The Best Proofing Baskets, Tested and Reviewed

Best overall: the Breadtopia round rattan proofing basket with its matching liner. An America’s Test Kitchen evaluation presented by PBS selected that basket-and-liner combination, while the basket’s round shape suits the boule that most home bakers make. Choose an oval model for bâtards, a composite basket for easier washing, or a wood-pulp design when moisture management is your priority.

Best overall: the Breadtopia round rattan proofing basket with its matching liner. It is the clearest winner in the independent comparative evidence located for this guide: an America’s Test Kitchen evaluation presented by PBS selected the Breadtopia round basket and liner, noting that the basket could also be used without the liner after seasoning and suitable flouring. (PBS test segment)

That recommendation is for a typical round boule. Choose an oval basket for a bâtard, a composite basket if easy washing matters most, and a wood-pulp basket if you prioritize the moisture-management characteristics claimed by its manufacturer. No proofing basket is an oven vessel: the dough rises in it, then is turned out onto a baking surface or into a covered baker.

Best proofing baskets at a glance

Pick Best for What the evidence supports Main caution
Breadtopia round rattan basket with liner Most bakers and round boules Selected as the winner in the America’s Test Kitchen evaluation shown by PBS; usable lined or unlined Natural rattan needs dry-brush care and can vary in finish quality
Breadtopia oval rattan basket with liner Bâtards and oval baking vessels Correct shape for elongated loaves; Breadtopia offers a matching oval liner Its advantage is shape compatibility, not proof that it outperforms every oval basket
Breadtopia composite banneton Low-maintenance cleanup Made from wood fiber and food-safe polypropylene; designed to be washable Composite materials may not wick moisture like natural cane or wood pulp
King Arthur round bannetons, set of two Two simultaneous round loaves Two approximately 2-pound baskets made from upcycled sugarcane pulp and renewable bamboo, according to the product description Round only; moisture-wicking and sustainability claims are manufacturer claims
Flourside wood-pulp banneton Very wet dough and size-specific buying German-made spruce-pulp baskets with several stated dough-capacity ranges Current performance claims were not independently compared in the research reviewed
Generic 9-inch rattan set Budget and first-time buyers A practical search category, usually including a liner and basic tools Inspect dimensions, construction, liner fit, and seller-specific reviews; no generic set is a tested winner

How the recommendations were evaluated

This is a review of available comparative evidence and product information, not a claim that this publication physically handled or baked with every basket. The strongest test evidence found was the PBS presentation of an America’s Test Kitchen evaluation. It named the Breadtopia round basket and liner the winner. Testers initially experienced sticking without a liner, but a rice-and-wheat flour seasoning mixture improved release. The basket was also usable without a liner once prepared properly. (Read or watch the PBS test presentation.)

#1 Best Overall
Saint Germain Bakery Premium Round Bread Banneton Basket with Liner (Set of 2 9" Round Baskets)
  • SPLINTER-FREE, SMOOTH AND NON-STICK: Carefully crafted to always expose smooth surface. With sufficient dusting, dough will easily stay in shape as well as slipping out smoothly onto baking surface.
  • EASY CLEANING: Use with the provided cloth liner, if desired. Without the linen liner, your banneton basket still does not need much cleaning. Simply shake the excess flour out after each use, and if dough has stuck to it, wait till it dries, then use a stiff brush to take it off.
  • POPULAR SIZE: At 9 inch, it is a popular size many recipes call for baking a medium loaf.
  • TOP PERFORMANCE GUARANTEE: We guarantee the basket will perform exceedingly well and enable you to bake beautiful breads. If you feel it fell short of your expectation, simply return it for a REFUND.

Breadtopia also says that its round and oval baskets and corresponding liners were favorites in the broader evaluation, but that statement appears on the retailer’s own product pages and should be treated as retailer-hosted attribution rather than independent confirmation. (Breadtopia round basket; Breadtopia oval basket.)

A separate 2023 personal comparison reported testing 10 baskets and found that a Breadtopia round hybrid made from wood pulp and plastic absorbed excess moisture less effectively than some natural-material alternatives. That is a useful warning about the trade-off between washability and absorption, but it was not a standardized laboratory test and may not concern the exact current composite model. (Read the comparison.) More recent comparison guides describe hands-on testing, but their methods and product selections are less transparent than the PBS/America’s Test Kitchen evidence. (Example of supplementary comparison coverage.)

1. Best overall: Breadtopia round rattan basket with liner

A round rattan banneton is the default choice for a boule: a round, often high-hydration loaf that needs support during its final rise. The basket’s spiral or ridged construction helps the dough hold its shape and can leave a traditional pattern on the crust.

The Breadtopia model has the best-supported overall recommendation because of the PBS-presented America’s Test Kitchen result. The round basket can be used with or without a liner. For a beginner, a Breadtopia round rattan proofing basket paired with a liner is the safer configuration, especially for sticky dough, overnight refrigeration, or a baker still learning how much flour is needed.

Breadtopia listed the round basket at $16 and showed it in stock when the research was accessed. Price, inventory, shipping, and available sizes change, so verify those details before purchase.

2. Best for oval loaves: Breadtopia oval rattan basket

Choose an oval banneton when you bake bâtards—elongated loaves—or use an oval Dutch oven or covered bread baker. A round basket cannot create the same final loaf geometry, regardless of its material or decorative pattern.

  • BAKE TWO LOAVES AT A TIME: Includes two 9-inch round baskets for proofing multiple loaves at once. A highly efficient proofing basket for creating the classic sourdough boule shape, for a more productive baking.
  • SPLINTER-FREE FINISH: Made of premium Indonesian Rattan with a smooth, polished finish. This ensures a safe, clean release, making it one of your most reliable sourdough accessories and baking essentials.

  • PROOF, BAKE, & SERVE: Beyond proofing, these beautifully handcrafted bowls double as an elegant bread basket for your kitchen table. A versatile addition to your bread making accessories for serving fresh rolls.
  • EFFORTLESS CLEANUP: The smooth interior prevents stuck-on dough, making this sourdough basket simple to clean after each bread proofing session. Just tap out the excess flour and store.

The oval banneton with liner is therefore the straightforward choice for an elongated loaf. Its principal benefit is matching the shape of the dough and baking vessel. The available evidence does not establish that the oval version is superior to every competing oval basket in release, durability, or moisture absorption.

3. Best low-maintenance option: Breadtopia composite banneton

Breadtopia’s composite banneton is made in the United States from 30% recycled maple wood fiber and 70% certified food-safe, BPA-free and phthalate-free polypropylene, according to the manufacturer. It is designed to be washable while retaining some of the dough-marking characteristics associated with a reed basket. (See the composite banneton description.)

This is a sensible choice if you dislike scraping dried dough from rattan or live in a humid environment where drying and storage are difficult. The trade-off is moisture management. Natural cane and wood pulp are porous; a plastic-containing composite may not absorb surface moisture in the same way. The 2023 personal comparison found that one wood-pulp-and-plastic hybrid absorbed less excess moisture than the natural baskets it tested, but that result should not be generalized definitively to every current composite banneton.

4. Best sustainable-material set: King Arthur’s two round bannetons

King Arthur Baking sells a set of two round bannetons sized for approximately 2 pounds of dough each. The product description identifies upcycled sugarcane pulp and renewable bamboo as the principal materials, and says the baskets are stackable and intended for repeated use with proper care. (View the King Arthur set.)

This set makes sense for a baker who routinely prepares two round loaves or wants matching baskets. The listed original price was $29.95 and the set was shown in stock when checked; confirm current price and availability before publication or purchase.

The moisture-wicking, durability, and sustainability statements are product-description claims, not results from an independent side-by-side test located for this guide. Also note that two round baskets are less versatile than one round and one oval basket if you bake both boules and bâtards.

5. Best for very wet dough: Flourside wood-pulp baskets

Flourside’s German-made proofing baskets use spruce pulp. The manufacturer says they release very wet, high-hydration dough, wick moisture evenly, help maintain dough temperature through thick walls, and are durable. The product range is useful because it gives explicit dough-weight bands: approximately 500–750 grams for a small oval, 650–900 grams for a medium round, 700–1,000 grams for medium ovals, and 1,000–1,400 grams for a large round. (See the Flourside range.)

Those specifications make Flourside attractive when you want to match a basket closely to a recipe’s total dough weight. However, the moisture and release benefits remain manufacturer claims in this comparison; the research did not locate a transparent independent test of the current Flourside range.

6. Best budget path: a conventional 9-inch rattan set

A generic 9-inch round banneton proofing basket with a linen liner and basic tools can be a reasonable beginner purchase. It is a search category, not a single validated product or tested winner. Seller quality varies, so inspect the listing carefully.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
  • Check the internal diameter and stated dough capacity rather than relying on “9-inch” alone.
  • Look for smooth, splinter-free rattan and evenly joined coils.
  • Confirm that the included liner fits the basket and can be removed for cleaning.
  • Read reviews for the exact seller and listing, focusing on cracking, splinters, odor, misshapen baskets, and liner shrinkage.
  • Be cautious when the listing promises unusually large capacity from a very shallow basket.

What a proofing basket does

A banneton, brotform, or proofing basket supports shaped dough during the final rise. This matters most with soft or high-hydration dough that would otherwise spread outward on a counter, in a bowl, or on parchment. The basket is turned upside down immediately before baking so the dough can transfer to a preheated baking surface, Dutch oven, or covered bread baker. (King Arthur’s banneton guide.)

It does not replace shaping. A basket can support a well-shaped loaf, but it cannot create sufficient surface tension in dough that was poorly tightened or overproofed. If your dough holds its shape well in a floured bowl, you may not need a banneton; if it relaxes into a puddle during final proofing, the support can make a substantial difference.

How to choose the right size

Size the basket by total dough weight, not flour weight. Breadtopia’s general guidance places small baskets around 1–1.5 pounds (approximately 450–680 grams) of dough and standard baskets around 1.5–2.5 pounds (approximately 680–1,130 grams). Flour type, hydration, nuts, raisins, and other additions affect how much the dough expands, so these are starting ranges rather than universal capacity standards. (Breadtopia’s size guidance.)

As a practical rule:

  • 450–680 g dough: small basket.
  • 680–1,130 g dough: standard basket.
  • 1,000–1,400 g dough: large basket, subject to its specific dimensions.

Do not fill a basket to the rim. The dough needs room to expand during final proofing. If the same recipe routinely mushrooms over the edge, use a larger basket or shorten the proof; if it spreads across the bottom without rising enough, the basket may be too large, the dough may be under-strengthened, or fermentation may need adjustment.

Rattan, wood pulp, composite, or plastic?

Rattan and cane

Natural rattan offers traditional ridges, airflow, and a familiar baking workflow. Its disadvantages are variable manufacturing quality, possible splinters, cracking, and more demanding dry storage. Customer feedback on Breadtopia includes both reports of sturdy, effective baskets and complaints about splintering or cracking, so “rattan” alone does not guarantee identical quality.

Wood pulp

Wood-pulp baskets are marketed as moisture-wicking and easy-releasing, with some products using renewable or recycled plant materials. King Arthur’s sugarcane-and-bamboo baskets and Flourside’s spruce-pulp baskets are examples. These material claims are appealing, but the research found less independent comparative testing of current wood-pulp models than of the Breadtopia rattan basket.

Composite and plastic-containing designs

Composite baskets are usually easier to wash and may be less likely to retain flour or mold when properly dried. Their smooth or less porous surfaces can also change how much moisture is removed from the dough. Choose one when cleanup convenience is your priority; choose rattan or wood pulp when traditional patterning and porous moisture management matter more. Neither material is universally best.

Liner or no liner?

Use a liner when reliable release matters more than a pronounced spiral pattern. A liner is particularly helpful for beginners, very sticky dough, heavily hydrated formulas, or cold-proofing. It also gives you a removable surface to flour and lift during transfer.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

For a traditional ridged crust, proof directly in the basket. Flour the basket rather than assuming the bare rattan will release the dough. King Arthur recommends flouring either the basket or liner and says a liner can make release easier. The PBS test likewise found the Breadtopia basket usable both ways but selected the basket-and-liner combination as the winning setup. (King Arthur’s guidance.)

A linen banneton liner is also a practical replacement when an included liner no longer fits, has shrunk, or has developed an odor. Make sure its dimensions match the basket; a loose liner can fold into the dough, while a tight one can distort the basket.

How to prevent sticking and care for a banneton

  1. Dust before filling. Use a thin, even coating of flour. Rice flour is often useful because it contains little gluten and does not become as tacky as wheat flour when wet; a rice flour for sourdough banneton is a relevant accessory for this problem.
  2. Do not over-flour blindly. Excess flour can create a thick, bitter layer on the crust and obscure the basket pattern. Adjust the amount for the dough and basket surface.
  3. Place the shaped dough seam-side up. When you invert the basket, the seam will be underneath and the smooth side will face upward.
  4. Turn out decisively. Place the peel, parchment, or baking paper over the basket, invert it, and lift the basket vertically. Hesitation can allow wet dough to adhere to the fabric or ridges.
  5. Remove loose flour after use. Tap or shake out the basket, then brush away dried dough once it is completely dry.
  6. Deep-clean only when necessary. King Arthur recommends warm water and a stiff brush without soap for a more thorough cleaning, followed by complete room-temperature drying. Do not store a damp natural basket.
  7. Store liners dry. Routine washing of separate liners is not generally recommended in King Arthur’s guidance; storing a dry liner in a freezer bag can help prevent musty odors.

Never put a natural rattan, cane, or ordinary wood-pulp banneton in the oven. It is a proofing support, not an oven-safe baking pan, unless the manufacturer explicitly identifies that exact model as oven-safe.

What else you need after proofing

The basket only supports the final rise. You still need a safe way to transfer and bake the loaf. Depending on your setup, that may include a bench scraper for shaping and cleanup, parchment for transfer, a bread lame for scoring, and a Dutch oven or covered bread baker for steam-retaining baking. These are companion tools, not substitutes for choosing the correct basket.

Bottom line

For one dependable all-purpose purchase, choose the Breadtopia round rattan basket with a liner. It has the strongest comparative support in the research reviewed and works for the most common round loaf shape. Buy the oval version for bâtards, a composite banneton when easy washing outweighs maximum porosity, the King Arthur set when you need two matching round baskets, and a Flourside wood-pulp basket when its stated size range and material characteristics fit your dough.

Frequently Asked Questions

What is a proofing basket used for?

A proofing basket supports shaped dough during its final rise, especially soft or high-hydration dough. You turn the basket upside down before baking; it is not normally an oven-safe baking vessel.

Which proofing basket is best overall?

For a typical round boule, choose the Breadtopia round rattan basket with liner. It was selected as the winner in the America’s Test Kitchen evaluation presented by PBS. The evidence does not mean every Breadtopia model or every rattan basket is universally best.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Should I buy a round or oval banneton?

Choose a round basket for a boule and an oval basket for a bâtard or elongated loaf. The basket’s shape affects the loaf form more directly than its decorative pattern.

What size banneton should I buy?

Use total dough weight as the starting point. Small baskets generally suit about 450–680 grams, while standard baskets suit about 680–1,130 grams, although manufacturer ranges vary and ingredients affect expansion.

Do I need a banneton liner?

A liner generally makes release easier and is especially useful for beginners, sticky dough, and cold-proofing. Proofing without one gives a more pronounced basket pattern but requires careful flouring and preparation.

How do I clean and care for a proofing basket?

Tap out excess flour, brush away dried dough, and keep the basket completely dry. For occasional deep cleaning, use warm water and a stiff brush without soap, then dry thoroughly. Never bake with a natural banneton unless the exact product is explicitly labeled oven-safe.

The Bottom Line

Best overall: Breadtopia’s round rattan basket with liner, based on the available America’s Test Kitchen evaluation presented by PBS. Match the shape to the loaf, the capacity to total dough weight, and the material to your priority: traditional airflow and patterning, moisture management, or easy cleanup.
