Harvest windows vary with the variety and growing conditions, so days-to-maturity estimates are a guide, not a guarantee. For the best quality, pick at the crop’s preferred stage and check often.
How to tell when vegetables are ready
Look at and gently feel the crop. Some vegetables are best harvested young and tender; others need time to develop color, a full ear, or a hard rind. Iowa State University Extension’s Vegetable Harvest Guide and the University of Illinois Extension’s harvest guide provide practical crop-specific cues.
Use days to maturity to anticipate when to start checking, not as a fixed picking date. Estimates may count from sowing seed or transplanting, and the actual timing changes with variety, cultivation, and growing conditions. The University of Maryland Extension explains this variability in its vegetable planting guide.
Harvest cues for common vegetables
These sizes and signs are useful examples, not universal standards. Check the label or guidance for your specific variety when available.

Broccoli
Cut the central head while its buds are still tight and before yellow flowers open. A typical head is about 6–7 inches across, according to Iowa State’s guide. Side shoots may continue to develop after the central head is cut.
Carrots
Harvest when roots reach a size you want; a typical diameter is about ½–1 inch. If the soil is firm and pulling could snap the tops, loosen the soil first.
Sweet corn
Look for dry, brown silks and ears that feel full and firm. To check maturity, puncture a kernel: milky liquid indicates the milk stage. Pick early in the day and eat or process the corn promptly for best quality.

Cucumbers
Pick cucumbers while they are green and firm, before they turn yellow or their seeds harden. Size depends on type: Iowa State lists 6–8 inches for slicing cucumbers and 2–4 inches for pickling cucumbers. Check plants every two to three days during production.

Harvest fruit while it is firm and glossy. A dull surface can signal that it is past its ideal stage.
Lettuce
Leaf lettuce is ready when its leaves are large enough to use. Harvest outer leaves to keep the center growing, and pick before the plant bolts or forms a seedstalk if you want tender leaves.

Peas
For snap peas, pick when pods begin to fill but before the seeds become large. Snow peas are ready at full pod length while the peas inside remain small.
Peppers
Firm green bell peppers can be picked before they change color. If you prefer mature color, leave them on the plant until they turn red, yellow, or orange, depending on variety. Hot peppers can also be harvested at different stages; their mature color varies by type.
Potatoes
New potatoes can be dug once tubers are larger than about one inch. For mature potatoes intended for storage, wait until most of the vines have died back. Dig carefully to avoid cutting or bruising the tubers.

Summer squash and zucchini
Pick frequently while the skin is still soft. Iowa State recommends checking zucchini every two to three days. Oversized fruit tends to have less desirable texture and can slow further production.
Tomatoes
For best flavor, wait until fruit has uniform color and is slightly soft, as Iowa State University Extension advised in its August 13, 2026 home vegetable garden harvest guidance. Handle ripe fruit gently.
Winter squash
A hard rind that resists being punctured with a fingernail is a sign of maturity. The timing and other cues vary by type.

How often to check and pick
Harvest frequency depends on the crop. Regular picking helps keep produce at its preferred stage and can support continued production for many vegetables. Iowa State’s guide gives these practical checking rhythms:
- Some summer squash: nearly daily.
- Cucumbers: every two to three days.
- Tomatoes: weekly.
Peppers illustrate why the desired use matters: green and colored stages are both valid harvest choices. For other crops, such as corn and cucumbers, the best-quality window is narrower, so frequent checks help prevent passing the ideal stage.
Pick without damaging the plant
Some vegetables twist or pull free easily; others should be cut. If produce does not detach with gentle pressure, use clean, sharp scissors, a knife, or hand pruners rather than tugging hard and tearing the plant. Clemson Cooperative Extension covers gentle harvesting and tool use in its vegetable harvesting guidance. Remove overripe produce instead of leaving it to rot on the plant.
