The best lettuce for a raised bed depends on whether you want a steady supply of leaves or full heads, and how long your garden stays cool. Loose-leaf is the most flexible for repeated harvests; butterhead suits tender, small heads; romaine makes upright, crunchy heads; and crisphead is best for gardeners with enough space and a long cool season.
Which lettuce type should you choose?

These are extension recommendations, not universal rules: use the seed packet and local guidance to account for cultivar and intended head size. Maryland Extension describes lettuce as “an easy-to-grow, cool-season crop that can withstand light frost” in its Growing Lettuce in a Home Garden guide.
1. Loose-leaf: the flexible choice for frequent picking
Loose-leaf lettuce does not need to form a tight head, so it works well when bed space is limited or you want to harvest gradually. Pick young leaves, take larger outer leaves as needed, or harvest the whole plant. Maryland Extension also describes cutting a dense raised-bed planting when the leaves are 6–10 inches tall; with watering and fertilizer, plants may regrow for a later cut.
For cultivar examples, North Carolina State Extension lists Black-seeded Simpson as an early-spring option, New Red Fire as heat- and bolt-resistant, and Red Sails as another loose-head type. These are examples, not a universal ranking: match a variety to your climate and planting window.

2. Butterhead: tender leaves in small, loose heads
Butterhead varieties, including Bibb and Boston, form soft, loose heads. They are a good choice if you prefer tender leaves rather than the firmer structure of romaine or crisphead. Buttercrunch is one cultivar to consider: North Carolina State Extension describes it as mild, tender, and bolt-resistant, and UF/IFAS includes it among its Florida recommendations.
Heat can still affect butterhead quality. Maryland Extension notes that Bibb can become bitter in high summer temperatures, so plan for a cool-season harvest rather than treating any variety as immune to hot weather.

3. Romaine: upright plants and crunchy full heads
Romaine, also called cos, grows upright and forms elongated heads with substantial leaves and crunchy midribs. It generally handles heat better than crisphead, but leaf and butterhead lettuces tend to tolerate heat better than romaine. Jericho is a heat-tolerant romaine example listed by North Carolina State Extension for spring planting.
Allow enough room for plants to develop rather than packing them at baby-leaf density. If you are growing transplants, Illinois Extension gives 6–8 inches as its cos spacing; follow regional and cultivar guidance if you are growing for larger heads.

4. Crisphead: the most demanding option in warm or short seasons
Crisphead lettuce produces the compact, firm head many people associate with iceberg. It also needs more room than the other types in this guide and a longer cool growing window. As temperatures rise, it can bolt before producing a satisfactory head, making it a higher-effort choice in warm climates or gardens with short springs.
Great Lakes is a crisphead cultivar UF/IFAS lists for Florida, but that recommendation does not mean it will suit every Florida planting date or garden. The same guidance emphasizes that local planting months vary. Check your regional calendar before choosing a crisphead variety.

How to grow lettuce successfully in a raised bed
Time planting for cool weather
Lettuce is a cool-season crop, and heat combined with longer days can trigger bolting and bitter flavor. University of Maryland Extension gives a general maturity span of 40–80 days, depending on type; North Carolina State Extension lists 50–60 days from seed for leaf lettuce and 70–80 days from seed for head lettuce. These are planning ranges, not guaranteed harvest dates. Use your local planting calendar and the seed packet to estimate timing.
Space plants for the harvest you want
Closer spacing suits baby-leaf sowings, which you can thin or harvest progressively. Full heads need room to develop, so use the spacing guidance for the type and cultivar rather than applying one distance to every lettuce. Because lettuce has shallow roots, cultivate carefully around plants.

Keep soil evenly moist
Keep the soil consistently moist without waterlogging it. Maryland Extension recommends adding compost before planting. In hot conditions, afternoon shade and careful irrigation can help extend the useful growing window; some heat-tolerant cultivars are better candidates for these conditions than others.
Sow in succession to extend harvests
Illinois Extension suggests sowing successive plantings every 10–14 days for a more continuous supply. Maryland Extension also recommends succession planting and using varieties with different maturity dates. Staggering sowings can spread harvests, but it cannot remove the seasonal limit: plantings made as weather warms may still bolt or turn bitter.
Choose by bed space, season, and harvest style
- Want repeated small harvests? Start with loose-leaf lettuce; its range of harvest options and relatively close spacing make it adaptable to raised beds.
- Prefer tender leaves and small heads? Choose butterhead, and plan to harvest before hot weather degrades quality.
- Want an upright, crunchy full head? Consider romaine and give plants room to grow.
- Want iceberg-style heads? Choose crisphead if you have adequate bed space and a reliably cool, sufficiently long growing window.
Planting dates and performance vary by climate. For local timing and cultivar advice, consult your regional extension service and the instructions on your seed packet.
