How to Design a Food-Production Site From Soil to Safe Facility

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Design food production as a connected system, not as a crop choice or an equipment list. Start with the intended food and users, then fit the production method to the site’s soil, water, climate, biodiversity, labor, energy and waste constraints. If the project also stores, handles or processes food, extend the design boundary to hygienic buildings, cleanable equipment, temperature and humidity control, pest exclusion and documented operating controls.

What food-production design includes

A food-production project can be a home garden, community growing space, livestock unit, commercial farm or a facility that receives raw ingredients and turns them into finished food. Each has a different physical scale and risk profile, but the design logic is similar: define the outcome, understand the site’s limits, choose methods that fit those limits, and provide the infrastructure and controls needed to deliver food safely and reliably.

The boundary may extend beyond the growing or rearing area. Agrifood systems encompass the people, activities, investments and choices involved in production, processing, packaging, transport, distribution, trade, purchase, preparation, consumption and disposal. A farm plan therefore changes when produce will be washed, chilled, packed or processed on site. A construction brief should state exactly which stages are included so that buildings, utilities and circulation are neither under-designed nor unnecessarily expensive.

1. Set the boundary and intended outcome

Write a short project brief before commissioning a layout. It should identify what will be produced, who will use it, where it will go and which stages occur on the property. Do not assume that a plan suitable for open-field production will work for a mixed operation with a packing room and direct sales.

  • Users: Include workers, contractors, visitors, customers and, where relevant, vulnerable consumers.
  • Stages: Mark production, harvest or collection, washing, grading, processing, packaging, storage, dispatch and waste handling. Remove stages that will occur elsewhere, but document who is responsible for them.
  • Success criteria: Set environmental, social, economic and food-safety outcomes alongside output targets.

This brief is the control document for later design decisions. If the intended product or route to market changes, revisit the layout rather than adding improvised rooms and equipment.

2. Assess the site before selecting methods

Carry out a documented site inventory before choosing a crop system, livestock arrangement, irrigation approach or building footprint. Local conditions and legal requirements cannot be inferred from a generic plan, so obtain advice applicable to the project’s jurisdiction.

Soil and landform

Record soil type, depth, organic matter, drainage, compaction, erosion risk, slope and any history of contamination. Map low points and runoff routes before placing growing beds, yards, roads or buildings. Soil health is a design criterion, not a repair task after construction.

Water quantity and quality

Identify every source, its seasonal reliability, quality, storage potential and competing demands. Include water for production, cleaning, staff facilities, fire protection where required and processing. Test quality where it affects the intended use and confirm permissions for abstraction, discharge or storage with the relevant authority.

Climate and hazards

Document temperature ranges, rainfall patterns, wind, frost, heat, flooding, drought, wildfire exposure and other local hazards. Use these findings to position structures, select envelopes and drainage, and plan resilience rather than treating weather as an afterthought.

Biodiversity and neighboring land uses

Map habitats, waterways, pollinator resources, wildlife movement and sensitive neighbors. The plan should avoid avoidable damage and account for interactions between production, natural enemies of pests, pollinators, soil organisms and wildlife.

3. Design soil function into the plan

FAO recommends integrated soil fertility and nutrient management, reduced erosion, maintenance of soil biodiversity and nutrient balance, better water management and support for carbon storage. Translate those principles into site and construction decisions.

  • Keep productive topsoil separate during earthworks, protect it from compaction and return it only where it can support production.
  • Use grading, ground cover, drainage and access routes to limit erosion and sediment movement.
  • Provide areas for compost, manure or other approved organic materials with surfaces and runoff controls suited to local rules.
  • Plan nutrient storage and application so inputs do not contaminate wells, waterways, produce or clean work areas.
  • Preserve soil biodiversity by avoiding unnecessary disturbance and by maintaining vegetation or habitat where it supports the production system.

A basic soil test kit can be an initial assessment aid, but it is not a guarantee of diagnostic accuracy. Use results as one input to a plan and obtain professional laboratory or agronomic interpretation when the decision is consequential.

4. Plan water for the site and the watershed

Water design must balance production demand with sustainable availability, ecosystem needs and other users. Reduce losses before increasing supply. Appropriate water-saving technology depends on crop or livestock requirements, soil, climate, source, cost and local rules; no single irrigation arrangement is universally best.

Build a water balance

Estimate demand by season for each use, then compare it with dependable supply rather than an average-year estimate. Include peak periods, storage recovery time and a contingency for restrictions or equipment failure.

Reduce waste and protect quality

Repair leaks, control pressure, schedule use to reduce evaporation and select delivery equipment that suits the soil and crop. Capture or reuse water only when quality, contamination risk and local permissions make it safe. Manage runoff so nutrients, sediment and cleaning chemicals do not reach sensitive waters.

5. Arrange the production site for safe flow

Good construction planning separates incompatible activities and makes the intended sequence obvious. Draw people, materials, vehicles, water and waste on the same plan. Look for crossings, backtracking and points where clean materials could contact soil, animals, chemicals or waste.

  • Production zones: Place beds, pens, orchards, greenhouses or other units according to soil, sun, drainage, access and biosecurity needs.
  • Input storage: Keep seed, feed, fertilizer, fuel, chemicals and packaging protected, identified and separated according to their risks.
  • Harvest and transfer: Provide hardstanding, shade or weather protection and routes that minimize damage and contamination.
  • Maintenance: Allow access to pumps, controls, roofs, filters, drains, refrigeration and other serviceable components without entering hazardous or hygienic zones unnecessarily.
  • Waste: Give organic residues, packaging, wastewater and hazardous materials defined collection points and removal routes.

Design for the busiest realistic operating period, not only for an empty site. Congested loading areas, insufficient turning space or a single narrow route can become production constraints even when growing capacity is adequate.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

6. Include people, ecology, energy and waste in the brief

Production design has to support human health and livelihoods as well as output. Provide safe walking and lifting routes, suitable work heights, shade or weather protection, sanitation, drinking water, emergency access and training space. Identify tasks that expose workers to vehicles, animals, machinery, heat, dust, chemicals, biological hazards or repetitive strain, then design controls into the layout.

FAO’s crop-production principles include seeds, pollinators, soil biodiversity, natural enemies and wildlife among biodiversity considerations. Energy planning should address pumping, cooling, heating, lighting, ventilation and transport. Compare demand, reliability and maintenance requirements rather than choosing equipment by name alone. Waste planning should cover prevention, segregation, storage, treatment and lawful disposal or reuse; a pile or drain added later is not a waste system.

7. Extend the design when food handling or processing is included

Once food is washed, cut, cooked, packed or stored, the project needs a facility design that supports hygienic operations. FAO’s Good Hygiene Practices and HACCP Toolbox, Section 3, states: “The premises, equipment and other facilities should be located, designed and constructed to permit maintenance, cleaning and disinfection.” The guidance page is dated 14 April 2023.

Layout and surfaces

Arrange receiving, raw-material storage, processing, finished-product storage and dispatch to support a controlled flow. Use food-suitable contact surfaces and details that can be reached, inspected, cleaned and disinfected. Avoid ledges, inaccessible voids and damaged finishes that trap soil or moisture. Provide floors, falls, drains, walls, ceilings, doors and penetrations appropriate to the cleaning regime.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Environmental controls

Design for the temperature and humidity ranges needed by the product and process. Include monitoring points, ventilation and condensation control. Keep doors, screens and other openings arranged to prevent pest entry, and make inspection and maintenance practical.

Cleaning, maintenance and waste

Provide space for cleaning equipment and chemicals, protected storage for packaging and ingredients, and a waste route that does not pass through clean product areas. Equipment should be movable, dismantlable or otherwise accessible where the cleaning method requires it. Maintenance work must be possible without creating an uncontrolled contamination event.

8. Define operational controls before construction is complete

Buildings cannot compensate for an undefined process. Describe the products, incoming materials and ingredients, production and processing methods, distribution conditions and intended consumer use. Identify stages that may affect safety and specify how they will be monitored, recorded and corrected.

  1. List each product and its intended consumer and use.
  2. Map incoming materials, storage conditions and approval checks.
  3. Describe every process step from receipt through dispatch, including time, temperature, water and cleaning requirements where relevant.
  4. Identify hazards and the controls needed at each stage; align them with the applicable HACCP or local food-safety system.
  5. Assign responsibility for monitoring, corrective action, verification, maintenance and record retention.
  6. Test the completed facility under realistic operating conditions before routine production.

This information should shape room sizes, utility capacity, sensor locations, drainage, access and separation. If the process changes, update both the operating controls and the physical design.

Criterion Questions for the design team
Soil function Will the method maintain fertility and biodiversity, limit erosion and avoid damaging compaction?
Water Is supply dependable, quality suitable and use efficient during peak demand and restrictions?
Food safety Can the layout control contamination, cleaning, temperature, humidity, pests and waste when handling is included?
Biodiversity and ecosystems How does the option affect pollinators, natural enemies, wildlife, habitats and water quality?
Energy and waste What energy, maintenance and waste-management burden does the option create?
People and livelihoods Are work, access, sanitation, training and labor conditions safe and feasible?
Cost and resilience Can the project be built, operated and repaired with available resources, and how does it perform under climate or supply disruptions?

10. Use a staged design and review process

  1. Brief: Confirm output, users, scale, included stages, constraints and success criteria.
  2. Survey: Collect soil, water, climate, hazard, biodiversity, access, service and legal information.
  3. Concept plan: Test zones, flows, utilities, storage, drainage and future expansion without committing to detailed equipment.
  4. Option appraisal: Compare methods using the criteria above and document trade-offs.
  5. Detailed design: Coordinate civil works, structures, mechanical and electrical services, sanitation, drainage, controls and maintenance access.
  6. Operational review: Walk through receiving, production, cleaning, maintenance, dispatch and waste with the people who will perform each task.
  7. Commissioning: Verify water quality and flow, drainage, environmental controls, pest exclusion, cleanability, equipment operation and documented procedures before production.
  8. Continuous improvement: Review incidents, resource use, yields, waste, worker feedback and changing regulations, then revise the system deliberately.

Common design failures and practical corrections

Choosing equipment before understanding the site

Symptom: The selected system needs more water, power, labor or maintenance access than the site can provide. Correction: Complete the constraint inventory and water-energy balance first, then size equipment to the verified demand.

Treating soil as a landscaping finish

Symptom: Topsoil is stripped, compacted or mixed with subsoil during construction. Correction: Include soil handling, storage, protection, testing and reinstatement in the earthworks specification.

Assuming an average water year

Symptom: Production fails during drought, restrictions or a pump outage. Correction: Design for seasonal peaks, dependable supply, storage, leak control and an explicit contingency.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Adding hygiene after the building is drawn

Symptom: Drains, handwashing, cleanable surfaces, temperature control or waste routes conflict with equipment and product flow. Correction: Map hazards and cleaning sequences during concept design and test access to every surface and service point.

Ignoring the human route through the site

Symptom: Workers cross vehicle lanes, carry loads over long distances or improvise around blocked maintenance access. Correction: Observe real tasks, provide safe circulation and reserve clear service and emergency routes.

Construction handover checklist

  • Approved brief showing product, scale, users and included food-chain stages.
  • Site survey covering soil, water, climate, hazards, biodiversity, labor, services and legal obligations.
  • Coordinated plan for production zones, inputs, harvest, handling, storage, dispatch and waste.
  • Soil-protection, erosion-control, drainage and nutrient-management measures.
  • Water balance, source and quality controls, storage, distribution and contingency arrangements.
  • Safe work, sanitation, access, maintenance and emergency provisions.
  • Where applicable, hygienic zoning, cleanable construction, temperature and humidity controls, pest exclusion and waste routes.
  • Operational descriptions for products, inputs, processes, distribution, intended use, monitoring and corrective action.
  • Commissioning records showing that utilities, equipment, drainage, environmental controls and cleaning access perform as designed.

The strongest food-production projects make environmental performance, worker welfare, operational practicality and food safety visible in the drawings and specifications. That is the difference between a site that merely produces food and one that can keep producing it safely as conditions change.
