Best overall: the Mac Professional Paring Knife. Its three-inch carbon-steel blade was the top choice in Epicurious’s 2024 test of 22 knives, combining sharpness, balance, durability, and easy resharpening. For a lower price, choose the Victorinox 3.25-inch; for a splurge, the Shun Classic 3.5-inch; and for a drawer-friendly set, the Kuhn Rikon four-inch set with sheaths.
The right paring knife depends on blade length, tip shape, flexibility, grip, and whether you plan to sharpen it. This guide matches each recommendation to a specific use rather than treating one knife as universally best.

1. Mac Professional Paring Knife — best overall
Epicurious selected the Mac after testing 22 knives in 2024, describing its three-inch carbon-steel blade as ultrasharp, balanced, and sturdy without feeling cumbersome. Bon Appétit also named it best overall, highlighting its high-carbon steel and comfortable balance. It is the strongest choice if you want one small knife for peeling, trimming, hulling, coring, and detail work and are willing to pay more and maintain the edge.
2. Victorinox 3.25-inch — best value
Food Network found the flexible stainless blade, pointed tip, and textured grip easy to control, including with wet hands. Bon Appétit praised it for peeling but found it less versatile for coring strawberries and cutting hard cheese. Food Network lists its tested version as dishwasher-safe; check the instructions for the exact model you buy.

4. Kuhn Rikon 4-inch set — best for a knife drawer
This set provides three sharp stainless knives, each with a sheath. Food Network reported secure ergonomic handles and strong results on vegetables, tomatoes, and strawberries. Insert each blade carefully so the sheath is not damaged or the edge caught awkwardly.

10. Henckels Classic Precision 4-inch — longer reach

How to choose the right blade length
Paring knives generally measure three to four inches, according to Food Network’s 2026 guide. Choose based on the produce and the way you hold the knife:
- Three inches: maximum control for peeling, hulling, trimming, and intricate work.
- Three and a half inches: a balance of close control and reach; a versatile compromise.
- Four inches: more useful on onions, limes, tomatoes, apples, and other larger produce, or when you prefer longer cuts.
What matters beyond length
Balance and grip
A light, secure handle reduces fatigue during repetitive peeling. Epicurious test-kitchen director Chris Morocco summarized the goal: “Any excess weight in the handle just makes it feel like it’s going to fall out of your hand. You want something light that allows you to sit there all day and peel, without feeling it.” Textured or nonslip handles are particularly useful when hands or food are wet.
Steel and sharpening
Premium carbon or higher-quality stainless steel can justify a higher price when you will sharpen the blade. The Mac and Tojiro are suited to ongoing edge maintenance. Some inexpensive knives, such as the Zyliss, make more sense as replaceable tools once they lose their original sharpness.
Do these 3 things before closing this tab:
1Repair Windows errors before they cause bigger problems2Scan for outdated or missing drivers - takes under a minute3Clear out junk files and repair common Windows errorsTip, flexibility, and edge thickness
A sharp point helps hull strawberries and core small produce. A thin, flexible blade follows the curve of a potato, apple, or citrus fruit; a thicker, more rigid blade gives better authority in denser vegetables. Match the geometry to the work rather than assuming a stiffer or thinner blade is always superior.
Care and safe storage
- Check the maker’s cleaning instructions for the exact model, especially before using a dishwasher.
- Dry the blade promptly after washing to reduce staining and corrosion.
- Protect the edge in a knife block, magnetic strip, or fitted sheath instead of leaving it loose in a drawer.
- If using a sheath, guide the blade in slowly and fully; the Kuhn Rikon set requires particular care during insertion.
- Sharpen models designed for maintenance with an appropriate whetstone or knife sharpener, and replace budget knives that are not intended for repeated sharpening.
Which one should you buy?
- One best all-purpose choice: Mac Professional.
- Lowest-cost practical choice: Victorinox 3.25-inch.
- Premium handle and maneuverability: Shun Classic 3.5-inch.
- Several knives with protected drawer storage: Kuhn Rikon set.
- Most precise small-tip work: Wüsthof Gourmet 3-inch Spear Point.
- Longer blade preference: Henckels Classic Precision 4-inch.
