How to Harvest Sunflower Seeds the Easy Way

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The easiest low-loss method is simple: wait until the sunflower head droops and its back turns yellow-brown, cover it before birds begin feeding, cut it with about 12 inches of stem, and finish drying it indoors. Once the head is completely dry, rub the seeds free over a tray. You can then roast them for eating, or dry and store them separately for next year’s planting.

First decide what you want to do with the seeds

The final purpose affects how you handle the harvest:

  • For eating: Allow the seeds to mature as fully as practical so the kernels fill out, then clean, soak or simmer, and roast them.
  • For planting next year: Select mature, healthy seeds and dry them thoroughly before storing them in a sealed container.
  • For bird feed: Dry the mature head whole and put it outside, or remove the seeds after drying.

Sunflower varieties differ in head size, seed color, and kernel quality. Some are grown mainly as ornamentals, while others are selected for edible seed production. Seeds from common sunflowers are generally edible when they have matured properly and are prepared appropriately.

How to tell when sunflower seeds are ready

Do not harvest simply because a certain number of days has passed. Sunflowers commonly mature in roughly 70 to 100 days after planting, but the timing changes with variety, weather, and planting date. Use several visual signs together instead:

  1. The head droops. A mature head usually begins facing downward rather than standing upright toward the sun.
  2. The back changes color. Green fades to lemon-yellow, yellow-brown, or brown as the seeds mature.
  3. The petals fade. Petals shrivel, turn brown, or begin falling away. Open, colorful petals indicate flowering—not mature seed.
  4. The central florets dry. The small flowers across the face of the head become dry and can be rubbed away easily.
  5. The seeds are plump. Test a few. Mature seeds should look filled out and have the characteristic color of the variety. Some edible types produce black seeds with white stripes.

A few loose seeds do not necessarily mean the whole head is ready, but they do mean birds and squirrels may already have found it. Check the head closely and protect it promptly.

Protect the head before you cut it

Birds and squirrels can take a large share of a crop while the seeds are approaching maturity. Cover the head when the petals begin turning brown or when the first mature seeds start loosening.

Use one of these breathable barriers:

  • Cheesecloth: Allows airflow and is useful when the head still needs time to finish maturing.
  • fine garden netting: A good choice when birds are the main problem, particularly if you need to cover several heads.
  • paper sack: Convenient when the head is nearly ready and the weather is dry. It also catches seeds that fall during drying.

Secure the covering loosely with a rubber band, twist tie, or soft string. Do not cinch it tightly around the stem or compress the head. A wet covering can trap moisture against the seeds, so use a breathable material and remove or replace anything that becomes damp.

Equipment note: A short list of useful supplies is cheesecloth for sunflower heads, fine netting or a paper bag, clean garden snips, a tray or shallow box, and an airtight container for seeds you plan to plant. This is an equipment suggestion, not an endorsement of a particular brand. Some product links on this page may be monetized.

Cut the sunflower head

  1. Choose a dry day if possible.
  2. Use clean, sharp garden pruners or snips.
  3. Cut the stem about 12 inches below the head.
  4. Keep the head level and handle it gently; mature seeds can fall out easily.

Leaving the head on the plant longer may allow additional drying, but it also gives birds, squirrels, wind, and rain more opportunity to damage the crop. If the head is mature but the weather is turning wet or wildlife pressure is high, cut it and finish the process indoors.

Dry the head indoors for the least loss

Hang the covered head upside down in a warm, dry, well-ventilated place. A shed, garage, porch, or indoor utility area can work if it is protected from rodents and insects and does not have high humidity.

Drying may take about two weeks or several weeks, depending on how mature and moist the head was when cut and on the conditions in the room. Do not rely on the calendar alone. The head is ready when:

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
  • the head and surrounding plant material feel completely dry;
  • the seeds feel hard and dry rather than soft or damp; and
  • the seeds release with gentle rubbing.

Keep the paper sack or netting around the head while it dries if you want to catch loose seeds. Leave enough space for air to circulate. Never put damp seeds directly into a sealed container. Trapped moisture can cause mold, spoilage, and poor seed quality.

Remove the seeds without making a mess

  1. Place the dried head over a tray, sheet of paper, or shallow box.
  2. Brush away remaining dry petals and loose debris.
  3. Rub the face of the head gently with your hand.
  4. For stubborn areas, rub two completely dry heads together.
  5. Separate plant debris and discard visibly empty, cracked, or damaged seeds.

For the cleanest method, leave the head inside its paper sack while rubbing it, then pour the contents onto a tray for sorting. Outdoors, you can work over a clean tray or sheet, but avoid allowing seeds to contact soil if you intend to eat or plant them.

Mature seeds should come away without much force. If many seeds remain firmly attached and are not yet plump, give the head more drying time. Empty shells can also result from poor pollination; not every head produces full kernels.

How to prepare sunflower seeds for eating

Separate seeds intended for food from those you plan to save for planting. Do not roast or salt seeds that you want to use as next year’s seed.

GoodCook Everyday 100% Cotton Cheesecloth, 2 square yards, Bleached
  • Make cheese, strain stocks and custard, bundle herbs or dust powdered sugar and cocoa.
  • Use 100% cotton cheesecloth in layers for added strength. Bleached cheesecloth has been processed to remove impurities of natural cotton fibers.
  • Butter-blanket a turkey for super juicy results.
  • 2 Square yds. of food grade cheesecloth. Lint free and oven safe to 400°F.
  • Also great for cleaning, polishing and other household uses.

Simple salted-and-roasted method

  1. Pick out obvious debris and damaged seeds.
  2. Cover the seeds with salted water.
  3. Either simmer them for about two hours or soak them overnight.
  4. Drain thoroughly and spread them out to dry.
  5. Roast at about 300°F, stirring occasionally.

Roasting time varies with seed size, moisture, oven accuracy, and how dry the seeds were after soaking. Use roughly 10 to 40 minutes as a practical range, checking frequently. They are ready when the shells and kernels are dry and the seeds have developed a lightly golden, roasted appearance. A lower-moisture batch may finish near the shorter end of the range; soaked seeds may need longer.

Let roasted seeds cool before storing them. If they still feel soft or damp after cooling, return them briefly to the oven rather than sealing them immediately.

How to save sunflower seeds for planting

Choose seeds from healthy, fully mature heads. After removing them, spread them in a thin layer and allow them to dry completely. Do not seal them while any moisture remains.

Once dry, put the seeds in an airtight seed-storage container and keep it in a cool, dry, dark place. Label it with:

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
  • the sunflower variety, if known;
  • the harvest year; and
  • any useful notes about the plant or location.

Refrigerator or freezer storage can extend seed-keeping quality, but chilling introduces a condensation risk. The seed must be thoroughly dry, and the container must remain well sealed. Allow a cold container to warm before opening it so humid air does not condense on the seed.

Saving seed does not always preserve the exact characteristics of the parent plant. Sunflowers are cross-pollinated, so plants of different varieties growing nearby may have exchanged pollen. If true-to-type plants matter, isolation or another form of pollination control may be necessary. Seeds saved from a mixed garden may still grow well, but the next generation may differ in height, flower form, color, or seed characteristics.

  • Rubber band, twist tie, or soft string
  • Tray, paper, or shallow box for catching seeds
  • Labels and a pen for planting seed

Troubleshooting common harvest problems

The birds got to the head first

Cover future heads as soon as the petals fade or the first seeds begin loosening. If a head is already heavily stripped, sort what remains and use only plump, undamaged seeds.

The covering became wet

Replace a wet paper sack or netting and move the cut head indoors if necessary. Moisture trapped against the head increases the risk of spoilage. Do not store any seed until it is completely dry.

The seeds are empty

Some empty shells are normal, but widespread poor filling can result from incomplete pollination, stress, or the particular variety. Discard empty shells and save only well-filled seed.

The seeds will not rub free

The head may need more drying time. Return it to a warm, dry, ventilated location and check it again later. Avoid forcing seeds out of a damp head, since that can damage them and spread moisture.

The stored seeds developed mold

Discard moldy seed rather than trying to rescue it for food or planting. The likely causes are insufficient drying, condensation, or a humid storage location. Dry future harvests longer and use a truly sealed container only after the seed is dry.

I want seeds that grow exactly like this year’s plant

Check whether other sunflowers were flowering nearby. Cross-pollination can make saved seed variable. For dependable characteristics, purchase seed from a reliable source or use appropriate isolation and pollination-control methods when growing the parent plants.

The easy method at a glance

  1. Wait for a drooping head, a yellow-brown back, faded petals, and plump seeds.
  2. Cover the head with cheesecloth, fine netting, or a dry paper sack.
  3. Cut about 12 inches of stem with clean pruners.
  4. Hang the head upside down in a warm, dry, ventilated place.
  5. Wait until the head and seeds are completely dry.
  6. Rub the head gently over a tray or inside its paper sack.
  7. Roast food seeds, or store fully dry planting seeds in a labeled airtight container.

Frequently Asked Questions

Can I harvest sunflower seeds while the flower petals are still colorful?

Usually not. Colorful, open petals indicate flowering rather than mature seed. Wait for the head to droop, the back to turn yellow-brown, the petals to dry, and the seeds to become plump.

Should I cut the sunflower head before it is completely dry?

Yes, if birds, rain, or wind threaten it. Cut a mature-looking head with about 12 inches of stem and finish drying it indoors. Protect it while it dries.

How long do sunflower heads take to dry?

Plan on about two weeks to several weeks. The actual time depends on the head’s moisture level and the warmth, dryness, and ventilation of the drying space.

Can I eat seeds from an ornamental sunflower?

Many common sunflower seeds are edible when mature and properly prepared, but varieties differ. For food production, varieties bred for edible seed are generally the more predictable choice.

Can I save roasted sunflower seeds for planting?

No. Keep planting seed separate and do not soak, simmer, salt, or roast it. Dry it thoroughly and store it in a labeled sealed container.

The Bottom Line

Harvest by appearance, not by date: a drooping head, yellow-brown back, faded petals, and plump seeds signal readiness. Cover the head before wildlife takes the crop, cut it with about a foot of stem, dry it indoors, and rub the seeds free only when the head is completely dry.
