How the Culinary Garden at Kellogg Ranch Connects Campus Farming to the Student Restaurant

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The Culinary Garden at Kellogg Ranch is Cal Poly Pomona’s food-producing teaching garden beside The Restaurant at Kellogg Ranch. Agriculture and hospitality students work across the field-to-kitchen chain: crops are grown on campus, harvested for restaurant use, and incorporated into menus that change with the seasons. It is both a productive landscape and an instructional setting, not simply a public botanical garden.

What is the Culinary Garden at Kellogg Ranch?

The garden is a collaboration between Cal Poly Pomona’s College of Agriculture and The Collins College of Hospitality Management. Its vegetables, herbs and fruit support dishes served at The Restaurant at Kellogg Ranch, a student-managed training facility. That connection gives the project a specific purpose: students can see how cultivation decisions affect food preparation, menu planning and the guest experience.

The garden sits next to the restaurant, so production and hospitality are intentionally close together. The university’s descriptions present it as a living laboratory where students learn practical growing and restaurant skills rather than as a standalone farm that sells produce to the public.

How does the garden supply The Restaurant at Kellogg Ranch?

Seasonal harvesting

The restaurant’s current description says its menus change seasonally and feature produce from the culinary garden. Chefs also use herbs and other produce grown in campus areas that students can harvest. This means the garden is part of a broader campus growing system; it would be inaccurate to say that every ingredient on the menu comes from this one site.

  • Environment-Friendly: Built with an open bottom so it keeps the plants away from root rotting and water built up.
  • Easy to assemble: We come with nuts, bolts, washers and instructions so that you can easily assemble without any experience.

A student-managed food chain

  1. Plan and grow: Agriculture students and other volunteers tend crops using the garden’s production areas and irrigation infrastructure.
  2. Harvest: Usable herbs, vegetables and fruit are picked when needed for instruction or restaurant preparation.
  3. Prepare: Hospitality students and restaurant staff work with the ingredients in a professional training operation.
  4. Serve and adapt: Menu planning responds to seasonal availability, so dishes can change as growing conditions and harvests change.

No current source establishes a yearly harvest weight, yield per bed or percentage of restaurant ingredients supplied by the garden. Those figures should not be inferred from the historical bed count.

What does the garden grow?

University and restaurant descriptions identify three broad categories: fresh vegetables, herbs and fruit. The available public information does not provide a current crop-by-crop inventory, planting calendar or guaranteed list of varieties. A menu item described as seasonal therefore should not be treated as proof that a particular crop is growing in the garden at that moment.

  • Vegetables: used as fresh ingredients in student-restaurant dishes.
  • Herbs: harvested for flavoring and finishing dishes; the restaurant also draws herbs from other campus growing areas.
  • Fruit: included in the garden’s stated production mix, although current varieties and volumes are not published.

Who designed the Culinary Garden at Kellogg Ranch?

Landscape architecture graduate student Kyle McEnroe designed the garden. Cal Poly Pomona reported on September 20, 2010, that McEnroe received an Honor Award at the American Society of Landscape Architects’ annual meeting on September 13, 2010, for the design.

Compared with the ordinary rectangular elevated garden bed with a thickness of 0.3mm, it will be the right choice for you. buy it! ! !

The site’s position beside the restaurant created a dual design requirement: it needed to be accessible for garden work while preserving diners’ valley views. McEnroe summarized the balance this way: “We wanted a productive garden, but it had to be aesthetically pleasing.”

The award documentation describes the project as a local-food production unit and a living laboratory. It records intentions for productive growing, student learning, public-facing access and spaces for gathering or teaching. Those are documented design goals, not confirmation that every planned feature or access arrangement still exists.

What is known about the garden’s size and irrigation?

Record What it says How to interpret it today
2011 College of Agriculture publication An irrigation system could be customized for each of 21 beds. A historical description of the system; it is not a verified current bed count or irrigation specification.
Older project descriptions The garden is described as approximately one acre. Historical scale only; current acreage has not been confirmed.
Current public information The restaurant identifies the garden as a source of seasonal produce. No current harvest volume, staffing, crop list or infrastructure condition is stated.

For a construction or landscape project, the distinction matters. A historical plan can explain the design logic without serving as an as-built survey. Anyone needing current dimensions, utilities, irrigation zones or accessibility details would need confirmation from Cal Poly Pomona rather than relying on the 2010–2011 descriptions.

Why is the garden an educational project?

Agriculture students

Students gain direct experience with planting, irrigation, crop care and harvesting. The garden turns concepts normally taught in a field or laboratory into a working production system with real deadlines and quality requirements.

Hospitality students

The restaurant operation gives hospitality students practice receiving and using fresh ingredients, designing seasonal dishes and managing service in a professional setting. Because the restaurant is student-managed, the garden-to-menu link is part of training rather than an occasional demonstration.

Landscape architecture students

The project shows how a productive landscape must perform several jobs at once: grow food, allow efficient access, support teaching and remain compatible with a public-facing restaurant. The ASLA recognition reflects that integrated design challenge.

Interdisciplinary learning

The garden connects decisions that are often separated in conventional projects. Water delivery affects crop performance; crop timing affects menu planning; circulation affects both maintenance and diners’ views. Students can observe those dependencies in one place.

Can you visit the Culinary Garden at Kellogg Ranch?

Public information confirms restaurant access, not independent garden access. The current Restaurant at Kellogg Ranch page lists Building 79, Cal Poly Pomona, 3801 W. Temple Ave., Pomona, California 91768. It posts weekday lunch and Tuesday-to-Friday dinner service beginning August 24, recommends reservations while welcoming walk-ins, and provides a reservation widget. Hours and booking rules can change, so check the live restaurant page before traveling.

Do not assume that a restaurant reservation includes a garden tour, permission to enter planting beds or access to student work areas. The available information does not establish separate garden visiting hours, a public tour schedule or unrestricted entry. To request a visit, ask the restaurant or the relevant Cal Poly Pomona program specifically about garden access, group policies, seasonal closures and photography rules.

How did the project develop?

Date Milestone
2009 Collins College material presented the garden as an interdisciplinary effort linking field production with restaurant food preparation and local sustainable farming.
September 13, 2010 Kyle McEnroe received an American Society of Landscape Architects Honor Award for the garden design at the society’s annual meeting.
September 20, 2010 Cal Poly Pomona published its account of the award and explained the need to balance garden access with the restaurant’s valley view.
2011 A College of Agriculture publication described the customizable irrigation system serving 21 beds and the garden’s role as a living laboratory supplying the restaurant.
Current restaurant information The restaurant continues to describe seasonal menus featuring culinary-garden produce and identifies itself as a student-managed training facility.

What the design was intended to achieve

The design records combine three objectives:

  • Food production: create a functioning unit that grows ingredients for campus dining.
  • Learning: make cultivation, harvesting and food preparation visible parts of the curriculum.
  • Interaction: provide a landscape that can be encountered by students, restaurant users and other members of the campus community.

These aims explain why the garden was designed as more than rows of crops behind a service building. It had to support maintenance and irrigation while also fitting a hospitality setting. The award record documents the intended relationship among production, instruction and public-facing space; it does not certify the present condition of each bed, path or gathering area.

What is not publicly established?

Readers looking for a current specification should treat several commonly repeated details with caution. The available material does not establish:

  • the garden’s current acreage or number of beds;
  • which crops and varieties are planted in a given season;
  • annual harvest volume or the share of restaurant produce supplied by this garden;
  • current irrigation equipment, controls, water use or maintenance condition;
  • the present funding arrangement, including whether historical vineyard proceeds still support the garden;
  • regular public opening hours, tours or admission procedures.

A historical statement that wine-sale proceeds supported the culinary garden documents an earlier arrangement only; it does not prove that the same funding model remains in place.

How to use the garden as a campus design example

For designers, educators and facilities teams, the project offers a useful framework for evaluating productive landscapes:

  1. Start with the operational brief: identify who plants, harvests, teaches and serves food, and when each activity occurs.
  2. Separate current facts from concept plans: label historical bed counts, acreage and design intentions by date.
  3. Design circulation for two audiences: provide efficient staff access without compromising views, safety or the experience of diners and visitors.
  4. Make irrigation adaptable: different beds and crops may need different watering schedules; the 2011 description illustrates this principle but is not a current system specification.
  5. Close the feedback loop: use harvest timing and ingredient quality to inform teaching and menu decisions.
  6. Publish access rules: distinguish clearly between restaurant customers, scheduled student activities and authorized garden visitors.

The central lesson is functional integration. A campus garden succeeds when its infrastructure, curriculum and food service reinforce one another, while its public-facing design remains honest about what visitors can actually access.

What should a prospective visitor or researcher verify?

  • Restaurant hours and reservation availability on the current official page.
  • Whether the garden is open on the date of a planned visit.
  • Whether a guided tour, class visit or photography permission is available.
  • Current accessibility routes and any construction or event-related closures.
  • Whether a requested crop, irrigation detail or bed count is current or historical.

That verification prevents the most common misunderstanding: treating a student restaurant’s public service as automatic permission to enter an adjacent teaching garden.
