Use the refrigerator for perishable food you expect to eat soon, and the freezer for longer storage. Keep the refrigerator at or below 40°F (4°C) and the freezer at or below 0°F (-18°C), checking both with an appliance thermometer. Refrigerate or freeze perishables within two hours—or within one hour when the surrounding temperature is above 90°F (32°C). The exact holding time depends on the food, so use the FoodSafety.gov cold-storage chart rather than one rule for every item.
Refrigerator vs. freezer: the practical difference
The two compartments solve different storage problems. Refrigeration is short-term holding: it keeps food cold enough for near-term use, but each food has a limited refrigerator window. Freezing is the long-term option. When food remains continuously at 0°F (-18°C) or below, FoodSafety.gov says it can remain safe indefinitely; the freezer periods in its chart are primarily limits for best quality, not automatic safety cutoffs.

That distinction matters when a listed freezer period expires. A roast or container of soup may lose quality after the chart’s recommended months, yet continuous freezing at the target temperature does not make it suddenly unsafe on that date. Refrigerator figures should be treated more strictly because they are short-term guidance intended to limit spoilage and food-safety risk.

Freezing therefore is not a sanitizing step. Food that was mishandled before freezing does not become safe merely because it is frozen, and frozen food still needs safe cooking after thawing.
Temperature targets you should verify
FoodSafety.gov’s 4 Steps to Food Safety guidance, reviewed September 18, 2023, gives these targets:
| Compartment | Target temperature | What it means |
|---|---|---|
| Refrigerator | 40°F (4°C) or below | Short-term storage for perishables intended for near-term use. |
| Freezer | 0°F (-18°C) or below | Long-term storage; charted periods mainly protect quality when food stays continuously frozen. |
Do not rely only on the appliance’s dial or display. Put an appliance thermometer in each compartment and verify the actual temperature. A refrigerator that feels cold can still be above 40°F, while a freezer display may not reflect temperature swings caused by loading, a door left open, or a mechanical problem.
What to store in the refrigerator
Foods you will use within the chart’s refrigerator window
Choose the refrigerator when the food is perishable and you plan to use it in the next few days. Cooked meat and poultry leftovers, ground meat, raw poultry, soups and stews, and prepared salads all have short refrigerator limits in the official chart. Refrigerating a food does not give it a universal shelf life; the item and its condition determine the appropriate number of days.
Cooked leftovers
Cooked meat or poultry leftovers are listed for 3 to 4 days in the refrigerator. Soups and stews also have a 3-to-4-day refrigerator window. Move leftovers into shallow containers so they cool quickly, then keep them at 40°F (4°C) or below.
Raw meat and poultry awaiting near-term cooking
Ground meat and ground poultry are listed for only 1 to 2 days refrigerated. Raw whole chicken or turkey and raw chicken or turkey pieces are also listed for 1 to 2 days. If you will not cook them within that window, freezing is the more suitable compartment.
Prepared salads
Egg, chicken, ham, tuna and macaroni salads are listed for 3 to 4 days in the refrigerator. They are a useful example of why the refrigerator/freezer choice is not based solely on whether a food is already cooked: these salads keep briefly when chilled but do not freeze well.

Foods intended for longer storage
Use the freezer when you need to extend storage beyond the refrigerator chart’s short windows. The freezer chart values below are for best quality. They assume the food remains continuously at 0°F (-18°C) or below; they are not deadlines after which the food automatically becomes unsafe.

Items that retain useful quality when frozen
Cooked meat or poultry leftovers are listed for 2 to 6 months in the freezer. Ground meat and ground poultry are listed for 3 to 4 months. Whole chicken or turkey is listed for 1 year, and chicken or turkey pieces for 9 months. Soups and stews are listed for 2 to 3 months.
Foods that are poor freezer candidates
Do not assume every refrigerated food improves with freezing. FoodSafety.gov specifically identifies egg, chicken, ham, tuna and macaroni salads as foods that do not freeze well. The guidance also says some items, including hard-cooked eggs, should not be frozen. For those foods, use the refrigerator window and prepare only the amount you can use in time.
Official storage times at a glance
The following values come from FoodSafety.gov’s Cold Food Storage Chart, reviewed September 19, 2023. “Does not freeze well” describes quality, not a claim that the food becomes hazardous at a particular moment. For any food not shown, check the food-specific chart or FoodKeeper, which FoodSafety.gov says contains storage tips for more than 650 foods and beverages.

| Egg, chicken, ham, tuna or macaroni salad | 3–4 days | Does not freeze well | Use the refrigerator window rather than freezing for storage. |
How to decide where a food belongs
Step 1: Identify the food and its condition
Separate cooked leftovers, raw ground meat, raw poultry, whole poultry, poultry pieces, soups or stews, and prepared salads. The chart gives different times even within the same broad category. “Meat” is not one storage class: ground meat has a different window from a whole bird, and cooked leftovers have a different window from raw poultry.
Step 2: Decide when you will use it
If the item will be used within its refrigerator period, keep it at 40°F (4°C) or below. If your plan extends beyond that period, freeze it while it is still within safe handling limits. Do not wait until the refrigerator window has passed and then assume freezing will reset the clock.
Step 3: Check whether the food freezes well
Use the freezer for foods with a charted quality period, such as cooked meat, ground meat, poultry, and soups. Keep foods identified as poor freezer candidates—such as the listed prepared salads—in the refrigerator and plan to use them within 3 to 4 days.
Step 4: Verify the compartment temperature
Confirm the refrigerator is at or below 40°F (4°C) and the freezer at or below 0°F (-18°C) with appliance thermometers. A storage plan is only as reliable as the temperature actually maintained.
Planning examples for common situations
A batch of soup cooked for the week
If you expect to eat the soup within 3 to 4 days, refrigerate it in shallow containers and maintain 40°F (4°C) or below. If some portions will be saved beyond that window, freeze them promptly instead. The chart gives soups and stews a 2-to-3-month freezer period for best quality, while continuous storage at 0°F (-18°C) or below can remain safe indefinitely.

Ground meat purchased for a later meal
Ground meat and ground poultry have only a 1-to-2-day refrigerator window. A meal planned for tomorrow can stay refrigerated; a plan for later in the week calls for freezing within the safe two-hour or one-hour hot-weather limit. The freezer chart lists 3 to 4 months for best quality.
A whole chicken or turkey
Raw whole chicken or turkey can remain refrigerated for 1 to 2 days. For longer storage, use the freezer; the chart lists 1 year for best quality. Chicken or turkey pieces have the same 1-to-2-day refrigerator limit but a 9-month freezer quality period, so the cut matters.
Prepared salad for a gathering
Egg, chicken, ham, tuna and macaroni salads belong in the refrigerator and should be used within 3 to 4 days. They are specifically identified as foods that do not freeze well, so freezing leftovers is not the preferred way to extend their storage.

Reading the time limits correctly
The refrigerator column is a practical planning window for a perishable food held at or below 40°F (4°C). The freezer column answers a different question: how long quality is expected to remain best at 0°F (-18°C) or below. A freezer date is therefore not a universal discard date, and a refrigerator date is not transferable from one food to another.
Condition matters as much as category. Raw poultry, cooked poultry leftovers and prepared chicken salad are all different entries with different handling choices. When an item is not listed, do not substitute a similar-looking food; use the specific FoodKeeper or Cold Food Storage Chart entry for that food and preparation.
Safe timing after cooking or purchase
The two-hour rule
FoodSafety.gov advises refrigerating or freezing perishables within two hours. Reduce that limit to one hour when food has been exposed to temperatures above 90°F (32°C), such as during very hot weather or in a hot vehicle. The clock applies after cooking and after purchase; leaving food on a counter, in a shopping bag, or at a serving table for longer does not become safe because you later chill it.
Cool leftovers efficiently
Place leftovers in shallow containers so they cool quickly before and during refrigeration. This is specifically recommended in FoodSafety.gov’s guidance. The container approach is useful when a large pot of soup, stew or cooked food would otherwise cool slowly in one deep mass.

Thawing and using frozen food
Thaw in the refrigerator
FoodSafety.gov says to thaw in the refrigerator and never on the counter. The refrigerator keeps the food within the cold-storage environment while it thaws. Counter thawing allows the exterior to warm even though the center may remain frozen.
Cook after thawing
Because freezing does not destroy harmful germs, thawed food still needs to be cooked safely. Treat freezing as a way to hold food until cooking, not as a kill step. This is especially important for food that may have been contaminated before it was frozen.
Do not use freezer dates as a safety alarm
A package that has been frozen continuously at 0°F (-18°C) or below does not become unsafe solely because it has reached the chart’s quality period. The listed months tell you when quality is expected to be best. For the refrigerator, by contrast, use the shorter charted limits as the planning window for eating or freezing.
Do these 3 things before closing this tab:
1Clear out junk files and repair common Windows errors2Scan for outdated or missing drivers - takes under a minute3Repair Windows errors before they cause bigger problemsPower outages: refrigerator and freezer limits
FoodSafety.gov’s power-outage guidance, reviewed August 8, 2024, gives different holding times for each compartment when the doors remain closed:
| Appliance | Safe-temperature holding time with doors closed | Condition stated by FoodSafety.gov |
|---|---|---|
| Refrigerator | Up to 4 hours | Applies with the refrigerator door closed. |
| Freezer | About 48 hours | For a full freezer with the door closed. |
| Freezer | About 24 hours | For a half-full freezer with the door closed. |
These are outage-specific limits, not ordinary storage periods. Keep the doors closed to preserve the remaining cold. The full-versus-half-full distinction matters because a fuller freezer retains its safe temperature longer. Once normal power returns, verify temperatures with the appliance thermometers before relying on the compartments for ongoing storage.
Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone.Common mistakes and the correction
- Using one number for every food: Correct this by checking the food-specific entry. Ground meat, whole poultry, poultry pieces and cooked leftovers have different refrigerator and freezer periods.
- Treating a freezer month as a safety expiration: The chart’s freezer figures are quality guidance. Continuous storage at 0°F (-18°C) or below can remain safe indefinitely, although quality can decline.
- Assuming freezing kills germs: It does not. Freezing keeps food safe until it can be cooked; it does not destroy harmful germs.
- Leaving food out too long before chilling: Refrigerate or freeze within two hours, or within one hour above 90°F (32°C).
- Cooling a large batch in a deep container: Use shallow containers to help leftovers cool quickly.
- Thawing on the counter: Thaw in the refrigerator instead.
- Freezing every prepared salad: Egg, chicken, ham, tuna and macaroni salads do not freeze well, and hard-cooked eggs are among the items the guidance says should not be frozen.
- Trusting the appliance dial without measuring: Use an appliance thermometer to verify 40°F (4°C) or below in the refrigerator and 0°F (-18°C) or below in the freezer.
A simple storage decision checklist
- Confirm the refrigerator and freezer temperatures with appliance thermometers.
- Identify the exact food category and whether it is raw, cooked or a prepared salad.
- Apply the two-hour rule, or the one-hour rule when the surrounding temperature exceeds 90°F (32°C).
- Choose the refrigerator if you will use the item within its charted refrigerator window.
- Choose the freezer for longer storage only when the item freezes well.
- Put leftovers in shallow containers so they cool quickly.
- Thaw frozen food in the refrigerator and cook it safely; remember that freezing does not destroy harmful germs.
- For an outage, keep doors closed and use the separate four-hour refrigerator, 48-hour full-freezer and 24-hour half-full-freezer limits.
When the chart does not list your food
Do not extrapolate from a similar-looking item. FoodSafety.gov directs readers to its broader food-storage resources, including FoodKeeper, which covers more than 650 foods and beverages. Use the entry for the specific food, preparation and storage condition. That approach is more reliable than applying the 3-to-4-day refrigerator period or a generic freezer-month estimate to an item that has not been evaluated in the same category.
The central rule remains straightforward: refrigerator for near-term perishables, freezer for longer storage, thermometer-verified temperatures for both, and food-specific times for planning. The refrigerator target is 40°F (4°C) or below; the freezer target is 0°F (-18°C) or below. The Cold Food Storage Chart and FoodKeeper provide the item-by-item details that a general rule cannot.
Frequently Asked Questions
Should I refrigerate or freeze leftovers?
Refrigerate cooked meat or poultry leftovers and soups or stews if you will use them within 3 to 4 days. If they will be held longer, freeze them promptly while still within the safe handling window. Freezer periods of 2 to 6 months for cooked leftovers and 2 to 3 months for soups are quality guidance.

How long can raw ground meat stay in the refrigerator?
FoodSafety.gov lists ground meat and ground poultry for 1 to 2 days in a refrigerator at or below 40°F (4°C). Freeze it if you will not cook it in that period; the freezer quality period is 3 to 4 months.
Can food stay safe in the freezer past the listed months?
Yes, if it has remained continuously at 0°F (-18°C) or below. The chart’s freezer periods are primarily for best quality, not automatic safety deadlines. Quality may decline after the listed period.
Does freezing kill harmful germs?
No. Freezing keeps food safe until you can cook it, but it does not destroy harmful germs. Thaw food in the refrigerator and cook it safely after thawing.
Can I freeze egg, chicken, ham, tuna or macaroni salad?
FoodSafety.gov identifies these prepared salads as foods that do not freeze well. Keep them refrigerated and use them within the listed 3-to-4-day refrigerator window. Hard-cooked eggs are also among the items the guidance says should not be frozen.
How quickly must leftovers be chilled?
Refrigerate or freeze perishables within two hours of cooking or purchase, or within one hour if they have been exposed to temperatures above 90°F (32°C). Put leftovers in shallow containers to help them cool quickly.
What happens during a power outage?
With the doors closed, a refrigerator keeps food safe for up to four hours. A full freezer holds its safe temperature for about 48 hours, and a half-full freezer for about 24 hours. These are outage limits, not ordinary storage times.
What should I do if my food is not listed in the chart?
Use the specific FoodSafety.gov Cold Food Storage Chart or FoodKeeper entry rather than borrowing a time from a similar food. FoodKeeper includes storage tips for more than 650 foods and beverages.

The Bottom Line
Put near-term perishables in a refrigerator maintained at 40°F (4°C) or below, and move foods intended for longer storage to a freezer maintained at 0°F (-18°C) or below. Follow the food-specific chart, not a universal number: refrigerator times are short planning windows, while freezer times mainly describe best quality.
Chill or freeze within two hours, or within one hour above 90°F (32°C); use shallow containers for leftovers; thaw in the refrigerator; and remember that freezing does not destroy harmful germs. During an outage, keep doors closed and use the four-hour refrigerator, 48-hour full-freezer and 24-hour half-full-freezer limits.
