The evidence-backed options here are three models from OXO and Cuisipro—not seven independently tested winners—so compare their published capacities, drainage styles, strainers, materials, and cleaning details rather than treating this as a ranked “best” list.
How a fat separator works
A fat separator is a measuring-cup-like vessel with a strainer. Pour pan drippings or stock through the strainer to catch solids, then allow the fat to rise above the liquid. A classic model has a low spout and a stopper: the stopper keeps the upper fat from entering the spout while filling, and removing it lets the lower cooking liquid pour first. Bottom-release models instead dispense liquid from underneath, using a trigger or drain mechanism. OXO’s guide to making turkey gravy describes using a separator to collect cooking liquid for gravy.
Three documented fat separators
The models below are compared by manufacturer-published details, not by independent side-by-side testing. Their specifications do not establish how well they perform against one another in a home kitchen.

Which design fits your cooking?
Choose a 2-cup model for smaller batches
The OXO Good Grips 2 Cup has the smallest documented capacity in this comparison. Its stopper-and-spout mechanism uses the familiar sequence of filling, letting fat rise, then pouring the lower liquid first. Its splash shield and measurement marks are useful documented features, but the 2-cup vessel may require more than one batch if you have a larger quantity of drippings.

Choose a 4-cup bottom release for larger quantities
Both the OXO Good Gravy and Cuisipro models are listed at 4 cups, with Cuisipro also stating 1 L. Their bottom drainage avoids pouring the liquid through a side spout: OXO uses a squeeze trigger, while Cuisipro calls its mechanism “Easy Drain.” The published pages do not provide comparable measurements of speed, leakage, or ease of use, so the mechanism descriptions alone do not prove one drains better.
Compare the strainer and clean-up details
All three pages list a straining component. OXO identifies a removable strainer on the Good Gravy model; Cuisipro calls its basket oversized and says the separator disassembles for dishwasher cleaning. For the 2-cup OXO, the cited page specifies a strainer but does not state that it is removable. All three manufacturers publish dishwasher-safe cleaning guidance, though only Cuisipro’s page specifically notes disassembly.

Using separated drippings for gravy
- Strain the drippings. Remove large solids from the roasting pan, then pour the drippings through the separator’s strainer.
- Let the fat rise. Give the mixture time to separate into an upper fat layer and lower cooking liquid.
- Release the cooking liquid. With a stopper-and-spout model, remove the stopper and pour the lower liquid first. With a bottom-release model, use its trigger or drain mechanism to dispense the liquid below.
- Make the gravy base. OXO’s guide describes combining the separated cooking liquid with a roux—a mixture of fat and flour used as a thickening base. The separated fat can supply the fat for that roux.

What the product evidence does—and does not—show
OXO published a design account on November 17, 2025, describing its Good Gravy development. The company says engineers tested that design with bacon grease at varied temperatures and thicknesses, as well as food bits, to examine leaks, damage, cleanability, and clogging; OXO reports that it did not clog during those experiments. OXO also says more than six pounds of bacon were used in design testing. The same OXO article describes the original 4-cup separator’s silicone stopper as plugging the spout to create a pressure gradient that prevents fat from rising into it. This is OXO’s explanation of its design, not an independently verified performance finding. Product claims such as “heat-resistant” and “BPA-free” are manufacturer statements, not independent safety certifications.

- Pick the 2-cup OXO if your usual quantity is modest and you want the classic stopper-and-spout approach.
- Consider either 4-cup bottom-release option for larger batches; distinguish them by OXO’s squeeze trigger versus Cuisipro’s “Easy Drain,” plus each maker’s published parts and care details.
- Prioritize the care instructions that suit you: the listed models are dishwasher safe, while Cuisipro explicitly says it disassembles for cleaning.
OXO’s current product information says its classic separator is available in 2-cup and 4-cup sizes, but the detailed classic-model specifications cited here cover the 2-cup version. The three entries above are therefore a documented shortlist, not a claim that only three fat separators exist or that seven models have been assessed.
