There is no substantiated universal “best” commercial convection oven for baking and roasting. The right choice depends on the pans and batch sizes your kitchen uses, available gas or electrical service, controls, space, efficiency, and local service support. Use the models below as candidates to investigate—not as a performance ranking—and verify each configuration before requesting a quote.
How to compare commercial convection ovens
Start with the work the oven must do and the site where it will be installed. Commercial convection ovens are used for baking and roasting, among other foodservice tasks, according to ENERGY STAR’s commercial ovens overview. A product page can confirm a manufacturer’s stated features, but it cannot establish how evenly a model bakes or how reliably it performs in your kitchen.
- Pan format and capacity: Match the oven to the trays you actually use and the number of pans you need per batch. ENERGY STAR defines half-size sheet pans as 18 × 13 × 1 inches and full-size sheet pans as 18 × 26 × 1 inches. Check usable rack count and spacing for the exact model.
- Fuel and site utilities: Compare gas and electric configurations against the utilities available at the site. Have an installer verify the required connections, ventilation, and other installation conditions. The sources do not establish one fuel as universally cheaper or better; local rates and infrastructure affect the decision.
- Controls and cooking features: Check whether the specific model offers manual or digital controls, fan options, cook-and-hold, or moisture features. Choose features that suit the menu and staff workflow rather than assuming every option is included across a model family.
- Physical fit: Confirm exterior dimensions, door swing, clearances, delivery route, and whether the oven needs a counter or stand. These details depend on the configuration and must be checked against its current specification sheet and the site.
- Ownership and support: Ask about warranty, parts, local technician availability, lead time, and total installed cost. These factors are not established by the product examples below and need confirmation from the dealer.
Use efficiency criteria as a like-for-like check
ENERGY STAR publishes separate efficiency criteria by oven category. Its current criteria page identifies Version 3.0 and lists these thresholds for the following classes; the numbers are category requirements, not measures of bake quality:

ENERGY STAR’s overview estimates that certified models are 27% more energy efficient on average than standard models. It also estimates annual savings of about 1,200 kWh and $150 for a certified electric convection oven, and about 18 MMBtu and $2,000 for a certified gas convection oven. The overview does not state a year for these figures. They are program estimates, not guaranteed savings for an individual kitchen; usage, local utility rates, equipment condition, and the oven being replaced affect actual results.
The U.S. Department of Energy’s FEMP purchasing guidance, updated in November 2023, directs buyers to ENERGY STAR requirements and qualified products. Its cost-effectiveness assumptions are intended for federal purchasing and should not be treated as a universal calculation for private businesses or other utility markets.

Blodgett lists the Zephaire-200-G-ES as a bakery-depth, full-size gas convection oven and the Zephaire-100-E as a standard-depth, full-size electric model. The manufacturer identifies both as ENERGY STAR-qualified on its convection oven product pages. Confirm the exact current model specification and its listing in ENERGY STAR’s product finder before purchase.
