rich compost or aged manure to improve the bed, and avoid leaving compacted layers beneath the surface. Penn State Extension’s spinach-growing guidance recommends this depth and organic matter for bed preparation.
Spinach prefers soil pH between 6.0 and 6.5, according to the UC Statewide IPM Program. If you are unsure what the bed needs, use a soil test to guide fertilizer choices rather than applying amendments by guesswork; Utah State University Extension advises following the test report.
2. Sow fresh seed during cool weather
Spinach is a cool-season crop, and seed germinates best when the soil is cool. Penn State gives a germination range of 45°F to 68°F and suggests sowing in spring about four to eight weeks before the average last frost, or in fall six to eight weeks before the average first frost. Maryland Extension recommends spring sowing once soil temperature reaches 45°F. Treat these as regional guides: check your local frost dates and the cultivar’s seed packet for timing that fits your area.

Direct-sow seed about one-half inch deep. For a steadier supply instead of one large flush, make several small sowings a few days apart. Maryland Extension recommends this approach, while UC Marin Master Gardeners suggest sowing every two to three weeks. A raised bed can be covered with a supported cover to shelter early spring seed as it establishes.
3. Thin seedlings and keep soil evenly moist
Spacing depends on whether you want tender baby leaves or full-size plants. For full-size growth, aim for about 3 to 6 inches between plants, adjusting for the variety and the seed packet’s directions. Penn State’s guidance starts with seed about 2 inches apart and then thins plants to 4 to 6 inches; Maryland Extension lists 3 inches, and UC IPM gives 3 to 6 inches. For an intensive planting method, Penn State also describes nine plants per square foot. Thin gently because young spinach roots are shallow.

Keep the soil consistently moist, especially while seeds germinate and during dry spells. A layer of mulch helps conserve moisture and suppress weeds. When practical, water at soil level rather than wetting the foliage, since prolonged leaf moisture can encourage fungal disease.

Warming temperatures and lengthening spring days can make spinach bolt: it sends up a flower stalk and the leaves become bitter and inedible. Penn State recommends using shade cloth as temperatures rise to 70°F. Utah State Extension notes that temperatures above 75°F reduce growth and quality and can prompt flowering. These figures are cues, not guarantees; cultivar and local conditions also affect how long plants stay productive. Early spring and fall sowings generally fit spinach better than hot summer weather.
