Verify both readings with separate appliance thermometers; a control-dial number such as “3” or “5” is not a universal temperature setting. If a thermometer shows a reading above the safe limit, use your appliance manual’s adjustment instructions and measure again.
At-a-glance temperature settings
| Compartment | Recommended maximum temperature | How to verify it |
|---|---|---|
| Refrigerator | 40°F (4°C) or below | Appliance thermometer |
| Freezer | 0°F (-18°C) or below | Appliance thermometer |
“Or below” means the refrigerator should not be warmer than 40°F and the freezer should not be warmer than 0°F. These are compartment-temperature targets, not dial positions. Appliance controls differ, so the same number on two refrigerators can produce different temperatures.

Why these temperatures matter
FoodSafety.gov identifies 40°F (4°C) to 140°F (60°C) as the range in which food-poisoning bacteria multiply most quickly. Keeping refrigerated food at or below the lower boundary slows that growth. The temperature target is one part of safe handling; it cannot correct food that was already left warm for too long, contaminated during preparation, or mishandled before it entered the appliance.

FoodSafety.gov’s official wording is: “Your refrigerator should be set to 40°F (4°C) or below and your freezer to 0°F (-18°C) or below. Use an appliance thermometer to be sure.” That guidance was on the 4 Steps to Food Safety page reviewed September 18, 2023.
Verify the actual temperature with thermometers
Use an appliance thermometer in each compartment
Buy or use one appliance thermometer for the refrigerator and another for the freezer. FoodSafety.gov specifically recommends thermometers in both compartments because the built-in control usually regulates operation without displaying the temperature of the food-storage space. A thermometer reading tells you whether the compartment itself is meeting the target.
Follow the thermometer maker’s instructions for placement and reading stabilization. Keep the instrument in the compartment while you check the temperature rather than relying on a brief reading immediately after opening the door. Record the result if you are troubleshooting repeated fluctuations.
Check after every adjustment
Turn the control only as directed by the refrigerator or freezer manual, then allow the compartment to settle before checking again. There is no nationally standardized mapping between a dial number and a temperature, so advice such as “set it to 3” cannot be applied reliably across models. If the manual is missing, look for the model information on the appliance and obtain the manufacturer’s instructions before making assumptions about the control.

How to set the refrigerator
1. Measure before changing anything
Place the refrigerator thermometer in the compartment, close the door, and read it after the thermometer has stabilized according to its instructions. If it is 40°F (4°C) or colder, the compartment is meeting the temperature target. If it is warmer, adjust the control using the model-specific procedure.
2. Make the manual’s recommended adjustment
Use the refrigerator’s manual to determine which control changes cooling and which controls a separate feature, such as a convertible drawer. Make one adjustment at a time so you can tell what changed. Do not infer that a higher or lower displayed number has the same meaning on another appliance.
3. Recheck the thermometer
After the appliance has had time to reach a stable reading, measure again. Continue using the manual’s adjustment guidance and the thermometer result rather than the dial position. If the reading remains warmer than 40°F (4°C), follow the manufacturer’s troubleshooting or service instructions; the target cannot be confirmed from the control setting alone.
4. Leave room for cold-air circulation
Do not overstuff the refrigerator. FoodSafety.gov warns that cold air must circulate to keep food safe. Arrange food so vents and passages are not blocked, then recheck the thermometer. A crowded compartment can prevent the measured air temperature from representing the conditions around all stored food.

How to set the freezer
1. Measure the freezer directly
Use a separate freezer appliance thermometer and compare its stabilized reading with 0°F (-18°C). A freezer that is “cold” by touch or that produces ice is not necessarily at the recommended temperature; only the measured compartment temperature establishes whether it meets the target.
2. Adjust according to the model manual
Follow the freezer manufacturer’s instructions for changing the temperature. The control may be electronic, a numbered dial, or part of a refrigerator-freezer system. Because control scales are not standardized, do not substitute a generic dial number for the 0°F target.
3. Confirm the new reading
Once the freezer temperature has stabilized, read the thermometer again. If it is warmer than 0°F (-18°C), repeat the model’s prescribed adjustment process or use the manual’s troubleshooting steps. Keep the thermometer in place so later checks can show whether the freezer is maintaining the target.

What to do when the reading is outside the target
The refrigerator is warmer than 40°F
- Verify the thermometer reading rather than relying on the control display or dial.
- Check that the refrigerator is not overstuffed and that cold air can circulate.
- Use the appliance manual’s temperature-adjustment instructions.
- Recheck after the compartment stabilizes.
- If it still exceeds 40°F (4°C), follow the manual’s troubleshooting or service direction and treat temperature-sensitive food cautiously.
The freezer is warmer than 0°F
- Confirm the reading with the freezer appliance thermometer.
- Use the model-specific instructions to adjust the freezer.
- Measure again after stabilization.
- If the freezer cannot maintain 0°F (-18°C) or below, consult the manufacturer’s troubleshooting or service guidance.
The reading changes from one check to another
A single reading taken immediately after a door opening may not represent the settled compartment temperature. Take readings under comparable conditions, keep the doors closed as much as practical while checking, and write down the results. If temperatures continue to move outside the targets, use the appliance manual to identify the relevant operating or service steps.

Temperature safety during a power outage
Keep both doors shut as much as possible. FoodSafety.gov says an unopened refrigerator keeps food cold for about four hours. A full freezer stays cold for approximately 48 hours; if it is half full, the estimate is approximately 24 hours, provided it remains closed. These are outage estimates, not a replacement for checking food condition and following food-safety decisions after power returns.
When electricity is restored, use the appliance thermometers to determine the current compartment temperatures. Do not assume that food is safe simply because it has been refrozen or because the freezer eventually returns to 0°F. Freezing does not destroy harmful germs, and a later safe temperature cannot undo earlier temperature abuse.
Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone.Temperature versus storage time and food quality
Keeping a freezer at 0°F (-18°C) or below allows food to be kept indefinitely from a safety perspective, according to FoodSafety.gov’s cold-storage guidance. “Indefinitely” does not mean that quality remains unchanged. Texture, flavor, color, and packaging quality can deteriorate over time, so frozen-storage charts describe quality periods rather than a safety expiration date when the food has been continuously held at the target temperature.
For item-specific storage advice, FoodSafety.gov identifies FoodKeeper as a source covering more than 650 food and beverage items. Use those durations to plan quality, while keeping the freezer-temperature requirement separate from the quality recommendation.

Common temperature-setting mistakes
Using the dial number as the temperature
A numbered control is not a thermometer. Two models can use different scales, and a dial position does not establish the actual air temperature. Set the appliance according to its manual, then verify the result with an appliance thermometer.
Checking only the refrigerator
The refrigerator and freezer are separate temperature environments. A refrigerator reading cannot prove that the freezer is at 0°F, and a freezer reading cannot prove that the refrigerator is at 40°F. Use one thermometer in each compartment.
Assuming frozen means germ-free
Freezing stops growth while food remains frozen but does not destroy harmful germs. Handle, thaw, and cook food safely after it leaves the freezer.

Overfilling can interfere with the circulation of cold air. Leave the passages clear, then verify the compartment temperature again instead of assuming that a cold surface means every stored item is equally cold.
Confusing safety limits with quality dates
At 0°F (-18°C) or below, continuous frozen storage can be safe indefinitely, while recommended durations address quality. Do not treat a quality chart as proof that food was safe during an earlier period above the target temperature.
