Which pumpkin variety should you choose?
Start with the design and the conditions where you will grow or buy the pumpkin. A broad face needs room for a larger design; a smaller pumpkin may be easier to handle. Check the stem for a firm, sturdy handle, and allow enough time for the cultivar to mature in your region.

Howden vs. Connecticut Field
Both suit a traditional jack-o’-lantern, but the available descriptions emphasize different things. Howden is characterized by its orange color, deep ribs and good handles, with an average size of 25 lb or more in the Connecticut Agricultural Experiment Station fact sheet. Connecticut Field is described as a traditional and popular carving type; Mississippi State Extension gives a regional estimate of 20 lb or more and 100 days to harvest. Those figures come from different sources and growing guidance, so they are not a head-to-head size or carving comparison.
Match pumpkin size and timing to your garden
Illinois Extension groups standard orange pumpkins into small (2–5 lb), intermediate (8–15 lb) and large (15–25 lb) categories, with listed cultivars generally estimated at 100–110 days to harvest. Maturity varies with cultivar and location: Illinois Extension lists Autumn Gold at 90 days; Mississippi State Extension lists Jack-O-Lantern and Connecticut Field at 100 days. UF/IFAS gives general Florida guidance of around four months for most varieties, adapted from a horticultural sciences publication revised in 2015. UF/IFAS source. Use local extension guidance and the seed packet for planting dates, frost timing and days to harvest rather than treating any one figure as universal.
- Choose the size and look. Decide how large a face you want and whether you prefer a classic orange pumpkin or a specialty color such as Moonshine’s white.
- Check the seed packet and local guidance. Compare the stated days to maturity with your local frost dates and growing window; estimates may differ by region.
- Assess the handle. A sound, strong stem makes a useful carrying and display feature. Howden and Tom Fox are specifically described as having good or strong handles.
When a specialty pumpkin is a poor carving bet
Unusual color or shape can make a pumpkin distinctive on a porch, but appearance alone does not establish that it is suited to carving. Purdue Extension notes that many popular jack-o’-lantern cultivars have dark orange color, deep ridges and strong, long handles; some newer varieties have bush or semi-bush growth habits, and some have disease resistance. Are carving pumpkins good for eating?
Large pumpkins are generally better suited to carving than meals. UConn Extension recommends smaller, sweeter, finer-fleshed pumpkins for cooking. Do not eat a carved pumpkin that has been held at room temperature: UConn warns that pumpkin is low-acid and can support bacterial growth. UConn Extension food guidance.
