In flowers, those scents often help attract pollinators and guide them to a reward. Elsewhere, plant odors can deter herbivores or serve as signals in other ecological interactions. There is no single plant smell or universal purpose: the blend and when it is released depend on the species, tissue, pollinator and environment.
What produces a plant’s smell?
A plant’s odor comes from volatile compounds released by its tissues. Because these molecules enter the air, an animal can detect a flower by scent without seeing it. The compounds may come from petals, leaves or other parts, and a plant’s emitted blend can change with its development and the time of day. A 2024 review describes floral volatile blends as chemically diverse and their production as variable across plants and conditions (Molecules, 2024 review).
Scent is one part of a plant’s signal, not a substitute for every other cue. Pollinators may combine it with a flower’s color, shape and available reward to recognize or locate it. A volatile signal also has limits: wind disperses it, while atmospheric chemistry and ultraviolet light can alter or degrade molecules before they reach a receiver (Annual Review of Plant Biology, 2023).
Why do flowers smell?
Many animal-pollinated flowers use fragrance to attract visitors, prompt them to approach or land, and help direct them toward pollen or nectar. As Hugh Iltis, professor emeritus of botany at the University of Wisconsin–Madison, put it: “Plants need to attract insects, bats and hummingbirds to transfer the pollen and create fertile seeds” (UW–Madison News, 24 July 2007).

Not every plant depends on animal visitors. Some transfer pollen by wind or gravity rather than using floral fragrance as an attraction signal. Even among animal-pollinated plants, smell works alongside other features; it is not a guarantee that every visitor will find or pollinate a flower.
Why do flowers smell so different?
Different animals respond to different odors, so a scent that attracts one kind of visitor may not appeal to another. Sweet scents are associated with flowers visited by bees and butterflies, while some flowers produce carrion- or dung-like odors that attract flies and beetles. Fragrance is not objectively “better” or “worse”: its ecological value depends on which receiver encounters it and what that receiver is likely to do.

A rose’s fragrance is also a blend rather than one signature chemical. Kew’s 2021 article reports that 20 chemicals in rose fragrance had been identified in 1953, compared with more than 400 by 2006. Those are historical counts cited by Kew, not a new measurement of every rose’s fragrance.
Why are some flowers more fragrant at night?
Scent release can align with the activity of a plant’s pollinators. Kew describes a broad tendency for bee- and butterfly-pollinated flowers to release scent during the day, and moth- and bat-pollinated flowers to release it at night (Royal Botanic Gardens, Kew, 16 August 2021). This is a useful pattern, not a rule for every species: timing varies among plants and with conditions.

Do plants smell for reasons other than pollination?
Yes. Plant volatiles also participate in defense and other ecological signaling. Some leaf odors can deter herbivores, but that does not mean every plant odor is toxic or reliably repels garden pests. Kew reports that basil, mint and lavender—members of the Lamiaceae family—release essential oils from glandular hairs when leaves are touched or disturbed; the odor of crushed leaves can play a defensive role against some predators (Kew, 2021).
Volatiles can communicate only under the conditions in which they travel and remain intact. Wind affects where a scent goes, and atmospheric reactions or UV can change or degrade it. Their reach and effect therefore depend on the environment as well as on the plant and the receiver (Annual Review of Plant Biology, 2023).

How do scientists study floral scent?
Researchers can collect the air around a flower—a method called headspace sampling—and analyze its volatile compounds. A 2024 review describes solid-phase microextraction coupled with gas chromatography–mass spectrometry as an established approach for characterizing floral VOCs. This helps identify what a flower emits; by itself, chemical analysis does not establish how a particular animal responds to the scent (Molecules, 2024 review).
